Deep frying count?
 
When you are out and eat something like chicken wings or something else you know is deep fried in an unpredictable oil how do you count those oils? As I an sure I eat oils that are bad for me in addition to my healthy natural oils ( coconut/meat/poultry) how are we suppose to count tge other oils???

i found a .pdf that analyzed the nutrient content of foods.
They didn't list chicken... closest I could come was pork chop.

Unbreaded lean chop, 100 g raw is 2.5 g fat.
When deep-fried, the net weight is 64 g, with 3.8 g fat.

For unbreaded fatty pork chop, 100 g raw is 13.2 g fat.
When deep-fried, some fat goes out (and I assume some frying oil goes in).
When deep-fried, it nets 67 g cooked, with 12.0 g fat

For a breaded lean and fat chop, 100 g raw has 6.2 g fat.
When deep-fried, it nets 79 g with 12.5 g fat

Note that the increase in net of this last one is due to the weight of the oil-soaked breader. Breading soaks up more oil than meat does.

Other numbers--- a 100 g grouper filet gets 1.8 g oil added with deep frying. It has 0.9 g fat on its own, raw, and comes in at 2.7 g after it's deep-fried.
100 g of potatoes will soak up 4.3 g of oil, going from 0.2 g fat up to 4.5 g fat with deep-frying.

Recall that, as with all cooking methods, the main reason for the weight difference from raw to cooked comes from the evaporation of water as the meat cooks.

what do you do to account for transfats. As much as I try to avoid them ( I dont comltely) I am assuming you just count them as fat.

Yeah. A fat is a fat for counting purposes imo.
You're right to strive to avoid them, but if some creep in it isn't a dealbreaker.
I won't use them for my own cooking, but I acknowledge that sometimes I eat them in restaurant food. Sometimes there are better choices on the menu, and other times nothing will satisfy like hanging out with friends and sharing a big pile of naked-fried wings at the local joint.

I don't count my fat. I just count my protein and carbs. Because of additives in food and polyunsaturated fats, my husband and I have quit eating out. My cooking is better anyway. We can have expensive steak for the same cost as eating fast food.
