My calories are low because of the JUDDD plan, today is a low calorie day:

1T coconut oil in coffee
1T mayo mixed w/1 pouch salmon; 1T evoo and 1T bragg’s vinegar w/1/2 head romaine
3oz shrimp cooked in 1T evoo, pinch red pepper flakes, some capers and garlic; ˝ head romaine tossed w/1T mayo and 1T vinegar
743 cals/67g fat/6g carbs/3g fiber/34g protein
79.03% fat; 17.82% protein; 3.15% carbs

I'm not one much for complicated recipes myself, but it was a holiday for us and it was well worth the effort. My DD and I baked it together so it didn't seem too complicated. Having two people work on it was much more enjoyable.

Today's menu plan:
B-chocolate egg creme shake
L-3oz.fish w/1/2c. creamed spinach
D-3oz.grilled chicken w/1c. veggie
S-two fat bombs

My menu plan for today...

coffee/hwc x 2
3 bacon and 2 eggs
2.5 oz. pork, stir fry sauce and veg shirataki noodles
almond crackers and pate

TOTALS: CAL =1,038 CARBS=29g FIBRE=9g NET CARBS=20 g FAT=77g PROTEIN=57g

May add a fat bomb to up the totals for fat.

From "All Day I Dream About Food"

Chocolate Layer Cake with Chocolate Sour Cream Frosting (Low Carb and Gluten-Free)

Yield: 16 servings

Ingredients

Cake:
2 1/4 cups almond flour
3/4 cup cocoa powder
1/2 cup granulated erythritol (I used Swerve)
1/2 cup vanilla whey protein powder
1 tbsp instant coffee
2 tsp baking powder
1 tsp baking soda
1 tsp xanthan gum
1/2 tsp salt
6 oz Greek yogurt, room temperature
1/2 cup butter, softened
5 large eggs, room temperature
1/4 tsp stevia extract
2/3 cup almond milk
Sour Cream Frosting:
4 oz unsweetened chocolate, chopped
1 1/2 cups sour cream, room temperature
3 cups powdered erythritol (I used Swerve)
1/4 cup cocoa powder
1 tsp vanilla extract
1/8 tsp stevia extract
1 1/2 tsp xanthan gum

Instructions

For the cake, preheat the oven to 325F and grease 2 8-inch round cake pans. Line cake pans with parchment paper and grease the parchment.

In a large bowl, whisk together almond flour, cocoa powder, protein powder, granulated erythritol, instant coffee, baking powder, baking soda, xanthan gum and salt.

In another large bowl, beat Greek yogurt and butter together until combined. Beat in eggs and stevia extract. Beat in almond flour mixture in two additions, alternating with almond milk, and scraping down beaters and sides of bowl as needed.

Divide batter between prepared pans and bake 30 to 35 minutes or until cakes are set and a tester inserted in center comes out clean. Let cool in pans 10 minutes, and then flip out onto wire racks to cool completely.

Once cool, use a large serrated knife to cut each layer in half horizontally to create 4 layers total.

For the frosting, in a small saucepan over low heat, melt chocolate and stir until smooth. Set aside.

In large bowl, beat sour cream and powdered erythritol until smooth. Beat in cocoa powder, then vanilla extract and stevia extract.

Sprinkle xanthan gum over mixture and beat in until frosting thickens slightly. Stir in melted chocolate, scraping down sides of bowl, until well combined.

Place one layer of cake on serving platter and top with 1/2 to 3/4 cup frosting, using knife or offset spatula to spread evenly.
Repeat with remaining layers and frosting. For final layer, top with any remaining frosting and spread down and over sides of cake, smoothing with knife or offset spatula. If desired, use back of small spoon to create swirled effect on top of cake.

Chill cake in refrigerator for at least one hour. Any leftover cake should be wrapped in plastic and kept in refrigerator.

Notes

Each serving has a total of 10g of carbs and 5g of fiber. Total NET CARBS = 5g.

That is the correct recipe. I need to learn how to do that!! I do know that it's 16 servings and 5 net carbs per serving but that's all I know.

Ok, VERY frustrated. When I started the NK last week, my lowest weight had been 229.1. I got down to 226.5 this week and then this morning I was 228.8. What!?! I don't know what's going on. Trying to stay positive. My blood ketones were 2.2 yesterday. I thought I had my protein levels down enough, but maybe not. Has anybody else had their ketone levels at a good place but gaining weight?

cfine, I hear your frustration! My weight fluctuates within a four pound range and it drives me batty. Just remember that weight can fluctuate for any number of reasons, a downward trend over time is the most important measure of progress.

The other thing is that if you are measuring in ketosis then you don't need to reduce carbs or protein, but you may need to reduce fat to lose. Ketosis just "primes the pump" for using fat for energy, but it doesn't guarantee weight-loss. You still have to be in an energy deficit for that to happen. I'm not sure what your total daily intake is, can you reduce your fat slightly to see if it gets things moving?

Taco salad W/extra sour cream and yes I ate the tortilla shell. I know better and the scale reflected a .2 pound gain this AM.
2224 cals, 85 carbs, 16% carbs, 16% prot, 68% fat.

Am I still welcome on this thread? LMAO!!
