hey smasty, are you using protein powder in yoru coconut oil still? I thought I read a few days ago you were going to try without...

Just wondering becuase I am alos trying to phase out as much pp as possible and get my protein from food sources, and was wondering what kind of recipes you were using.

I'm just doing
2tbsp coconut oil
2tbsp unsweetened coconut
2tbsp flaxmeal
hazelnut sf syrup

was thinking of making one with some cocoa powder as well...

Coconut Pudding

Wowza! I'll add this to the coconut oil fudge thread too. I made an incredible coconut pudding tonight. It uses a special ingredient from Expert Foods....Their low carb pudding mix (which is a mix of vegetable fibers...making it a high fiber but very smooth pudding).

1 can unsweetened coconut milk
about 1/2 c water
2 T Expert Foods Pudding mix
4 or more packets splenda
1/2 c or more of unsweetened shredded coconut
a little vanilla and coconut extract

Mix it all together with a whisk, stir constantly over heat till very thick, refrigerate.

i have been addicted to this fudge for the past week...make a different batch each day, different flavors, use sf syrup rather than splenda....it has been so fun in experimenting with all the great flavors....also since i do not have any flax seeds and i use the sf syrup in lieu of the splenda, mine is not as firm, so i pour them into a mini-cupcake pan and freeze...

Hate to sound thick as 2 short planks, but why the flax seed?

Im going to give this a go, ive just found a make of cocunut oil in the UK, and ive got cocoa powder (we just dont do unsweetend chocolate over here!)

I use flax meal for the fiber (5T have 10g). If you get the seeds they may keep longer but you need to grind them up. It is also a good soruce of EFAs, but I take Udo's so I don't need it for that, though you really can't get too much good fat.

Sue, I agree, it's do you want it. Definitely good for LC nutrtion, though I couldn't really eat nuts when I did LC. I was susceptable to stalls from things like that and cheese.

Bleedin' Ell, this stuff is way to yummy to be good for you!!!!!

By the time i was tucking into my second portion yesterday i started to panic. How can something that tastes sooo good, possibly be okay to eat?

and as a supplementary question - how much counts as an overdose????

Yummy stuff, isn't it?

I don't know which recipe you're eating. I don't add any questionable extras to mine (no nuts, etc). You want to be careful not to eat too much of that kind of thing. Everything in mine is a "green" food and I can eat as much as I want. I use 6T PVCO per day, but only 2 go into the candy. I have one serving per day.

You'll know you've overdosed if you have to make a sudden run for the bathroom.

Deb, I used to take mine to work all the time. I just put it in the refrigerator overnight, then threw in my bag in the morning (not in a cooler). I did have a refrigerator at work so would put it back in if I was going to eat it in the afternoon. If I was eating it in the morning I would just leave it out to soften up a bit. I think it should do fine in the cooler if you refrigerate it overnight first.

Deb, here's another portable storage idea because these do get a little messy. I would put mine in those mini paper baking cups and refridgerate. This makes a nice bite size (one or two bites) portion you can easily eat at your desk!
