Prosciutto Wrapped 3 Cheese Stuffed Chicken Breasts
3 half chicken breasts, pounded thin
6 slices prosciutto 2 T. olive oil 4 oz smoked cheddar cheese, shredded 4 oz cream cheese 1/4 cup grated parmesan cheese 1/4 cup lc bread crumbs 2 slicees bacon, cooked and chopped chicken spices of choice, I used grill mate unsalted chicken seasoning In mixing bowl combine cheeses, crumbs, bacon, and spices, set aside. Pound chicken breasts thin. Divide cheese mixture in thirds and roll inside each breast. Wrap each rolled breast with 2 slices of prosciutto and secure with toothpicks. Pan fry breasts in olive oil over medium heat 2 min. each side to brown. Transfer to a glass baking dish and bake in a 400 degree preheated oven for 30 min until cooked through. Serve with favorite veggie. Well, don't those look yummy! Are there enough brown bits left in the saute pan to deglaze with broth or wine (and maybe finish with cream) to get a little sauce?

Tillamook makes a very nice smoked cheddar cheese. Kroger has it near the deli. It was $4.79 for 8 ounces the last time I bought some but it could be double that price now the way prices have been going up like crazy lately. Even eggs aren't cheap food anymore.

I did something like this a month or so ago. I was tired of plain chicken breast so i used what I had in the fridge and here is my version
I butterflied my chicken breast I took a piece of cut up sting cheese and put it in the middle with a big bunch of chooped cilantro closed it up and wrapped with regular bacon, tucking the ends in. Fried it in a skillet. The cheese melts and the cilatro tasted really good. |
