Mornin!

Made my first BPC using french pressed Trader Joe's Wintery Blend.. yum! Need to get grassfed butter again, it's so expensive though..

Felt a bit lightheaded with just the BPC so I mixed some of the grounds with 1/4 scoop protein powder and some creme fraiche and ate it. (Don't look at me like that! )

morning snack will be celery sticks with Teddie natural flax seed PB (with added golden flax seeds)

lunch shall be leftover braised chicken thighs, mushrooms, broccoli, tomato and 1/5 cup green peas. Made a cream gravy and carb quik pot pie batter so I can make a mock-pie in the office toaster oven.

Dinner... leftover keilbasa and sauteed onion & savoy cabbage.

Tried miracle rice last night... great with rice seasoning and soy sauce! I can see it working for sushi but without the starch of normal rice I wonder what would be best to make it sticky.

After reading a lot in the keto threads I have decided to really try and stick to HFLC for a few weeks and see if I can get into ketosis.

It will help to post my food and keep accountable.

B scrambled eggs in butter and CO with 2 teas. hard cheese, mushrooms, spinach.

L corn thin with tsp almond butter, green tea

D bone broth with chicken and spinach

Lots of water, green tea as desired.

I'm cutting way down on my daily homemade mocha with waldens chocolate and half and half.

BPC brekkie. finally got unsalted grassfed butter!! YAY! SO much better.

Lunch: half rueben with TJ's uncured pastrami, swiss, and bolthouse farms NSA thousand island dressing, sauerkraut. On 1 slice ThinSlim Foods lvoe the taste Rye. I think I like the texture of the TSF bread a bit better than the great low carb bread loaves, although they are otherwise nearly identical. I want to try the TSF buns but netrition doesn't carry them. Mixed up some homemade coleslaw dressing and dumped it on a salad with romaine, celery, a small campari tomato for fiber.

Gonna go shovel now :B

The same thing I eat every day: Coffee and cream, salami, butter and boiled eggs for lunch (I'm thinking of switching to hog jowl and boiled eggs-It's about the same fat content and will save on butter) and cream sauce and meat for supper. There's cheese and bacon in the cream sauce.

Whew, that's over with. Think of all the posting I don't have to do because of my repetitive diet!

By the way, we are now in the business of making our own sausages, which is awesome!

This weekend we did it for the first time, and the sausages turned out great! Now we can have sausages without all the fillers and whatnot and only put in what we want and like.

We made some delicious merguez style sausages, which turned out amazing!

Anyway, here's my less than exciting menu for today:

B: 2 eggs, 2 bacon
L: 2 eggs, salad
D: meatballs (in a tomato/ratatouille sauce) with shirataki noodles

breakfast: thick cut bacon with a leftover blueberry pancake (1/2 flax meal 1/2 whey protein powder).

morning snack: 1 oz saga blue brie with some rosemary flackers, salted roasted almonds

lunch: buttoni's tweaked sesame seed oopsie with roast beef and butter

dinner: tonkatsu style fried pork cutlet (breaded with Dixie Diner breadcrumb mix) and miracle rice.

Yes, we are grilling outside. It is springtime and MIL has her Bday today, so the grill is being fired up, LOL! I think BF would grill year round if the weather allowed for it!

Oh, that sounds cold, Cathy!!!!! It's ten degrees celsius here today. We've barely seen minus degrees here this winter: maybe minus 2 degrees celsius at most... It was a very mild winter for us. Seems like you got it double this year!

Most of my bulbs are halfway out the ground already and some of the trees in the garden have got buds on already. I'm hoping for a nice, long spring, it's my favourite time of year!

My Dinner

My dinner tonight was one of my favorite quick standbys

In a skillet heat a Tbsp or two of coconut oil. Put in a little less than 1/4 cup walnut pieces. Saute for a minute or two so that the oil takes on the flavor of the walnuts. Add some thinly sliced onion, and sauté till tender. Add some previously boiled shrimp (cut up), sauté till shrimp heated. Then add several good handfuls of fresh spinach. Turn off heat and toss spinach to coat leaves with oil, distribute nuts, onions and shrimp and spinach is barely wilted. Yumm!

I don't get to eat shrimp very often, but that sounds good!
I usually weigh out 1.5 oz Walnuts for my 'high carb' snack
I had BP Coffee for breakfast and chicken and spinach heated in thickened duck wing broth and onion for lunch.
Dinner was 2 OM beef hotdogs dipped in S/F Ketchup....then S/F Raspberry Jello(made with 1/2 HWC)...
I have been listening to so many Keto You Tube videos today...the new studies out to support Ketogenic food plans...makes me smile..

Clarification...my BP Coffee has 110cals of EVCO + 100cals butter!
Lunch was 4oz chicken with 4oz spinach +2TOnion + 1 pkg.miracle noodles(that is 2 portions)with bone broth thickened with Guar Gum(Think a fantastically big bowl of porridge)
The nuts were a mid afternoon snack....
Then the hot dogs for dinner and the S/F Jello was probably 1/4cup HWC...which is a LOT for me!
... and before I tuck in for the night plan on having 100grams of Red Bell Pepper....to me that is so sweet...and a real treat!

I'm only 5ft tall...! ...and today the heaviest exercise I subjected my self to was quilting at the sewing machine and bringing in the garbage cans after the garbage man emptied them!!!

I have days where I am much more hungry - and sometimes during TOM I could eat my arm and out of nowhere I really crave carbs.

I would say that if you are new to HFLC give it a bit of time. Then once you have been doing it long enough that you no longer really crave carbs (even if still hungry) try IF.

IF is Intermittent Fasting. I am going back to it this week. It will be a bit uncomfortable for a few days. I pick a six hour window in which to eat. So that means that my first meal isn't until about 1pm, and I don't eat anything after 7pm.

Also, don't forget your water. I find that on days that I carried my water bottle to school, but somehow didn't drink from it - those are the days that I am very hungry.

Today:

Black tea w/ pastured hh
Beef bacon and an egg, tea w/ pastured butter
gelatin w/ homemade yoghurt

Beef bacon and kidney with shallots
tea w/ hh

goat brie and tea
bit of chocolate treat

my version of Peter D's quick-and-easy chocolate treats:

I melted:

1 oz unsweetened baking chocolate
3 ounces unsw. Kerrygold butter

and stirred in: 1 T. pastured hh, and a bit of vanilla, and 1 rounded t. Inositol.

Let cool. Poured into shallow plastic container. Put in freezer.
Took out, of freezer, carefully "popped" treat out of container, and ate some of it. Mmmm.


later, perhaps beef hot dogs, and some Virgil's Zero root beer

PFC Totals, probably 65g PRO: 120g FAT: 25g CHO

If I eat coconut oil plain, it makes me hungry. Also I cannot eat it in the afternoon or I will not be able to sleep. If I get hungry between meals, I will eat a couple tsps. of sour cream or an oz of cream cheese. It works every time. I am always amazed at how little food I need now. When I ate higher carb, there were times that I would get so hungry I could eat my arm off. Usually only a couple of hours after eating a meal also. Vegetables make me hungry also, so I do not eat them very often.

Tonight I tried a recipe I found on Pinterest: Kalyn's Kitchen®: Recipe for Broccoli, Ham, and Mozzarella Baked with Eggs

I mixed 1/2 bag frozen broccoli (thawed), ham, mix of cheddar and mozzarella and seasoning, and mixed my eggs with some heavy cream - poured over ham/broccoli/cheese mixture and baked @ 375 for 45 min. Oh my gosh is it yummy!!

Vegetables seem to make me more hungry. I did better today with very little carbs. It is amazing how fast they add up. I feel much more grounded by staying under 20.

Guess that answers 99% of my questions...lol.. thank goodness there is this board to vent.

My issue only comes when I start working out again and then I want to eat more.

Breathe....relax.

I really want to do this.. and I am determined to get back to it. It has been a rough month of not following a strict ketogenic diet and has made me realize a lot about my health. Once we are aware, we can't become unaware.

Peace, I am the same way with having vegetable or even just salad greens, get some graving and hunger. Also, too much diet soda will do it.
I do best on as low carb, under 20 as possible.

The same with exercise, if I do, I get more hungry and eat more and then I feel like I have to exercise more and the cycle repeats. I don't do cardio anymore, only some toning for arms and legs a bit. It just feels wrong to say don't exercise, so I don't share this with people, but it does work this way for me.


Today I had hot wings and seltzer water. So far so good.

For lunch I had chicken tenderloins in mushroom sauce (made from cream, mushroom cheese spread, butter and mushroom bits). VERY YUMMY!

Had a cup of vegetable broth as a "snack".

Planning to have pork cubes with pepper sauce for dinner.
