Easy Cinnamon Candied Pecans
1/2 cup butter
2 large egg whites 1/2 tsp. salt 1 tsp. ground cinnamon 1/3 cup powdered erythritol 1 tsp. splenda quick pack 1 T. not/Sugar 1 tsp. vanilla 2 tsp diabetisweet brown 12 oz. pecan halves Melt butter and put in a 9 x 13 baking dish. In a small mixing bowl, combine well salt, cinnamon, powdered erythritol, splenda quick pack, and not/Sugar, then set aside. In an electric mixer, beat egg whites until nearly stiff. Continue to beat while slowly adding the sweetener mix and vanilla until stiff peaks form, then fold in pecans. Spread mixture evenly in the buttered 9 x 13 and bake in a 300 degree for 40 to 60 min until nuts are toasty brown. Stir every 5 to 10 min to keep nuts covered with butter and sweetener. On the last stir, sprinkle in the diabetisweet. When nuts are browned remove dish to rack to cool slightly, then dump nut onto paper towel if neccessary to remove excess butter. These are really good with a very nice sweet crunch. ![]() |

[COLOR=Red]They look & sound delish. But I'm afraid to make them, cause I have trouble enough with portion control with nuts as it is. I'm afraid I'd reallllly have trouble with those![/COLOR]

I've made a similar version of these for years and my entire family loves them. Like fight them for the bowl loves them. Instead of the brown diabetisweet, I always use a drizzle of blackstrap. What I never thought of was the not/sugar, will have to try that next time... And they make your house smell really, really good
