Do you think a kombucha scoby could be successfully used in sweet coffee? Or maybe a coffee/black tea combination? Just curious if that would work and if so what it would produce.

It seems I remember reading something on GT's site about the formula change, something about the 'new' formula being the 'enlightened' one. I think it was because they were seeing 1-2% alcohol in the brew and the FDA complained to them about it or somethign.

I wonder what the best way to switch my new formula GT's to the metqa formula...maybe pull the new formula GT's scoby, put in a chunk of the metqa scoby, and some of the metqa brewers tea? Or just empty the new formula GT's brewer completely and start it anew? But I don't want to completely restart that brewer if I can help it, now that I am hooked on the kombucha daily!

Here is what I would do- pull the GT SCOBY next time for a change of guards. Put in a Metqa SCOBY & add a substantial amount of MSKT with your sweet tea. It should ferment faster because of the ratio of GTKT + MSKT t the sweet tea. Brew tea should be shortened substantially.

Next: Coffee KT is Koffucha. AND I HAVE SCOBY & KC for that. Will add to your pkg. Metqa do you want one too?

Made the same ratio as with the sweet tea & coffee is such a healthy drink! Gets a bad wrap all the time. When it is finished brewing it is real sharp to the taste... I didn't like it! However the fermentation was greater than KT.

BUT something beautiful happened! I put it in swing tops & forgot about it for a few weeks... Thougt I would try it again! It had mellowed and was quite nice. That is the reason I didn't get rid of the SCOBY I thought I might want to make afain. Since then it has had 2 babies. Occasionally I took some morning coffee & put a large spoon of sugar in it & dumped it into the evaporating liquid.. Made it happy.

No thanks, I'm not a coffee drinker. but I'll ask BF as I found out he's been having coffee at work and not telling me. He might think it's interesting, but it would have to be HIS baby, cause I'm not gonna make his Abomination AND his Koffucha!

Porcupine, I just added the GT to my regular brew, so I don't see why you couldn't try swapping the scobys if you wanted. if both are brewing fine seperately, seems they could only enhance one another.

Sounds good, I will give a try to some intermingling. Mainly I want to 'metqaize' the 'new GT formula' batch since it seems to be lagging.

Faithful, yes I would love to try out the coffee kombucha 'Koffucha'! I didn't know there was such a thing! This is going to be great!

I don't have a scoby hotel, at least not yet. I am planning to start a few more backup scoby's from the metqa batch.

Koffucha definitely seems to be a little bit more on the fringe. There are some posts on the interwebs about it but not nearly as much as kombucha and kefir.

It seems like koffucha would have much of the benefits of kombucha, and possibly even some unique ones due to the different compounds in coffee. The organisms might form some beneficial acids not found in kombucha? It seems like koffucha would benefit from continuous brewing just like kombucha. I think I might get another continuous brewer for it.

An interesting brew might be doing a blend of black tea and coffee to see what happens with it?

I wonder if there are herbs that might be beneficial in the kombucha brewing? It works with kefir. I know some sources say not to use herbal teas because of the oils. But maybe adding them in the second ferment.

I am now pending approval for the community there! I can see from searching that there is info on the coffee kombucha, but until I am approved it won't let me view it.

Long term ferment

Today I got desperate for some good KT! Not thatmine isn't good- I have been drinking everything that comes off CB after 4 days & the bottles just arnt "ripe" yet. So, I reached into my winter stash & chilled a couple I put up from when I did my batch flavoring some time back. Would have to look @ FB or thread to see when I did that!

VERDICT!!! I may never drink a 4 day 2F again! YES! That AWESOME! Wish you were here to enjoy a glass. Don't know what flavor because I made blackberry, raspberry & a combo of juice concentrates from in the freezer. Now all I bottle will go in the box for rotation! I may have to get more bottles!

Hm......so the long second ferment is good! Do you leave the berries in for that whole time of second ferment?

Is that at room temp for the whole 3 weeks?

I almost frgot this one- so I am going to give myself a note...

Mash a small amount of banana & put in a 2F on KT. I was told by KT Brewmeister a little goes a long way & pineapple enhanses the flavor as does ginger.

No! CHILL IT FIRST!

I don't think it would make a difference ~ berries in or out!
The goodies in the berries are expended in a week or so & I don't think anything can rot in KT as it is so acid... Mine were out but I just put some broken cranberries in GT bottles & put in box for a month from now.

Yes, room temp but right now that room stays between 68-72. Will be cooler this winter - my bedroom- I have a heated bedpad.

Sometimes, like today, I feel my Kefir Grains have control of my life! I put them back in the fridge on hold for a few days. I have 6 quarts of Kefir & 1 qt of buttermilk & 2 qt Greek yogurt to use up!

BTW- I accidentally put my lemon zest peals in the wrong container yday. Thougt I got them all out but when I strained the MKG today there were 2 good size strips still there. It had a pleasant lemon fresh taste to it. So I fished out a few more pieces from the one that had the zest & have 2 qts going. They will stay in fridge a few more days B4 I open again. Will let you know on kefir thread....just threw this in 4 free!

Hmmmm.....banana, ginger, pineapple, those all sound like great ways!

I will start leaving my 2F bottles at room temp then for several weeks to see how those go! It sounds like that is a way to get some nice quality! I am running very low on kombucha right now but production should be picking back up as the second continuous brewer gets back online after getting the 'new formula' GT SCOBY and trying to swap it over with the output from the metqa brewer and an extra metqa scoby clone I had.

haha I just didn't know what to call the scoby babies when they get big, I figured maybe they are a clone! Scobys seem friendly but maybe if you have too many in a hotel they might gang up on you during the night. Maybe Obama will want to take stem cells from our scoby's.

You know left undisturbed, hotel guests in KT get very happy & produce babies. So you may want to cover it as it mght get "R" rated in there!

Today I did this:

3 ~ 1/4" slices of ripe banana mashed /16oz GT Bottle / quantity 2

Same as above but put in some Jamacian Flower petals / quan 1

Just Jamacian Flower Petals / quantity 1

It will be a month if they done explode from the sugar in the banana so I will let you know when I get to them....Hmmm! Maybe just a week! My curiosity will get the best of me!

Hm those sound like interesting recipes faithful! Let us know how they turn out. What do the Jamaican flowers taste like?

For some reason I think if I contact him with stem cell info from kombucha SCOBY's, a bunch of people, probably in white suits, are going to come looking for me.

I sent you some they were the red things! They make into a healthy tea. They are sweet & remind me of the goji berries- sometime I just chew on a few like gum when they soften then I swallow them like the tiny SCOBYs.

The flowers make a great tasting healthful tea as well.... like I said... sometimes I just chew on them like the goji berries.

My ferment with the Jamacian flowers and the dried dates wont be checked until tomorrow evening when I get back with the kiddos. I left them (kefir not the kids) out overnight til I left today at 11AM and then popped them in the fridge. The original kefir has been in the fridge for almost a month and was already thick and bubbley. I love it for the whey shakes!

I am going to EVV for paint on Monday morning. Asian mkt opens at 10 so I will stop in and see if they have the green onions I love! The tips have seed pods so I am saving some to plant next year. I think they might grow like chives. Will send you some & anything else I see that catches my fancy.
