It is paleo muffin, cooked on the skillet rather than the microwave. I also add 1/2 tsp of baking powder and skip the olive oil but add 1 tbsp. hwc.. I will take a picture and post recipe if you like. Here is a link to the basic premise....

breakfast: BPC with 1 TBSP coconut cream, 1TBSP coconut oil, a splash of HWC.
snack: provolone cheese chip and mayo-olive-oil-guacamole
lunch: egg yolk salad with bacon bits, cheddar, tons of mayo, and more fatty guacamole mixed in.
afternoon snack: 2 tbsp bearnaise with last bit of grilled liver (about 1.5oz? it was a chunk about 2"long by 1" wide, 3/8" thick.) teaspoonish of soy-free earth balance spread (eww. I really don't like this stuff but feel obligated to finish it.)
a chunk of homemade white chocolate to up my fat and clean my mouth. Still needed 1 pc of sugar free trident to help. (1/2 a serving)

probably won't hunger again tonight.

~1000 calories, 96g fat (ok maybe I need more fat bombs) 26 g protein, 8g carbs - 2 fiber (counting 1g SA's from gum). 86 fat/10 protein/3 carb %

how do you cook it on the skillet? On the stove or in the oven?
I tried to cook it on the stove and it was a total disaster. Looked and tasted like an awful pancake

I use an iron skillet that I have just cooked bacon in. I drain off the fat and then on a low temp cook this...

1 tbsp. ground flax seed
2 tbsp. coconut flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

Mix these until well blended then add:

1 large egg
1 tbsp. heavy cream
3 drops of organic apple cider vinegar

Mix well, then plop onto the pan on low heat. Press out to make a pancake thickness approx.. Cook for a couple of minutes then flip and cook another minute or 2. Cool a bit.

yesterday-

BF-3 slices bacon, 2 eggs scrambled in butter, topped with cheese and green chili

mid day- Fatty coffee (1spoon butter, 1 CO, heavy cream 1/2 serving protein powder and two cups coffee) And I ordered a low carb cookie from an online seller for my daughters birthday so we broke it into 1/4ths and each had a little bit to "test" it before the party. Also had a bubbies pickle at some point as a snack.

Dinner- Fajita stuff on a plate (chicken with small amounts of bell peppers and onion all cooked in butter topped with cheese, 1/2 avocado and a dollup of sour cream). 1 chicken breast fed two of us and Adam ate more than me. I didn't measure but I would guess it was 2-4 oz of meat. Also had some greens without dressing.

I used almond flour instead of the coconut flour. It looked strange, but with a pat of butter it was not bad at all

Coconut flour absorbs liquid and tends to 'dry' things out. You mixture should be fairly dry and you need to pat it into shape on the pan.

I think some onion and/or garlic powder may be good for a savory type of bread.

BUSY day. big 90 min workout and eye appt. an hour away. was starving.

B: blended iced bpc with heavy cream and vanilla
post workout: pork rind puppy chow
starvation snack on the way home: STARBUCKS HACK; short americano, sf vanilla syrup, inch heavy cream, 2 pats kerrygold (20g). The manager was awesome and offered to blend the butter in for me. I said yes and chugged the deliciousness. kept me full 4 hours.

Hello! Wow that is a great starbucks! The ones in my area recently replaced their 18% cream with 10%. The choices are 10%, 5% cream, soy milk and skim milk. They are going backwards!!!! I take my coffee black there now.

Butterscotch toffee iced coffee??? Mary, what time is breakfast? I'll be there tomorrow morning even if I have to scoot with my knee walker all the way from Florida! lol...

I love flavored coffee, hot or cold. Mine was hot, s'mores flavored today. Sweetened with stevia.

Yum! How do you make your s'mores flavor?

I have a CBTL machine, it's like a keurig. They always have vanilla and hazelnut but also offer limited time only flavor pods... right now it's butterscotch toffee and I love it. I want to buy a bunch more so when they switch it out I still have some

I wish I could stand only stevia but I use either erythitol or erythitol/stevia blend. Erythitol is the only sugar alcohol which doesn't affect my ketosis I occasionally use splenda.

I'm lazy with my coffee. I just buy bags of flavored ground coffee beans. This brand is called Life is Good. It was on sale so I got the s'mores (full name is "s'more to love") & also got "banana bread bliss." The s'mores really just tastes chocolatey to me. I don't notice graham cracker or marshmallow flavors at all. I really like the banana flavored one. I'm pretty sure I'll never eat another banana but flavored coffee & banana extract keeps me from missing them.

I use a Keurig but always use regular coffee instead of the K-cups.

I am lucky to have liked stevia from the first taste I had. I haven't looked for another sweetener since trying it.

How do you use regular coffee and not pods in the kuerig?
