Thai Coconut Soup
You guys have to check out this soup. I am making to eat all week. I think the macros are really good for keto.

2 tablespoons red curry paste
1 12 ounce cans of coconut milk and 1 lite can coconut milk
2 cups chicken stock
2 tablespoons peanut butter (i used Peanut Flour)
1 pounds chicken breasts, cut into 1 1/2 inch pieces (i used ground)
1 red bell pepper, seeded and sliced into 1/4 inch slices
1 onion, thinly sliced
1 heaping tablespoon fresh ginger, minced
1 package frozen spinach
1 tablespoon lime juice
cilantro for garnish
Mix the curry paste, coconut milk, chicken stock, and peanut butter in a 4-1/2 to 6-quart slow-cooker bowl. Place the chicken breast, red bell pepper, onion and ginger in the slow cooker, cover and cook on high for 4 hours.
I put the recipe in my calculator and came up with 5 servings or 6 servings.

And then could maybe add some coconut oil to bring up the fat if i need to or some avocado.
