LC Baked Pita Bread Chicken Crack Slaw Spring Rolls
LC Baked Pita Bread Chicken Crack Slaw Spring Rolls (made 12 spring rolls @ 3 carbs each)
Crack Slaw filling 1 lb cooked chicken breast (cut in small pieces) 1 bag broccoli slaw 1 can bean sprouts (rinced and drained) 3 green onions inc. green (chopped) 1 clove garlic (minced) 1 T. sesame seeds 1 tsp. fresh ginger (grated) 4 tsp sesame oil 4 T. butter 1 tsp franks red hot 4 T. soysauce Stir fry all ingredients over medium heat until they are the desired texture. Set aside. I stir fried mine about 20 minutes. wrappers 1 batch http://www.lowcarbfriends.com/bbs/lo...xperiment.html. Let rise then punch down and divide into 12 pieces. Roll each piece (1 at a time) into triangle shape with 1 corner pointing toward you. Spoon 3 tablespoons filling into center of dough. Fold lower corner of egg roll wrapper over filling. Fold in side corners. Moisten top corner of dough with egg white; and roll up like jelly-roll. Repeat procedure with remaining dough. Lightly coat egg rolls with cooking spray, and place, seam side down, on a baking sheet coated with cooking spray. What's Spring Rolls without Duck Sauce.
LC Duck Sauce (makes a little over 2 cups) 1 carb per Tablespoon 1 (14 1/2 oz)can Del Monte No Sugar Added Sliced Peaches(formerly Carb Clever) pureed including liquid. 1 tsp soy sauce. 1 T. sf preserves of choice. 1 splenda quick pack 2 T. diabetisweet brown 1 tsp. LC ketchup 1/2 clove garlic minced 1 green onion chopped fine 1/2 tsp. dry mustard. Puree all ingredients in food processor. Yum!! |

Ann, Spring Roll is really just another name for Egg Rolls. There are some subtle differences between them but they are loosely defined. I guess I called these Spring Rolls out of habit, since the Chinese restaurant I used to go to all the time called them that. Whether you dip your spring rolls in duck sauce or pour it over is personal preference. I like to cut mine open and drizzle some on when I eat mine.

Thank you Kevin, I run a home day care business and take care of my 93 yr old Mom. I felt dumb after I sent the reply, for some reason I was thinking put the rolls in a pan and pour the sauce over them. Had small munchkins running amok at the time, one of my not so smart days I guess. Thanks again.

For a time saver, could you use toasted Joseph's LC pita pockets, or roll it up in the Lavash bread and bake it? It would't exactly be an egg roll, but it would be easier, and less expensive than the pita bread experiment.

Would it be okay to make the pita bread the day before I need it, and let it rise overnight in the fridge? Then, I could just put the Spring rolls together the next day and bake them. Otherwise, I don't think I have the stamina to do the entire process in one day, but I sure do want these for my birthday! |
