Butter Rum Belgian Waffle Cookies fixed--ignore the other one
 
I have been wanting to low carb one of my all time favorite cookies and finally got around to doing it this morning. :up:

Butter Rum Belgian Waffle Cookies
yeild 1 1/2 dozen
approx 1 carb each

1 cup carbquik
1/8 cup almond flour
1/4 cup powdered erythritol
1/8 cup DiabetiSweet brown
1/8 t. sweetzfree (1/2 cup equivilent)
1 T. not/Sugar
2 large eggs
6 T. melted butter slightly cooled
1/4 to 1/2 t. butter rum flavor oil (depending on how strong you like your flavor)

Mix all ingredient on low speed scraping sides until smooth batter forms.

Spray iron with cooking spray and heat on medium high electric burner.

Place tablespoon of batter in center of open iron. Close iron, dont squeeze.
Cook 15 seconds on each side. remove cookie and repeat until batter is gone.

Looks good...I just purchased a waffle-iron, I will be anxious to try these. Where do you buy the butter rum oil?

These look really good. Do they have the crispy texture of a Pizzelle? Would they work in a Pizzelle maker?
I found my de-carbed Pizzelle recipe, but never did get around to making them again...so my maker has only been used for one batch of cookies so far!!!

No Bette, Belgium Waffle cookies unlike pizzelles are not crispy. They are a heavier thicker almost dense cake like cookie. You can use this batter in a pizzelle maker because I have done that in the past but they will not be the texture of pizzelles as they are not supposed to be.

Do you mean a regular waffle iron? If so. I suppose it would work but the waffling on the cookie iron is way smaller and closer together

Hmmm, Kevin...thanks for the reply. I don't have a Belgian waffle iron just a regular electric one. I'll try them in that when I return from a trip.

I'll be very interested to hear how they work on a standard electric waffle iron, as that is all I have, too.

I broke out my Belgian waffle iron to make these this week for christmas and when I saw the pizzelle thread I thought I'd bump these in case there are others that like Belgian waffle cookies.
