Kevin..How did you know I had some frozen berries/cranberries, too?

I'm going to try this with my basic white bean cake recipe as the "cake" part, but leave
the fruit the same..

This recipe came just in time. My Netrition order is due to arrive today with my Monin's syrup and I have 6 bags of cranberries in the fridge to make dried cranberries with. I'll revise my plan to only process 5 bags!;)

Thanks so much for this recipe and all the others too!

Yum, that looks good Kevin! I'm thinking cranberries and blueberries would be good also. I have so many recipes I want to try and too many things to finish up before I try them, makes me sad.:( I'm adding this to the list!

You didn't give your usual taste review, Kevin. So, what's the verdict  or ? I have to figure since you posted it it's yummy!

The taste was great. The berries worked well together and the cake was very moist. The next time I make it I am going to increase the batter by 50% since it was thinner than I would have liked it to be.

Tweaker Geek 01-07-2008 05:05 PM

Thanks Kevin, I'll make a thicker cake also.

My Gravy!
Just happen to have all of those ingredients on hand.

It looks yummy and I can almost smell that strawberry/pecan flavor
wafting through my house. Hope to get up early and make this.
We are out of dessert.

Thanks once again, I'm certain this will be good eating.

I'll be making this in the later part of the day
Are you saying to double the recipe for the cake?

No, increase it by 50% or 1 1/2 times the original.
Don't get me wrong, it works this way but is more like a bar than a cake.
