Indian Butter Chicken
Makes 2 servings

1 Scallion, finely chopped
A little minced garlic
Tbsp. Olive oil
2 .oz Green Bell Pepper - raw
4 .oz Canned Tomato puree (I tried to find the one with least fillers or msg.)
1/2 Stick of Butter (4 Tbs)
6 .oz raw Chicken (can be breast or I had some thigh meat)
4 .oz Heavy Cream
Chili Powder
Garam Masala
Salt Pepper

Heat the olive oil in the skillet over medium heat. Saute the scallion and the garlic for 1 minute. Puree the tomato and the green pepper in a food processor or blender than mix into the skillet. Stir in the cream and butter. Stir the raw chicken into the skillet. Cover and simmer until the chicken is heated through. Season to taste with the Chili, Garam Masala, and salt and pepper.

This is a recipe loosely based off of a Ketogenic diet recipe. I like strong flavors so I was liberal with the chili powder and the garam masala. I bet I used about 1/2 T of each. But taste as you go to get the right amount of heat.

For the stats of the full recipe we came up with: Cals: 1,180, Prot: 44.3g, Carbs 13.8g, Fats 104.6.g

Enjoy!

Karen

Hi all! Been gone for a bit b/c of traveling but I have a question. I am needing to take out dairy/eggs/gluten/soy b/c of my intolerance and would love suggestions for my menu. Today I am having sausage for my breakfast and chicken/avocado for lunch but need FAT suggestions. Anything you can give me would be appreciated! I'm googling uses with coconut oil right now.

Amy, sorry that this might be dumb, but does that mean no butter as well? That is one place I get a lot of fat. I would say really fatty meats, oil in your salad dressings and of course the coconut oil. Nuts are high fat as well. I love the fat bombs

I have been reading all the threads I can find about NK and am curious. It seems like no one is really losing weight though with this plan, maybe its just for maintaining? Is anyone losing weight ? Would love to know. I need to lose like 30-35 lbs... and am having a hard time finding a plan that "works" ...

Hi Cathy,
I lost 25 pounds to goal using NK. I was stuck after losing 90 pounds 10 years ago. I kept my carbs low, protein moderate to low, and the rest of my calories came from fat. I also tested with a meter to confirm that I was in NK. I did keep my calories in the 1200-1500 range consistently when I was losing.

Best of luck finding the plan that works for you!

Thank you. I need to know someone loses.. Are there more or are they few and far between? I did order a monitor and strips. They shipped today. I have been reading and trying to get recipe/menu ideas. Does anyone "eat" breakfast or just coffee with cream? if so...what???

I eat scrambled eggs cooked in coconut oil with cheese, sour cream, and salsa almost every day. Along with my coffee and coconut cream.

Well I made up some fat bombs today with coconut butter, SF PB and also made a batch of high fat (heavy whipping cream and half and half) yogurt which is "setting" now... That one is a bomb of calories though, 530 for a little jar!! Oh my!! I usually like to eat my calories more than drink them... so good to know!

Buffy- that's not dumb! But unfortunately yes at this time.

I'm trying to see if it will help with some issues I'm having.

Thanks for the help!

I would post your questions there, you will get more help there. I think this thread is just for menus so people can get ideas of what to eat. The discussions are going on in the other thread. See you there.

Morning all! I wanted to share a soup recipe that I made yesterday b/c it was pretty good! I added jalapenos to it and made it spicy. Sorry for the columns- I wanted to include it b/c you wouldn't have to figure it out yourself. I am going non-dairy and so obviously you could substitute HWC for the Coconut cream.

Hope you enjoy!
Amy
