CrackSlaw Breakfast Scramble
I made a twist to an old favorite this morning. Major Yum!!!
1 lb lean ground beef 1 - 12oz bag broccoli slaw 1 small zucchini (cut into bite-size pieces) 2 green onions (sliced thin) 2 tsp. beef broth granuals 3 large eggs a splash of lc milk or heavy cream salt and pepper to taste 1/2 cup shredded cheddar cheese In a large skillet, stir-fry the first 5 ingredients until the veggies are fork tender and the beef is browned. Drain any grease and transfer to a storage container. Return 1 serving to the skillet (approx1 cup or as much you like) along with the rest of the ingredients and scramble until golden brown. The recipe makes 6 to 8 serving so you will have to multiply the eggs and cheese by the number of serving you are making. ![]() ![]() ![]() ![]() |

What a scramble!
keep the filling part in the fridge? There are just the two of us here, but it would be a wonderful breakfast change for us. Healthy and yummy. |

Barbo, the base seems like a great dish to make for the week then add to the egg mixture as needed. That's what I'll do anyway |

Kevin, I know this is an old thread, but I just had to comment. This looks alot like the breakfast scramble that they serve at that little diner/restaurant at the end of Pike St...south of the Meadows. Is it Danny's?
