I've got all of the missing recipes now except for the Chinese Barbecue Chicken Drumettes. I bet that he used the Hoisin sauce to make them but he doesn't mention using drumettes in any of those recipes in that thread.

It will take me some time to edit and sort through all of the recipes. For now I just dumped them all into three text files (Kevin's website recipes, the simple white bread thread and all other recipes posted at LCF). I'm not sure yet what I will do with them but I'm glad to have a complete collection of Kevin's recipes.

Chinese Barbecue Chicken Drummettes

2 lbs chicken wing drummettes
1/2 c. soy sauce
1/2 c. 1 carb ketchup
2 T. polyD+
3 T. SF Davinci carmel syrup
1 t. sesame seed oil
1/2 t. minced garlic
Blended soy sauce, ketchup, polyD, carmel syrup, sesame seed oil, and garlic.
Combine wings with mixture and marinate for 1 hour.
Bake in 9 X 13 glass dish at 350 degrees uncovered for 1 hour.
Baste occasionally with the marinate from the dish every ten or fifteen minutes.

After wings are done baking for an hour, tranfer to broiling pan and broil on high for 10 mins basting and turn once.

LindaSue and others, what a labor of love you have done, finding the recipes.

I think I speak for everyone here thanking you all.

Let us know where we can access the recipes.

There is still a heaviness in the heart of LCF at the loss of Kevin. That is to be expected, as he is missed so much. But you've made a difference locating all his recipes.

I just realized that two more recipes are missing:

BunKit #1 (Dinner Roll)
BunKit #2 (Dinner Roll)

I don't recall seeing either of those while going through the bread threads last night. Maybe they were called something else though.

LindaSue What an amazing woman you are and what a talented guy Kevin was. You are awesome!!!! You know, it's so strange that for someone I've never met, I think about him every day. And did for quite awhile before we knew he'd "gone home".

Bunkit #1 & #2

Yield 2 dozen
2.5 carbs

1 1/2 c. almond flour
1 1/2 c. wheat protein isolate 5000
1 c. carbalose flour
1/2 c. Resistant Wheat Starch

1/4 c. polyD plus

2 envelopes rapid rise yeast

1 t. salt

3/4 c. half and half
1/4 c. heavy cream
1/4 c. water

1/3 c. butter softened

2 large eggs

cooking spray

Combine almond flour, wheat protein isolate 5000, carbalose flour,
resistant wheat starch and sift into a mixing bowl.

Then combine 1 cup flour mix, polyD, yeast, and salt in large electric
mixing bowl.
Heat half and half, heavy cream, and water over medium heat till
temperature is 120° to 130°F.
Add heated dairy mix and butter and beat 2 minutes at medium speed
scraping bowl occasionally.
Then add 1 egg and 1 cup flour mix and beat an additional 2 minutes at
medium speed.
Then gradually add the remaining flour mix to form a soft dough that pulls
away from the sides of the bowl while mixing for 3 more minutes.

Turn dough out onto counter and spray top of dough with cooking spray and
cover tightly with plastic wrap and let rest 15 minutes.

Remove dough from plastic wrap and punch dough down then divide into 24
equal pieces.
Roll each piece into a ball and place on baking sheet.
Spray tops of rolls with cooking spray and cover with plastic wrap.

Let rise in a warm, draft-free place until doubled in size, about 20 to 40
minutes.

Beat remaining egg; brush on rolls.
Bake in a preheated 375°F oven for 15 to 20 minutes or until golden brown.
Remove and allow to cool on a wire rack.

I thought about that, and wouldn't mind doing it, but I see a couple of problems. First, since all of the recipes are here at LCF, I doubt if the owners of this forum would want me to draw traffic away from here. The other thing is that Kevin's photos would take up a huge amount of my server space. There are 20mb of photos. I suppose that's not so huge but I'm hoping to have a graphics website some day and that will require a lot of space. I guess we'll have to see what Kathy thinks we should do. I do think that Kevin's recipe collection needs to be preserved in some form or another and all in one location along with his photos. I would spend some time editing the photos a bit since some of them are rather large and some are very dark.

One thing that concerns me are his photos. I was wondering why they are still showing up here on the forum when they no longer show up on his website. Apparently his Photobucket site is still online because that's where they are linked to. If his family ever takes that page down, all of the photos here will disappear except for the ones that were posted as attachments. That's one reason why I made a point of downloading all of his photos yesterday. I gave them all the names of the recipes that they go with so that I will know what they belong to later. By the way, do you all realize that Kevin posted photos of virtually every recipe? That's pretty amazing. I think there was only one recipe, or maybe two, that didn't have a photo with it. He also made archiving his collection so much easier than it would have been if he hadn't posted those archive threads. I never could have copied them all in one day if not for all the work that he put into organizing them so well here. Kevin was truly an amazing person and his contribution to this forum is priceless.

If anyone knows his family, perhaps one could suggest to them to make a cookbook out of all of his recipes. Then, if they wanted to they could donate all the money from the cookbook to the Post Polio Foundation. Or use the money for his darling granddaughter's education, or whatever. It would be a Wonderful way to remember Kevin. I would surely buy the cook book and chip in on the cost. Maybe Dottie could talk to his family. We need some kind of memorial to our beloved Kevin. Is there a way to make the pictures attachments and post them back here to his sticky with the recipes linked to the threads for the discussions? Is that lots and lots of work for someone?

Just kinda thinking out loud. It just makes me sad that future newbies will miss out. We ARE expecting lots of future newbies.

I could be wrong, but I think this is also the same basic recipe as the Chinese Barbecue Chicken Drummettes. He just used his already made up Hoisin sauce.

Forgive me if I am wrong, but even if this is not the same basic recipe, it is another of his recipes. (I'm sure LindaSue has it listed in her list above. I didn't get it looked at well before typing this up.

OK, I've manged to get up both pages at the same time, and did some comparison. They are a little different.

Also, I think #6 is the #38. Chinese CrockPot Chicken in Linda's list above. But that may possibly be a still different Chinese Chicken recipe of his.

I think all of his bread recipes are linked on his recipe links sticky. The link to that is several different places in this thread. I posted it on the first page (just a few posts down), then others have also posted it.
The breads are in several different threads, but they are linked on that thread.

OK, to make things even simpler I'm compiling a post here that gives the links to the posts on that http://www.lowcarbfriends.com/bbs/re...ipe-links.html thread where the links actually are. Their sometimes are several posts even pages between the links.
Started out page one post #1, then,,,, #7, #57, #75 (just in case it wasn't listed before), #97 (bread links). Click on the blue numbers.

Of course there are many recipes which never got put in that thread, as we have been discussing, and trying to compile!! Instead of making a new thread, hopefully we can add to that thread with the new recipe links.

And tho I gave links to the links (), there is also good info in the posts in between!

Pork Shoulder Boston Butt Roast

In keeping with sherrys theme I will share a roast and change the meat.

I was at Wal-Mart on Friday and they had pork shoulder boston butt roasts that looked so good that I decided to try one. This was my first atempt at a pork roast so I decided to crock it. I was looking for a sweet pork taste so after I seared the 4 lb roast on all sides in EVOO, I put the browned roast in the crockpot.

Then in a mixing bowl I put:
1 can turkey broth
1 can petete diced tomatoes
1/4 cup soy sauce
1/4 balsamic vinegar
18 to 20 drops sweetzfree....approx 3/4 cup equivalent sweetener
2 heavy teaspoons dry mustard
1 teaspoon sesame seed oil

mixed and poured over the browned roast and set crock to low.

At 8 hours this wonder aroma permeated throughout the house.
The sauce is sweet and a touch salty and the meat is falling off the bone....Yum! http://forum.lowcarber.org/images/smilies/yum.gif (just a smiley)

I let it go 1 more hour then thicken the sauce a bit with thickenthin not/starch and served it with fresh steamed cauliflower.

Per Serving: 577 Calories; 42g Fat (67.1% calories from fat); 42g Protein; 5g Carbohydrate; 1g Dietary Fiber; 161mg Cholesterol; 1050mg Sodium.

Per Serving: 433 Calories; 32g Fat (67.1% calories from fat); 31g Protein; 4g Carbohydrate; 1g Dietary Fiber; 121mg Cholesterol; 787mg Sodium.

NOTE from Gaelen: I don't have nutrient counts for sweetzfree or Thick'n'thin NotStartch...If anyone want to PM me with those counts from the box in your kitchen, I'll plug them into this recipe.

I thought it tasted great....the gravy was kind of a sweet barbaque taste.

Duh! I just realized that I put all of the bread recipes in another text file and didn't add them to the main list. I don't recall seeing a pretzel recipe though. The pita bread is:

Billie, I did get all of the Chinese chicken recipes.

I had the same problem trying to access Kevin's Photobucket site but I was mainly pointing out that his photos are linking to there rather than to here at LCF. If that site goes away, so will all of his photos. I have them all safely backed up on my computer.

I did get all of the recipes listed in the various places of that thread. It was when I followed some of the links from that thread that I discovered other recipes buried inside the recipe threads that Kevin never listed in his archive. I may have missed some by only reading the first post in some of those threads.
