I have made lots if aioli in my life, (garlic mayonnaise basically) and I don't see how you can make it with cold solid bacon fat. Maybe if you warmed it up then slowly drizzled in (or you'll cook the eggs ) you could get a nice product. Also try a small squirt of lemon juice, to balance out all the fat. I don't have enough bacon fat to try ,
Something that I should rectify immediately, if I wasn't nauseated by eggs.
I couldn't find the lemon juice bottle and I have an aversion to vinegar heh. But I found the lemon juice so I'll use that on my next attempt.

I warmed the bacon grease up in the microwave on low power till it was just liquid but only room temp.

You might try some homemade LC bread. There are recipes over in the recipe forum. Just keep an eye out for total carbs.

I agree it is a lot of water weight. Be prepared for a few weeks of readaptation though. I think it took me at least 3 weeks to get back to NK although the LC appetite suppression kicked in pretty quickly.

Are ya'll going to Disney World?

I was looking at the last 7 days on my spreadsheet. My averages:

1987 calories

165 Fat
112 Protein
19 Carbs

I'm down 2.5 pounds.

It is interesting because to lose 2.5 pounds I'd need a calorie deficit of about 1200. That would mean that even as sedentary as I think I am my daily burn is about 3200 calories.

Phinney's formula? My current weight is about 205 so (205/2.2)*35 = 3261

Love how your numbers are coming down day after day, Darin!

Becky, I think that 8 pounds was totally worth it. I'm sure it's mostly water anyway.

I am stuck and I think it's because I'm not eating enough. The last two days were this:

79.71 fat 3.36 carbs 42.59 protein 937 calories
coffee with HWC
1 1/2 T coconut oil
6 hard boiled eggs
1 ounce cheddar

80.37 fat 7.11 carbs 44.46 protein 937 calories
4T marscarpone
canned tuna
feta
kalamata olives
homemade mayonnaise

Funny that I hit 937 calories both days. But I think it's too low.

Here's my weight over the last few days:
feb 5 188.0
feb 6 188.0
feb 7 187.6
feb 8 188.0
feb 9 187.6
feb 10 188.2

Anyway... I'm gonna try to eat a little more today, but it's hard. I just don't want to think about food. Maybe I'll make some fat bombs.

I just used shelly's recipe but, I didn't use exact measurements. I used 3 egg yolks cause I had jumbo eggs. I just squeezed in some lemon juice. about a third of a lemon. I almost think that was too much lemony taste. I am gonna try acv next time. I just used regular salt ground black pepper. Oh and I used a tench of dijon mustard and a little dry mustard.

Next time I am gonna keep track of my measurements till I get it like I love it.
Thanks Shelley!

Ingredients
Makes: 2 cups

5 egg yolks
1 tablespoon Dijon mustard
7 teaspoons freshly squeezed lemon juice
1¼ cups rendered bacon fat
½ teaspoon fine sea salt
Freshly ground Tellicherry black pepper to taste

These aren't my recipes and I haven't tried them, so I can't give anyone credit, but they are not mine...just want to make sure that people know I'm not taking credit. I'm not even sure they came from this site...I had them in my LC recipe folder. Let us know if you try one and what you think, okay?!
Darin, did you say you heated the bacon grease? How did that work. I used all cold ingredients. They blended well. I just dumped it all in. I know in some mayo recipes they say add oil slowly and all that. I was surprised it was so easy. The mayo did warm up while it was in the processor so it tatsed a little bestter the next day after chilling and once the flovers had a chance to marry. I really like using it to cook. I am gonna try some tuna salad when I get some tuna.

I have been using the fairly standard:

4 teaspoons white vinegar
1 teaspoon dijon mustard
1/4th teaspoon salt
1/4th teaspoon pepper
1 large egg (I use a pasteurized egg) warmed to room temp

1 cup extra light olive oil (Bertolli)

Put all the ingredients except the oil in a container and mix with an immersion blender while drizzling in the 1 cup of olive oil.

That is a little more vinegar than most recipes call for (4 teaspoons instead of 3 teaspoons==1 tablespoon). It gives it that Hellmann's tang, without adding something tart (lemon). The one time I tried adding lemon juice I got a bitter after taste. Not for me.

I think the extra light olive oil is critical -- other types of olive oils have produced a vile tasting mayo. As has avocado oil.

I made bacon grease mayo a couple of times. The taste is good, but it is hard out of the refrigerator, which doesn't seem right for mayo.

Phillip,
Thats what I was looking for. That hellmanns tang. I got extra light olive oil, walmart brand made the mayo gross!
Maybe the Bertolli would be a better tasting and quality olive oil.
Maybe I could mix the 2, bacon grease and some good quality olive oil to get a good consistancy.

Made scientist mayo maker, muhahhahha (that was supposed to be a mad scientist laugh)

Wow! Is there something that is causing your lack of appetite? I know you were sick but I thought you'd gotten all better? Could it be your meds depressing your appetite?

I'll tell you what I've been doing the last 3 days. I've been trying hard to eat all of my calories except for the 1oz of CO before 3pm. Since I drink CO/HWC/Coffee I don't eat anything till almost noon and even then I have to make myself do it because I am not particularly hungry by then.

By 2:30 I have to be fixing whatever is for dinner to get it fixed and eaten before 3. And if I can do it closer to 2pm all the better.

I thought about my sedentary ways and it seemed to me that a long stretch of no calorie intake was probably the best way to trigger BF usage as opposed to stringing out calorie intake all throughout the day.

But I am still eating about 1900 to 2000 calories and I am getting my protein in.

Maybe try to always be nibbling on something. Like, figure out what will comprise your calories for the day and then start nibbling your way through them.

Are you seeing your doc anytime soon? You could mention the low calories and appetite and ask about it.

The scale always follows the inches when it is stuck but inches go down

You might try bumping your calories down to 1650. I just ran your numbers again and you have some leeway downwards.

I know what you mean about the swollen look. My DL pic is like that with my cheeks all puffed out lol.

I have a new hypothesis about Google Chrome and their extension development documentation.

After wrestling with message passing for the last 2 days and finally figuring it out several things became apparent.

#1. It should be easy.
#2. It is easy.
#3. The documentation is written by Google engineers for Google engineers that are intimately familiar with the extension architecture and its development over time.
#4. Realizing that their documents suck, because a kid with a crayon could do better, Google wisely chose to further obfuscate their meaning rather than just, ya know, say plainly what is what because they want to build the potential extension programmer's character.

Yes. It is the old truism that something just given to you is never as valued as something that you had to crawl through a mile of broken glass to get.

I salute you Google with random obscenities and hand gestures.
