Kevins Chicken, Beef, Pork & Fish Recpes

1 1/2-2 lb boneless, skinless chicken breasts, cooked and cut into bite sized pieces
2 (10 3/4-ounce) cans Campbells cream of chicken and mushroom soup (15 carbs)
1/2 cup butter, 1 stick, melted
2 cups chicken stock
8 slices simple white bread carbquik version, cubed and dried (16 carbs)
1/2 tsp seasoning salt
1/2 c shredded parmesan cheese (2 carbs)
1/4 cup grated parmesan cheese (1 carb)

Spread cooked chicken pieces in bottom of a 9 x 13 baking dish.
In a mixing bowl combine soup and 1 cup chicken stock and spread evenly over chicken.
In a mixing bowl combine butter, bread, 1 cup chicken stock, seasoning salt, and cheese until well mixed and spread evenly over soup and chicken.

Bake in a preheated 350 degree oven for 35-40 minutes until stuffing is golden brown.

Makes 8 servings @ 4.25 carbs each.

Kevins Chicken, Beef, Pork & Fish Recpes

Deviled Chicken Salad

1.5 lb chicken breasts, cooked and cubed
3/4 cup finely chopped celery
2 green onions 4 to 5 inches long finely chopped
3 heavy tablespoons mayonaise
1 heavy tablespoon Honey Dijon Mustard
2 hard boiled eggs
salt and pepper to taste

Prepare chicken breasts (I cook in bouillon 20 min and omit salt) then cube into bowl.
Stir in eggs,celery, and green onions.
Mix in Mayonaise and Mustard.
Salt and pepper to taste.
Chill for at least 1 hour.

a keeper.

makes 3 nice servings
calories 325
fat 15g
carbs 5g.
fiber 1g.
protein 30g.

Stuffed Chicken Breasts

3 half chicken breasts, pounded thin
6 slices prosciutto
2 T. olive oil
4 oz smoked cheddar cheese, shredded
4 oz cream cheese
1/4 cup grated parmesan cheese
1/4 cup lc bread crumbs
2 slicees bacon, cooked and chopped
chicken spices of choice, I used grill mate unsalted chicken seasoning

In mixing bowl combine cheeses, crumbs, bacon, and spices, set aside.
Pound chicken breasts thin.
Divide cheese mixture in thirds and roll inside each breast.
Wrap each rolled breast with 2 slices of prosciutto and secure with toothpicks.
Pan fry breasts in olive oil over medium heat 2 min. each side to brown.
Transfer to a glass baking dish and bake in a 400 degree preheated oven for 30 min until cooked through.
Serve with favorite veggie.

Each breast 3 carbs.

Tonight I kept looking in the fridge trying to decide what to make. When nothing I normally make came to mind I decided to wing it.......lol


1 1/2 lb chicken breast cooked and ground (set aside 2 Tbsps)
2 slices lc bread made into soft bread crumbs
1/2 cup shredded cheddar cheese
1 small zucchini shredded
3 green onions sliced very thin
1 1/2 tsp Italian herbs
1/2 tsp salt
pepper to taste
2 Tbsp crumbled bacon
2 Tbsp sunflower seeds
3 eggs


Combine above ingredients in large mixing bowl and transfer to lightly greased loaf dish or pan.

Process the following into a paste and spread over the chicken mixture.

1/2 cup fresh raspberries
1 Tbsp Yacon sauce (sf honey or agave will work also)
2 Tbsp ground chicken
3 green onions sliced very thin
2 Tbsp crumbled bacon
2 Tbsp sunflower seeds

Preheat oven to 375 degrees and bake loosely covered with foil for 60-70 min.
Then remove foil and broil until topping starts to crust and caramelizes.

Remove from oven and let sit for 10 mins before cutting.

This one is going on my A list.
