Return the bowl to the microwave and nuke for an additional 30 to 40 sec on high then remove it and wisk in the powdered erythritol until the mixture is smooth and creamy with no separation.
Then wisk in the splenda quick pack, vanilla, and flavor oil until well combined.

Spoon into mini muffin(tart) pan and put in freezer to set.

These are excellent!!

My newest twist

1/2 cup coconut oil
1/2 cup dehydrated strawberries
1/4 cup granular erythritol (ground into powder for a volume of almost 1/2 cup)
12 drops sweetzfree (1/2 cup equivilent)
1/4 teaspoon strawberry flavor oil

Put the coconut oil in a glass mixing bowl and microwave until the coconut oil is almost completely melted. (approx 30 to 40 sec.on high)
In a mini prep food processer grind strawberries and erythritol into a powder.
Add the melted coconut oil, sweetzfree, flavor oil to the powder and process until very smooth.
Pour into an 8 x 8 foil lined pan and put in freezer to set.

Sorry, Kevin, but I have to ask. Is it okay to just use the powdered e? If so, just how close to 1/2 cup would "almost 1/2 cup" be?

Can this be too good to be true. . .??????

If you are using the bark and coconut oil to lose weight, how much are you consuming a day?

All of you, please, pretty please. . .report your amounts, and your results.

I know individual results may vary. . .but this seems just too good to be true!!

BTW, thanks, Kevinpa, for your lovely picts and experiments. I WANT to try these, but I need some anecdotal advise!!!! And success stories!!!!

Yes, that would work Kisal. I would be using powdered myself but i am out. A loose 1/2 cup will work and make the sweetness adjustment in the splenda.

I don't know the answer to this. In my case I can say that I have been maintaining a plus or minus 5 lbs for almost a year now using a generally low carb intake and a rigorous exercise routine. I have been eating 4 to 6 pieces of this coconut bark per day over the life of this thread and have seen no change in my normal results.

one other thing can I use fresh strawberries instead of dehydrated ones.

Who knows, with fresh strawberries you may not need it. Again, if you use too much of any of these oils it will taste bitter.

well so far it is looking great....

I used a 1/4 chopped fresh strawberries purred with the coconut oil(you may have to re-melt the coconut oil part of the way and pour back into the mixture so it will mix. I also put in 10 drops sweetzfree. It is setting up great. It tastes pretty good. Will let know how final results are.

I don't see anything in either of those articles that says its not recommended to use coconut oil if you have high triglycerides, but I remember reading it somewhere.

Has anyone,here, who has high triclycerides used coconut oil? If so, can you tell me if you seen any change in your triglycerides after using it? I just wante to be as sure as I can before I decide if I want to try this or not.

the strawberry turned out great.

I also made a coconut bark that had a TBSP of Peanut Butter in it and it tastes great.

Did I hear somebody say Coconut Oil Peanut Butter Fudge?

1 cup coconut oil
14 oz coconut milk
1/4 cup extra dark Hershey's cocoa powder
1/4 cup granular erythritol (ground into powder for a volume of almost 1/2 cup)
1 splenda quick pack
2 T. DiabetiSweet Brown
1/4 t. peanut butter loranns flavor oil

In an electric mixing bowl combine and whip all ingredients with wisk attachment on high until stiff.
Scrap into a foil lined 9 x 9 pan with a spatula and spread even then freeze to set.

Cut into 3 x 3 squares and enjoy!!

Thanks for great recipes. I made the cream cheese version yesterday. Used some raspberry lorans and topped them with some slivered almonds. They're incredible

Didn't you do a peanut butter coconut oil fudge at some point? Perhaps in a different thread? I'm not so much of a chocolate person, but Peanut Butter fudge, now that's right up my alley!!!

I made the PB bark before but this uses coconut milk also and gets whipped very light and as a result is thick like fudge.

Quick question ..

How do you measure your coconut oil. Do you melt it first then measure out what you need or do you just measure it out like you would Crisco? Just curious.

Like crisco, I spoon it out of the container and smash it into the measuring cup then I melt it.

I got some of this a few week back in my netrition order and finally got around to trying it. I saw somebody asking about an Impossible coconut pie in another thread so that is what I made with it.


Its still hot but I'll let you know how it tastes when it cools.

Jill I stayed with the Betty Crocker Impossible coconut pie recipe and subbed in LC ingredients.

1 cup unsweetened coconut
3/4 tsp splenda quick pack (3/4 cup sweetener equivilent)
1/4 cup granular erythritol
1/2 cup LC flour mix (any lc flour should work here)
1/4 cup butter or coconut oil, softened
1 1/2 to 2 cups mimic cream
2 teaspoons vanilla
4 eggs


mix all ingredients in mixing bowl.

pour into coated 9 inch pie dish

bake at 350 degrees 40 to 50 minutes or golden brown and knife comes out clean



The taste was great!

Thanks, Kevin, that pie looks wonderful (my husband loves coconut, so he will be thrilled). My mimic cream should be here by Friday, and I can't wait to try this. I got both the sweetened and unsweetened (since the sweetened uses erythritol). Might use the sweetened version for some ice cream.

The unsweetened kind is less than 1 carb per 3.5 oz. The sweetened version shows 8 carbs but that is the SA carbs in the erythritol used to sweeten it which most people don't count anyway.

I am assuming you meant 5000, but to be totally honest with you I haven't a clue what the results of making something with a mix like that. The 5000 in the mix is the one thing there is no sub for that I know of and I am betting you would not like the results. Again that is a guess because I never tried it.
