Quirky day - but, somehow I hope it works:

B: BPC
L: 1 tiny slice pizza (smaller than palm size) caprese salad, avocado with olive oil and a BEER
D: Alfredo Shirataki noodles with asparagus and Canadian bacon

Not my cleanest day, but just hoping the scale doesn't bounce too much.

Yesterday:
BF - coffee with hwc x2
Lunch - 3 all beef hot dogs and 1/2 avocado with olive oil
Dinner - pork chop with creamy mushroom sauce (shallot, mushrooms, hwc, chives); tiny piece of 85% chocolate

Scale was up about a pound. I think it was the dairy. I do fine when I have a little cream in my coffee or cook with butter, but when I have a really heavy cream sauce I usually have some inflammation in my fingers and face and the scale goes up a pound or two. Dinner was so delicious, however, that it was almost, but not quite, worth it.

Today:
BF - coffee with hwc; 3 egg scramble with bacon, mushroom, shallot, and chives
Lunch - 1 chicken thigh; 1/2 pickle
Right now - iced coffee (from what was leftover in the pot) with hwc
Dinner - Tonight I'm making meatloaf with ground beef, eggs, parmesan cheese, chives, parsley, and basil.

A very forgiving individual recipe....

Today it was 1 red pepper(seeds removed)they were on sale for $.78each, 1 medium onion, 1 English cucumber, 1/4c. flax, 1/8c. chia, 1/2 c. filtered water, a few shakes of salt.

Put it all in the Ninja (Vitamix or blender) ....keep pushing that button until it is all pureed...but if you like little bits of red or green flecks...stop till it meets your likeness.

Allow to sit for about 5 minutes while the flax and chia soak up the liquid.
Scoop about 3/4 Tablespoon(I use a tiny spring handle cookie scoop) onto parchment paper cut to fit your dehydrator...after each tray is full, smack the bottom on the counter a few times to flatten them. I have a NESCO unit, it fills all 4 trays.

Stick them in your dehydrator...dry to crisp...about 8 to 10 hours...depending on how high you set your temp. Raw food people say it shouldn't go above 118degrees...to preserve the enzymes...if you do that the drying may take a little longer.

I then weigh the finished chips... and bag 0.5oz in each snack bag...I need to do little things like that to give me portion control...that is one of my weak points!

I will make another batch tomorrow-might add a little celery--to take to my DIL this next week.

That sounds very interesting. I wonder how many carbs each snack bag has?
Does it come out crunchy or chewy?

Crunchy.
If you weigh/measure/calculate what you put in....
...then divide by the number of portions that you divide it into when they are done...
then you can see the numbers.

It is amazing when you do the process yourself, you have a greater appreciation for the tiny bags that you buy in the store of other kinds of chips!

The effort I put into it makes me appreciate the end product a little more!!!

L- 1 C of deli chicken salad, 1 C tossed salad, some pickle slices
D- its a scary forage through the refridge night - I know we have hot dogs and some burger patties in there with about 1C of salad

Really focusing on water today too, and yoga class later!

B: 1/2 of one of maria emmerich's protein buns with hollandaise and poached egg, ham.
lunch: 1/3 cup homemade coleslaw, re-wrapped free roast beef ranch wrap (dissembled it from high carb wrap and put it in a low carb one, lol) very small amount of filling so I got hungry again and had:
snack 1: mini white chocolate fat bomb, coffee with heavy cream, 65g steak with some butter and sauteed onions.

dinner: leftover lamb and onions, maybe some creamed spinach. I am thinking. probably sneak a bite of my fat bomb ice cream

macros: (including estimated lamb and spinach): ~1300 kcal, 98g fat, 19g carbs (9 fiber = 10net), 79g protein (erg, maybe I should have ribs for dinner instead, dangerously high protein... otherwise good! carbs were low anyway though so excess protein might be OK.)

oh my goodness...I have just not been hungry at all the last few days. Today I have had:

Breakfast: 2 slices of bacon and 2 fried eggs in coconut oil, and 1 tbsp of coconut oil on a spoon just cause I like it!

Dinner: Looks like 2 BBQ beef sausage links and a big salad with ranch dressing. Possible some asparagus if I can get my DH to stop at the store for me.

Snacks: Had 2 little squares of dark chocolate, and probably will have some bacon or jello later to get my protein up to meet my minimum %.

Not much lol but no appetite!

Putting it in my online meal planner gives me 1152 cals for the day, (with 16% prot so far, 77% fat and 7% net carbs) including my fish oil and my gelatin supplements. My macros are 7% carb (100 kcal/25g), 21% protein (324 kcal/81 g), and 72% fat (1093 kcal/121 g) at 1517 cals a day. I find it hard to get there sometimes

It's another pretty day here in Seattle, so I think tonight I shall BBQ for us again.

So probably will skip breakfast, and go with a Crio Bru this afternoon with some HWC and sweetener, then for dinner dine on BBQ hotdogs with a big salad with ranch. Somehow the big salads just taste so good on warm days to me

0.25 oz cream cheese, 1 tbs CO(same way), 0.25 serving pepitas, 1 carb master yogurt.

1 egg, 1.5 tbs CO, 0.4 oz provolone.

I have found that just plain CO makes a great snack when you want something a little sweet. Because CO is a solid under 76 degrees if you pour some into a small container and pop it in the fridge for about ten minutes it comes out with about the same texture as a candy bar, and has a sort of subtly sweet taste. I've been adding 0.5 a tsp of cocoa powder to the CO to make my own "chocolate"
Wow I love the idea of making the CO taste like candy with the cocoa mixed. I bought the type of CO that taste like coconut by accident this time and it does taste sweet.

I was watching the Oprah Channel she had Maya Angelou on and Maya was talking about red rice and interestingly my Mom used to make a version of this as well...hmm
Here is my low carb version - - yummy

6 slices of bacon cut up
1 slice onion chopped
1 bag shirataki rice
Walden Farms Basil tomato sauce
Fry the first ingredient until about half done, add onion
cooking until translucent. Drain & wash rice in colander.
Add rice and tomato sauce, simmer and serve with
two tabs of butter...
About 1 carb per serving.
Yummy

Hello! Jumping in here....trying to be more active on the BBs so I can hopefully keep my motivation on track long term :-) It's much easier when I'm talking to people who are doing the same thing I am!

Food today:

B: Coffee w/HWC, 2HB eggs with mayo
L/D: Burger bowl (6oz ground beef cooked, 1oz cheddar cheese melted over, 2 slices dill pickle and 2 tbsp of mayo all mixed together in a bowl). This was so filling and it's 1:30 already, I probably won't have a full dinner later. maybe just a snack. Not sure yet :-)

When are they going to include taste sampling in internet service??? This thread could sure use that!

My food tends to be boring & repetitive to others but it keeps me happy & out of the kitchen.

B: Bacon & eggs, big glass of water, lots of coffee
L: Cold wild caught salmon mixed w/a bit of onion and horseradish mustard
D: Liver & onions, broccoli & cauliflower, all cooked in local ghee, skinny muffin - flavor not yet decided
