Hi Kerry....Congratulations! Doesn't it feel great to lose so "easily" while eating all that yummy fat!

I have read that possibly the first week is mostly "water weight loss", but I'm not sure. I could care less...a loss is a loss!!!! But don't get discouraged when you plateau and then nothing happens. But 2# is amazing!!!!!

Re: the unsweetened shredded coconut. What I do when I want "dessert" is to have some butter, coconut oil, nuke it until melted, then add in some SF flavor (English Toffee, Cake Batter, etc.) and then put in the shredded coconut and some macadamia nuts! Talk about decadence.

However, starting to day I'm not doing any more fun SF flavorings, but you can do it! Sure makes for a tasty high fat treat!

Breakfast:
Hot tea with 2T HWC and 1T butter

2nd breakfast:
Creamcheese/pumpkin/coconut pudding thing

Lunch:
4oz dark meat chicken over
1Cup lettuce shredded and
2T mayonaise

Dinner:
3 Egg omlet with
2oz cream cheese
1/4th cup chopped tomato
4 slices of bacon

Shelly I use spices (nutmeg, cinnamon, ginger) and stevia with extracts.
oh man tomorrow im going to make my pumpkin thing with my maple extract... Mmmmm

Thanks Kerry.....I use those spices in my occasional almond milk, 1/2 scoop whey protein shake and don't use "pumpkin" to keep carbs even lower but have those same flavors. I never thought of putting those spices in my coffee drink....hmmm...will have to try that. And now you make me want to make my coconut concoction with those spices to create a pumpkin pie custard idea. Hmmm....you have opened my mind to new ideas! Thanks!

I was eating low carb before starting this. I had already lost the water weight. The weight that comes off now since getting help with the appropriate macronutrients (thank you Darin) should be fat. If you weren't low carbbing before starting then there is glycogen that will be released from the liver and muscles which equals water weight loss.

oh I love to put a cinnamon stick in my coffee! ITS SOOOOOOOOOOO YUMMY! and cinnamon is supposed to be good for your blood sugar!

Calories: 1409

Fat: 106
Pro: 78
Car: 28

70/22/8

Breakfast: CO, coffee, splenda, hwc, coconut milk
2nd Breakfast: Egg, cheese, bacon
Snack: string cheese
Lunch: diet soda, grilled chicken ceasar vinegar/oil
Dinner: Pork Hungarian Goulash, cauliflower
Snack: float with HWC, tea, CO, splenda, HWC
Some water, one diet soda

Zay, Kerry and Red I really like seeing your daily menus. But I just don't get how plain naked tomatoes and broccoli can be considered supper. Have you thought of converting it to cream of broccoli soup with lots of HWC, grated cheddar and liberal amounts of cayenne?

I don't like coconut milk but that is another great idea to mix with HWC to cut the calories

EllaP suggested almond milk as a mix earlier which I'd like to try

So there are at least 3 ways to use HWC and cut the cals: water, almond milk or coconut milk. Maybe coconut cream too?
LOLFOTF! I need to check in during the day with yall - it would lighten my days for sure! I never thought about cutting calories....it just taste great to me. But it is a two-fer thinking on it later.

I found it in my fridge so I'm using it up. I don't like it too much either. There is one called coconut cream that I'd like to try but it is only found at Asian Grocery.

Hmm. How about do a search on it. I believe some people used it for an Asian Curry chicken dish. Then maybe you could "bust" it out...lol...cute.

I love curry, I make curry anything! Curry chicken, fish, shrimp, beef, pork, veal.. its amazinggggggggggggggg and so easy!

and its high in fatttttttttt

Congrats Kerry! Yes, when I started cutting more carbs I have been drinking so much more. But even doing that I don't have to get up in the middle of the night....the dreaded adventure....and I used to with higher carbs.

I put it in chicken soup, was very good change on the recipe. DH loved it. I also added local made sausage, some veggies, HWC, made my own stock, and cooked it for hours.

OK...here are my numbers for today. Feeling much better for the first time since Saturday getting this cold.

Total calories 1210
Fat 107.5 (81%)
Protein 45.2 (16%)
Carb (total) 8.9 (3%)

Glucose was 120 this morning, but I'm thinking it was my sugarfree cough drops. Didn't take any today, so we'll see if the number drops tomorrow...sure hope the glucose and scale numbers go down. Won't take my ketones for a few days so that this cold is long gone.

My numbers for today were calories 1702, fat 79%, pro 14% and carb 7%. I did fine out at dinner, had a small grilled chicken breast but at least a cup of sauteed summer squash/onions and water to drink. But, something seemed to set me off, I got home and all I could think about was getting something to eat, so I added a piece of pumpkin bake which I had not allowed for. But, am really full now so at least I kept it LC in what I ate when I came home.

Really tired again tonight, hope I get my energy back up soon.

Weigh-in this morning ... ... 189.9!!

Same as yesterday and you may rightly wonder about the exclamation marks - my pattern for the last year, until NK mostly, was to zap a new low on the scale, then bounce, then take a couple of days to get back to the new low, then another day or two to get lower. So.. Win! heh
