Zucchini Brownies
These are some big kickin
moist brownies Zucchini Brownies 2 cup grated zucchini 2 cup carbquik 1/2 cup powdered erythritol 1 splenda quick pack 3/4 tsp salt 1 1/2 tsp baking soda 1/2 cup cocoa 1/2 cup chopped pecans 2 tsp vanilla 1/2 cup canola oil 2 large eggs, beaten 1 Mix sugar, oil, vanilla and eggs. 2 Add all dry ingredients and mix well. 3 Fold in zucchini and nuts. 4 Spread in greased 9 x 9 inch pan. 5 Bake 40 minutes at 350 degrees Servings: 9 Nutrition Facts Serving size: 1 serving Percent daily values based on a 2000 calorie diet. OH MY Kevin!! I cannot wait to make these...You are so kind to share these innovative recipes...Do you happen to shop at Whole Foods Market? I but everything at Netrition.com but I was going to take a look at Whole Foods...I still think Netrition has the best prices and selection, though!

I actually find it way cheaper and more convenient to shop at netrition. Heck they deliver it to my door for $5 ....
I used to tip pizza guys more than that. If I cant get something there then I start thinking about looking elsewere. |

Kevin, thank you, thank you. these look so good. I do have a question tho,I'm one who has thrown stuff out because of the "taste", tried the lemon bars, thought it would surely be masked by the lemon couldn't eat them. I know your DW has the same problem too, I quess I want to know if I should try these. (did a couple of impossible pies and bisquits that were real good, though).

It's about 6:30 am and I haven't had my coffee yet but I'm seriously confused on the carb count on this. Can someone tell me the carb count per piece or for the whole batch?? Thanks.

Back in the HC days I used to bake things with zucchini milk (which was just pureed zucchini) for texture. Kind of like some people use apple sauce.... anyway as I was shredding the zucchini I thought I'd try it and as it turned out it worked very nicely.

I have been meaning to say that these were very thick. Almost 2 1/2 inch high and 3 x 3......in other words a BIG brownie.
The next time I make them I am going to make them in a 9 x 13 dish and that will yeild 12 brownies about half as high and will only be about 3 carbs each. |

made them last nite and they are great! i added sf melted choc (dixie diner) and one sf milk choc bar, (because they taste
by themselves) a couple of minutes after they came out of the oven,and then stuck them in the freezer to freeze. wow, what a great treat. this morning as they defrosted a bit as i was individually wrapping them, i took a small one. tastes very much like a pilsbury choc cake. the frosting was kinda crispy, very very good! kuddos again kevin! just to add, i got 16 out of mine, i cut them a little smaller.

i actually melted the bar and chips in the microwave first and then drizzled them on top of the cake. i should add, i cut the cake into 16 squares as it cooled, (it was just warm) and then added the melted choc. i then lifted the pieces onto a plate right away cause i figured the choc would get too hard and make a mess. this is the best choc cake recipe (i know its a brownie recipe) i have tasted so far... you won't be dissapointed!
