Raspberry Crusted Chicken Zucchini Loaf
Tonight I kept looking in the fridge trying to decide what to make. When nothing I normally make came to mind I decided to wing it.......lol
1 1/2 lb chicken breast cooked and ground (set aside 2 Tbsps) 2 slices lc bread made into soft bread crumbs 1/2 cup shredded cheddar cheese 1 small zucchini shredded 3 green onions sliced very thin 1 1/2 tsp Italian herbs 1/2 tsp salt pepper to taste 2 Tbsp crumbled bacon 2 Tbsp sunflower seeds 3 eggs Combine above ingredients in large mixing bowl and transfer to lightly greased loaf dish or pan. Process the following into a paste and spread over the chicken mixture. 1/2 cup fresh raspberries 1 Tbsp Yacon sauce (sf honey or agave will work also) 2 Tbsp ground chicken 3 green onions sliced very thin 2 Tbsp crumbled bacon 2 Tbsp sunflower seeds Preheat oven to 375 degrees and bake loosely covered with foil for 60-70 min. Then remove foil and broil until topping starts to crust and caramelizes. Remove from oven and let sit for 10 mins before cutting. This one is going on my A list. Kevin- how on earth did you ever come up with that combination? It sounds interesting and certainly nothing I would ever think of, especially the topping/paste with raspberries. If you say it's A-list then it must be really flavorful!
I assume that you squeezed all the moisture out of the zucchini? |

Kevin, this sound so good, I always have Red Raspberry jam (s.f. of course) w/my pork, chicken, turkey. I have all the ingredents, and I am going to make a single serving size for me, Thanks
