Mushrooms sauté in butter-good to add for breakfast eggs/omelets or steak, etc.
celery stuffed with pimento cheese or other LC spread
bell peppers sauté in butter or bacon grease
collards cooked with bacon grease and spices

I made zucchini noodles with a spiral vegetable slicer gizmo I got on Amazon. It took me about 5 minutes to spiral up a huge tupperware of "zoodles". I put a splash of water in the tupperware, and microwaved it for three minutes. Then I drained a bit and tossed it with pesto and a little parmesan cheese. Everyone in my family gobbled it down. A new family favorite.
