Deila - so are you saying you eat a whole batch of this every day? I've made one batch and still have some left, I only eat a piece occasionally; but if it will make the pounds drop off, I'll definitely eat more. Any excuse to eat candy!
I made my first batch with chopped macadamia nuts, but I think I'll try the coconut and almonds next time. Also Deila, thanks for that coffee cup muffin recipe. I haven't tried it yet but it sure looks interesting. |

Deila - me again!! I made one of those coffee cup muffins and yuk - it was so greasy and the inside didn't even cook; the top of the muffin looked great but when I turned it out of the cup the bottom was all greasy and uncooked. I put it back in the cup, upside down, and cooked it another minute. It still came out greasy, I broke it apart and it was uncooked still. I ended up breaking it up in pieces and I could literally squeeze the grease/oil out of it. I realize coconut oil and flax seeds are both oily/greasy but this was way beyond what would be appealing to put in my stomach. I used the Walmart brand coconut oil, would that be the problem? Have you tried making it with just 1T of oil? I'm out of eggs now but if you have some idea of why this was so bad I may try it again when I get more.
I just had a light bulb go off in my brain -- would it have firmed up after cooling? I was so disgusted that I threw it out to the birds! ![]() By the way, thanks for telling me it's good for me to eat a whole batch of chocolate bark! ![]()

- I didn't mean to put words in your mouth, LOL, I know you said it works for you but I figured if it works for you maybe it will work for me! At least I can tell DH that "Deila does it" whenever he sees me going back for more and more bark! Now, on a more serious note, the micro was on High and its 1100 or 1200 watts and I used golden flax seed. Is yours at all greasy when it comes out of the micro? I did mine in a white ceramic cup. I will probably try it again using 1Tbsp. of oil when I get more eggs. Has anyone else had a problem with this being greasy? Thanks Deila, I do love the bark - gonna put coconut in the next batch. |

Truly mine isn't greasy at all. I used Bobs Red Mill Flax Meal, Wal*Mart's LouAna CO, and a large egg.
I suggest you give it another shot with 1T of oil instead. And tell DH that I've lost 6 pounds since April Fool's Day. Take care and keep me posted TG! |

Deila, yep I used Bob's Red Mill golden flax, Walmart CO and I used an extra-large egg, but I wouldn't think the egg made the difference. I will try it again using 1 T. of the oil. Probably later in the week, I'll let you know.
Wow 6 lbs. since April 1 - that's awesome! I just made another batch of the bark today cause I am going to start eating more (maybe not a whole batch! ) each day and see what happens. Yes, I will keep you updated. |

Here's Tooter's original recipe - she uses 1 - 2 teaspoons of coconut oil, not tablespoons. I don't know how to link to it, so I'm just using good old copy and paste:
1-Minute Muffin In a tea cup, Melt 1 or 2 tsp of butter or coconut oil (microwave for 5-10 seconds*) Mix in 1/4 cup of flaxseed meal (and/or mix with almond meal, protein powder) 1/4 tsp of baking powder 1 egg Sweetener to taste (i.e., 1-2 packets of Splenda or 1 TBS of SF syrup) Microwave on high for 1 minute* Turn out and let cool The muffin may look kind of wet at first, but it dries quickly as it cools. Eat warm with butter or wrap cooled muffin in plastic to eat later. *cooking time may vary depending on your microwave, avoid overcooking Deila: Good for you for finding a good way to get additional coconut oil into your diet! Thank you for posting this Tim. I'm going to try Deila's again with 1 T. of oil but if it's still greasy I will try the teas. recipe. Also, I notice this one has baking powder in it, have you tried it yet?

OMG this is too good! I have been doing CO for a month on and off now. Mainly b/c I got sick of eating the CO plain. I am going to make this daily so I can get my CO in on a regular basis AND my sweet fix. This is so easy to eat and you really don't think about it being CO. For mine I actually added a 1/2 tsp of Frontier Maple Extract and 1/2 tsp Coconut Ext plus Unsweetened Coconut flakes. I added some liquid stevia but I could see it not dissolving so I ended up adding some Somersweet which I am totally against. So I will have to get some Stevia packets next time while at the store... TFS guys! The recipes are great! When i get off my m/e fast this week I plan to make some with some natural PB. Thanks!

Has anyone had a problem with the sweetness disappearing after freezing?
I made a batch that tasted yummy and the perfect sweetness, then after being in the freezer for a day the sweetness is gone! I used Xylitol for the sweetener. I think another batch I made I used some fiberfit along with it and that stayed sweet tasting, would that make such a difference?![]() |

I have this one my to try list. But, has anyone tried this with flavorings added, other than peanut butter,raspberry or banana? I have several of the lorann flavor oils I'm itching to try.

I used erythritol and found the sweetness kind of disappearing too.
Warning to people trying this... do not taste for sweetness by sipping the hot mixture off a metal spoon even after vigorously blowing on it!! OMG the pain! |

I am not sure what I could be doing wrong- but I use a little davinncis and it separates and leaves a slime under the bark. It also tastes bitter.
I will keep trying though |

Coconut Oil Crunch 1/2 cup coconut oil 1/4 cup extra dark Hershey's cocoa powder (4 carbs) 1/4 cup granular erythritol (ground into powder for a volume of almost 1/2 cup) 18 drops sweetzfree (3/4 cup equivilent) 1/2 cup Dixie Diner Smaps cereal (2 carb) 1/4 t. peanut butter loranns flavor oil Yummo!! ![]() |
