Emita - I'm just starting, but this is what I've done twice and seems to work pretty well
  • 1 T. cocoa powder
  • 1/2 - 3/4 t. gluc (not sure if 3/4 is needed, but my first batch had 1/2 and was a bit runny, but I'm not sure if i didn't set it long enough)
  • sweetener to taste
  • 1 c. almond milk
I fork mix the gluc in the cocoa powder before adding the liquid. Then add 1 c. almond milk and mix it up (I use stick blender) and pop in the fridge to set. Depending on whether your sweetener is dry or liquid, either fork mix with the gluc or add when pouring in almond milk.

From what I've read about the gluc can clump when you add it to liquid, so I just add it to the dry ingredients first.

It actually tastes pretty close to real pudding and has that same texture. I need to play around with it a bit more, but this has real potential for chocolate, almond, pumpkin and other types of puddings. I'm thinking about folding the pudding into some whipped HWC for a mousse type dish.

Yesterday:

breakfast
2 eggs scrambled with green chili and cheese
2 slices bacon
1 cup fatty coffee.

Pre- workout I had a cup of bone broth. It was my long day, ended up being about 6 hours including the bike ride to practice.

Lunch
N/a- workout from 10am -4pm but did eat about 1/2cup of sauerkraut when I got home... and a lot of water...

Dinner
Very small pour of dry red wine, 3 oz grassfed tenderloin, green beans cooked in butter and herbs, topped with Parmesan, 1/2 avocado (salted) This dinner was AMAZING.

I also made some whipped cream stuff (heavy whipping cream, cream cheese, vanilla extract and a little stevia) and had a little of that. Maybe 1/4 cup if I am over estimating.

Ok so since EricaHV asked the sweet and sour ribs low carbs - the instructions are in the slide and the total estimated calorie is:
Total: 2,143 calories 10 carbs 148 fat 195 protein
I made it 4 means so 536 calories 3 carbs 37 fat 49 protein

http://s1041.photobucket.com/user/sh...%20Short%20Rib

The final part will depend on your taste bud and how much flavor you want. Also after i finished cooking there's about maybe 1/3 cup or so liquid left.

Sbarr suggested it, it is very good. I do a little Heavy whipping cream and add a little butter or coconut oil.

This is harder than I expected hitting my numbers with "lighter" foods like cucumber salad, gluc pudding. It's going to be a long week with the sautéed asparagus (I made 5 servings, so I'll freeze a couple of servings). I'm hoping that varying lunch will make it more interesting.

I am sorry you felt disgusted with yourself, but 1400 calories is by NO means overeating it is under-eating by quite a lot and is a pretty good goal to aim for, you are still doing well. Going too low REALLY does more harm than good (I primarily blame underrating for my current weight issues and the trouble I am having losing) , so please don't feel so bad about eating an amount of food that is still very low, especially because you are active.

Shaselai - 1400 isn't overeating at all. Please be gentle with yourself, don't be disgusted. Sounds like you had a good dinner - and as long as you stayed in your macros, then all is good. 1200 should pretty much be a bare minimum unless you have special circumstances, like age, exercise, very small body frame.

1400 is my target by which I derived my carbs, protein and fat and most people are consuming at 1400 and above.

Shaselai: My maintenance calorie limit is about 1550 - I understand your feelings of disgust and failure, but remind you as I remind myself that it's unnecessary punishment! I doubt that these 200 calories of mainly fat will do you any harm weight or ketosis-wise. Even if you overdid your protein macros, there is a limit to gluconeogenesis.

Try to have healthy self talk to calm your mind. I have some personal strategies such as drinking plenty of extra water with apple cider vinegar before bed to help with the morning regularity and any bloating, and ensuring that when I overdo on protein or calories that I have kept away from carbs. Therefore, no sin!

I felt similar last night - got to 1450/1550 net calories and 100 out of my allowed 83 grams of protein, however I only had 48 carbs - 40 fiber during the day, so even if all 17g of excess protein were converted to glucose, I'd only be topping out at about 25g of net carbs. reminding myself that even though my calorie deficit was super low, it was still a deficit and I did attend a very tough lower body conditioning class! (plus, the smoked turkey leg I had for dinner was immensely satisfying. I felt great as soon as I ate it!)

thanks for the support! I guess part of it was i weighed myself (used my last "weight check" of the week) before going to bed and i gained a bit. Since i am going blind in terms of cant weigh myself till Monday I will have to make sure i stay clean... this is after a delicious Chipotle steak salad bowl(salad+sour cream+steak+cheese+guac) .
Emita it is good to see another person from connecticut! My hometown is near orange/milford area but now i am in VA.
