now that sounds stupendous!
It is, Mallory, and Kevin's peanut butter-crema topping becomes a great creamy filling under the crumbs and ganash and coconut layers. Last edited by CreekWatcher; 02-05-2008 at 08:45 AM.. |

I have no idea how I missed these when they first came out many months ago! They look great!
Kevin--I do have a question, as usual! So, with the eggs--should it be one with the crust and one with the filling? |

Sorry, I didn't mean to make light of your confusion but this morning when teresa asked the question I did not re-read the entire thread. Yes I used 1 egg in the filling but this was a recipe that I had made before I got sick this year and recipes from that period are not real fresh in my mind.

These sound really good! I missed the recipe back when it was first posted, because I was ill at the time.
![]() About the Nestle's Media Creme/table cream: I can't get to a Walmart. Can someone tell me what the consistency of this cream is like, so I can attempt a reasonable sub? ![]() |

You can try heavy whipping cream and Carbquick. Won't be the same but close.
You could also try one of Jennifer's bake mixes. What can you get or have on hand? Let us know how it turns out. ETA: If you read the thread, one egg goes in the crust and one egg goes in the filling. Last edited by drjlocarb; 11-28-2010 at 07:46 AM.. |

Well, I live in Norway, we don't have the same selection you have in the US AT ALL. Lucky you. I have cream cheese, sour cream, yogurt, whipping cream, xanthan gum, almond flour, coconut flour, gluten flour, soy flour and soy powder.

Jennifer's Bake Mix for Baking Season
This is Jen's. I think you could try these with the stuff you have. almond, gluten and soy powder might get you close. Can you get whey powder, body builders use it? |

You would use 15 oz, whipping cream for the crema and 2c. Jennifer's bake mix ingredients instead of 2c. Kevin's bake mix ingredients.
You would have to make up a batch of the bake mix to make 2.c I didn't mean the cream and carbquik would = crema. Sorry, do I have you confused yet? |

I'm sorry to be back again, but I can't bake this in the oven with whipped cream on it? It will be one runny mess, will it not?

The whipping cream is not whipped per se, but it is beaten with some other ingredients (peanut butter for one). It is then poured over the crust/cookie layer. It will kind of soak down in the other layer (I think). So yes, you do bake it with the cream mixture on top.
Sorry I haven't made this so I really can't tell you just how it does, but it is baked with it on top. Sounds good. I just may have to try it one of these days. |

Hmmmm,,,,, Seems to me someone in another thread said that the Nestles creama is a different consistency to whipping cream. You MAY not need quite as much of the cream. Not really sure.
Hopefully someone who has made it can respond to you better than me. |
