My hands reek of Kombucha, and I can't believe what I did. I have a chart on my cabinet with the sugar/water/teabag ratio for the feeder tea. . . . I grabbed the FAMILY SIZE tea bags, which are 3 TIMES as much tea. So I had already filled the new and the old brewer before I realized this, so I had to go back and add extra sugar and water to each vessel and ended up starting with 3 TIMES as much feeder tea. Oy!!! Will you look at that. I have three Jars brewing now instead of two small batches. Oh Hey Faithful, the middle jar is the one I found at TJ Maxx for $19.99. Aren't I lucky!!!

Metqa that jar is great! Similar to the one you came close to getting! It is in my bedrooom with a warmer on it. I took 12 liters of various KT to my son today. I quit labeling them. He called & said thanks! SHOCK! He said he is adding it to his fresh juice to enhance the flavor & ALSO THE EXTRA BENEFITS his words! He recognizes his old mom is healthier since I started eating weird. I am just foolish enough to believe he will get healthier by drinking it. How cool it will be when they move in next year & will have access to KT, MK & WK all the time. Can't wait to make Kefir smoothies for the kiddos at night or for lunches...

I am so thankful for finding this thread before summer! Those of you who were on it have helped make me a healthier person & now it is spreading to my family & friends in Arkansas not to mention people all over the States that now have SCOBYs & a lady in Canada. KT IS A LIFE SAVER & Kefir is as well!

Impressive jars! We need to eat some pickles!

?? ...How much ahead of time do you all make your sweet tea? Do you use filtered water for your tea or not? I distill mine, especially here. The water is full of gunk- leaves the distiller coated in crusty stuff!

I'm glad you are healthier Faithful and it's funny and great that your Son can see the difference and wants in on it!!

Pepperette, I'm a lazy Lout, I tried making tea ahead and keeping it in the fridge but I'd forget about it. But having to make it when i need it, i just don't get around to it. But I do make it just before adding it, and if I boil only enough water to melt the sugar and steep the tea, then the cool filtered water I add to make the ratio cools it down enough to add it to the brewer immediately. Having to wait around is what killed my motivation.

I use a Brita Charcoal filter pitcher. The water here is pretty clean most of the time but there are Yellow Tides!! when the water comes out rust color and you have to filter it to get it clear. I do it mostly just to remove most of the chlorine, I filter it the put some in the kettle to heat, to steep the tea and sugar.

I found a 1 gallon cookie jar at Wally World that works nicely, but Pickle jars are essentially free. I'm a spigot lover though. so I have to have spigots on my jars.

All three jars have formed a new film on the top! Yay! I'm gonna have gallons of Kombucha in a couple of weeks!

I wouldn't start another batch till i had a better place to put the middle jar. I finally moved all my davinci syrups and my knife block to use that shelf which is lower than the previous shelf. Something as trivial as having to reach 6 inches higher to reach my jar completely wrecks my ability to maintain the brew properly. With this lower shelf, I am able to reach the lip and spigot easier, and I'm more likely to do things like put the heating pad or a blanket cover over it since it's no longer too high to reach over.

I told my students about Kombucha because I went out and didn't have beer , I told them about my "home brew" and it was funny. I had my camera with me and showed them the picture and they oood and aaaahhhd. I told them I could give them a culture if they asked. LOL I've got plenty and am making more!

I haven't yet made a Medical Hotel. I want to find a jar that's not one of my well used kitchen jars, that i need to hold my kefir and other things. Any suggestion? What do you use, Faithful, just a plain glass jar or what?

I just use any glass jar- from peanut butter, salsa or whatever. Doesn't have to be big just enough to hold to hold tea & SCOBY pieces. Like a hotel it will make babies!

Haha, So many bubbles, the edges have lifted up and got stuck on the glass. I need to shake them up a bit to release the bubbles. Gotta keep the babies wet!!

Put up 3 ltr of plain today! Brougt my CB down quitea bit & can't make mort tea to replenish til I get water in my kitchen - yep remodel has finally got there!

I had a giant 2" SCOBY growing in CB. Pealed off bottom layers & filled up my hotel! Anyone need SCOBYs???

Hello and Merry Christmas! Yes those Scoby's get thick after a while! I pulled one out that was probably 3" thick from one of my oldest CB's.

Now that I've got the temp down to around 75F on the CB's, they are producing much nicer KT. The KT seems to come out the best tasting if it is noticeably sweet when bottled, then left to 2F for at least a week. Then it is super bubbly and smooth.

I restarted two of the 2.5 gal CB's, but something went very wrong with them. They taste horrible, and one only got a paper thin scoby on it. I think I might have used too much of an extremely acidic starter tea but I'm not sure. So those will be getting restarted.

But in general absolutely loving the KT! I drink maybe 3-7 16 oz flip tops per day. It really makes me feel energized, which is great during the dreary winter months!

An off balance CB is crazy! And you have 3!

Dear son is now addding KT to his juice so I jar him some with fruit & leave the cap loose so it doesn't carbonate.

I still like my plain very long 2F! Has become my favorite! I poured some over Bryers mint chocolate chip icecream last night for a special treat. Bet it would be good with banilla & fruit flavored but I don't have any more flavored.

Hello Faithful! Merry Christmas! The plain long 2F yes that does seem to be very good! I'm going to try using some ginger. So far I've been using one or two of the gogji berries per bottle. Over ice cream sounds nice, like a kombucha float!

Besides too high a temperature, I found out what else has been making my CB's so acrid: YERBA MATE!!! I don't know if the stuff I got is not good, I was letting it brew too long, or using too much, but I finally made the association that whenever I would put Yerba Mate in my tea mix, the brew would get an off taste right after that. So I'm stopping the Yerba Mate!

Another site I was reading said if there is too high a temperature, and too much sugar available for the yeasts, they go into respiration, and that will cause a slightly spoiled citrus fruit type taste. That is what I had when they were running around 80-82F. That went away keeping them around 75F but the Yerba Mate was still messing me up.

So to recount my learnings so far....
  • Temp 80+ seems too high: gets acrid
  • Yerba mate, at least too much of it: gets acrid
  • Sucanat or completely unrefined cane sugar: gets acrid

Yerba mate - not sure what kind of tea that is but have heard some reports of bad taste with that tea and I don't mean in KT. I am still using the black tea you sent to me and pray for you with every glass of KT. Have a wonderful time with family & friends ofer the next few weeks & stay healthy my friend.

The scoby (all one now!) is huge- goes all the way across the 2.5 gallon brewer and has more babies! Just got some new milk yesterday and set a jar of kefir going, and ordered some 1.2 gallon, wide-mouth mason jars for the wkg and kt storage. New sugar should be here soon and will get the wkgs started and see how I like that (fingers crossed ).

I thought I'd send everyone here benign greetings, as I do not do the x-mas thing. I have a ton of pics in my pc files for holidays as I used to use them for crafting purposes.

Sometimes we forget not everyone does Christmas! I don't celebrate like most - I don't buy gifts & get caught up in all the commercialism. I celebrate a day that was set aside for the Birth of my Master & Love.

SCOBY FORMING!

OK so my CB that got to 101.2° - took out SCOBY & put in RX Hotel- thought a good place to get well.

Reached into the hotel after solution cooled sufficient & grabbed a handfull ofresidents & relocated them to CB.

Three days later a strong SCOBY forming on top and Ph is T.r! Success !! Smells delish!

It sounds like your scobies survived! Maybe they are actually stronger for having gone through that.

I want to try making a scoby from the MKG and maybe pieces of that scoby to my cultures. Ok one culture at a time, I think I have finally learned not to do experiments on all your brews at the same time!!!!!

My CB's seem to have slowed down quite a bit in brewing. I'm finding that warm, like 80-84 degree F, second ferments on fairly sweet first ferment tea results in a nice bubbly second ferment. I've been using the ginger and gogi berries, it seems to be working pretty well.

Can a SCOBY survive being frozen?

I am wanting to try making my own, but this time of year any shipment would likely freeze at least once while in transit to my home. Just wondering if the little buggers could survive such a thing.

If not I will buy a bottle at the store and start that way.

Also you might be able to find someone locally willing to give/trade you a SCOBY. Or if you have milk kefir it appears you can use spare grains to make a SCOBY! :_) There's several sites where people list them.

Second ferments going excellent! Now that I stopped using the sucanat/brownish sugar, and stopped using the Yerba Mate in my tea mix, and gotten the temp of my brewers down below 80F.....the second ferments are coming out Super Bubbly!

Cool on the bubbles! Mine have been flat of late! Not a big concern for me & son wants flat but I do notice a difference. Maybe this new CB that I almost boiled will do better. I think the heat mat was keeping it too warm. Glad to find out cooler temps for you are producing better bouch! Will be batch flavoring for son today & keeping the next batxh for me. I am so happy he has decided it is beneficial for his health. He adds it to his green juice. He said it helps make more a adds health benefits. Only took 6 mos for him to figure out it was making mom healthy.

Hm.....the super bubbly second ferments seem to have a bit of alcohol in them....ok quite a bit actually, far more than I'd like.

How much booch do you guys drink per day? I think we discussed it before but I forgot.

Do you notice mental effects from the kombucha? Such as things seeming intense if consuming quite a bit of it? I'm not sure if that is the caffeine....I don't think so.

I'm not sure if I feel anything from the kt, except I always go "MMMMMMMMMMMMMM", or I say "that is SO good", or both. LOL Sorta like a coffee drinker's first "OMG" cup in the morning. When I first started drinking kt I bought a bottle and not knowing better- drank the whole thing! Who knew!

Due to fibro my brain had fog for years...KT cleared that unless I am really tired or my brain is on overlaod then the fog sets in.

Haven't noticed the alcohol in my 2F butt then mine goes for 30+ days. Don't know if thatmakes a difference.

Did a batch 2F of a gallon of blackberry for Son! Makes me smile!

Y'know the Kombuca 30D challenge thing is talking about detox effects and such. I haven't posted this there yet cause I just thought of it. I've been home for just under a week. The day after New Year, I came home. I hadn't been drinking Kombucha during that time obviously, and I'd been eating liberally, but not awfully, I didn't even gain much weight when I checked.

Of course as soon as I came home, and got back on the computer , saw the challenge and of course had some kombucha. Now I don't drink coffee, I drink decaf tea and don't use power drinks. I don't eat a lot of sugar anyway, being in the low carb realm, I don't have sugar withdrawals when I do indulge, and I was sleeping great, feeling great, feeling energetic the entire Holiday time.

I've been home and I've been feeling worse and worse, headachy, panic attacks returned. getting stiff stiff neck and lethargy and demotivated though I have lots I want to do. These "symptoms" would be attributed to "detox" from the Kombucha, but why would I detox if Kombucha is a regular drink from me and I don't have these other dietary vices.

Yesterday I think I found the reason for my "detox symptoms" ...
I found another patch of mold surrounding the in wall AC unit...Yay.

I forgot to keep checking these past two months and spraying for mold, and it being underneath and behind the sofa I didn't notice till I went to check the window. I found the mold growing back so when to spray it. Something fell down and when I bent to reach it saw that the mold had grown beneath also.

Starting all over again. . . Happy New Year!

Metqa- OH NO! Mold! That is horrible stuff! I had it in my house on every window and the total downstairs! It was making us sick & I didn't realize it was there. Have spent 20some years drying the house out & am ALWAYS looking, smelling & touching.

With rhe remodel I drilled holes under the staircase landing & sprayed straight bleach under it til it ran onto the concrete! Then put a fan to let it dry, plugged the hole & covered the whole area with Zinzer BIN primer to seal it. Thought it was the last frontier until I was sliding on the concrete floor in a room downstairs. I was masking the newly painted trim so I could paint walls. The sick odor came up from the concrete, so before I paint that room I have to go over the floor with bleach. I know it is not the "best thing" but it KILLS IT DEAD! Glad I found it before the carpet goes in! I can't put any kind of foam pad in there because it reatins the moisture that wicks up from ground through the concrete.

I am so glad you found that problem! What do you spray on mold? Blessings!
