I have kept my calories right around 1600 to 1660. almost up to 80% fat 16% Protein and 3 or 4% carbs. You would think I wouldn't be hungry but I have been. Yesterday I had 2 Tablespoons of CO and 1 HWC early. still got hungry way before lunch. Guess I am just backwards, or it is just where I have early mornings. Come to think of it If I try to wait till I get a chance to eat lunch That makes about 6 to 7 hours. I am working pretty hard during those hours too. |

The fettuccine is shirataki noodles, 1 tbs butter, 1 tbs chive and onion cream cheese, 2 tbs Parmesan. Wash and drain the noodles and nuke for 2 minutes. Drain then nuke again for two minutes. Drain again. Mix butter and cream cheese in with noodles until creamy. Add 1 tbs of Parmesan and mix then top with remaining Parmesan. The noodles with pesto was friggin awesome! Do the same routine with the shirataki noodles, then add 1 tbs pesto and 1 tbs olive oil. Sinfully good. Kelly |

They're chewer than regular noodles. I hated them at first but the recipes in the book were so tasty. They also smell like fish when you first open them. Ewwww. Rinse and drain well. If all else fails there's spaghetti squash or zucchini noodles. |

It also helps to make your sauce in advance and let the noodles soak in it for a few hours - they take on the flavor of the sauce after a while. I had a variation on this today for lunch - used 2 oz. cheddar cheese, 1 TB philadelphia garlic cream, 1 TB whipped cream cheese and 1 TB hwc. It was too soupy, but the flavor was great - definitely a keeper!

Sorry I've been awol today, another really hard day at work
I did pretty good today finished off at 1606 74%f/22%p/4%c Congrats to everyone that had success on the scales and with their eating today. I second the poppers - we love those for a treat...never tried the shirataki - hubby hates fish so they would probably be a no go for us. Have a great night everyone...hopefully tomorrow will be less crazy for me so I can chat a bit. |

Hi everyone.
I got my blood ketone monitor in the mail yesterday, so I tried it this morning, and it was 4.3. That doesn't really seem in the optimal range. I also took the batteries out of my scale, and then put them right back in. My weight went from 146 to 153. I'll buy new batteries today, but I may be overweight again overnight. I'm not upset, because I never have trusted how light this scale runs. It will be much better if I can get it to measure true. On a happier note, my daughter won a Best in Show at the rodeo with a goat that she bred (as opposed to just buying a nice doe and showing her) I'm so happy for her. They show again today under a different judge. I'm excited to get my report of how it goes. I hope everyone has a great Thursday.

Goolash - hope the back pain lets up soon... Those poppers look amazing!
As for the noodles - I made the asian noodle recipe out of the Fat Fast cookbook. I ended up overeating that day because they were so good! I will have to try letting them sit in the sauce overnight to take on the flavor, sounds like a good idea! I got below 132 yesterday, which has been a huge sticking point for me. This morning was just over 132, but the scale is definitely trending down. So far I've lost 5.2lbs of the 12lbs I want to lose. DH is mad because he has 'only' lost 5lbs in the last 8 days. When we did slow-carb last year, he dropped 10lbs the first week. I lost about 2 lbs in the month we were on it and didn't feel that great. It definitely wasn't the program for me. |
