Mint Chocolate Pinwheels
 
Mint Chocolate Pinwheels (yield 4 dozen 1/2 carb each)

2/3 cup powdered erythritol
1 T. not/Sugar
1 t. DiabetiSweet brown
1/2 t. splenda quick pack

1 stick butter softened
1 egg
1 T. CC milk
1 t. vanilla
1 cup Carbquik
1/2 cup Carbalose
1/2 cup wheat protein isolate 5000
1 t. baking powder
1/2 t. salt
2 T. dark cocoa
1/16 t. LorAnn mint chocolate chip flavor oil.

In mixer, combine sweetener mix, butter, egg, milk, and vanilla at medium speed until light and fluffy.
Add flours, baking powder, salt and mix at low speed until soft dough forms.
Divide dough in half and set 1 half aside.
Add Cocoa and flavor oil to the other half of dough and mix on low speed until well blended.
On lightly floured wax paper or parchment roll each half of the dough into a rectangle 1/8 inch thick.
Set 1 rectangle on top of the other and roll jellyroll style along the long edge until a log is formed.
Pinch seam and ends to seal.
Wrap with plastic and chill in fridge for 3 hours or until firm.

Preheat oven to 350.
Cut roll in 1/4 inch slices.
Place slices 2 inch apart on ungreased or parchment lined cookie sheet.
Bake 8 to 10 min. or until set.
Cool completely.

those look great! can't wait til netrition gets in the powdered eryth. i wonder how they would be w/raspberry flavoring instead of the mint? i will have to give it a try as soon as i can order the powdered E. keep 'em coming kevin!

These sound great! I'm not a big fan of mint, though, so I'll probably try to sub peanut butter flavoring. Yum! :)

You know Tyler that reminds me of a story about when I was young.(OMG look what you have went and done now!! :eek: ) Anyway I promise I will try and make this short.:laugh: A couple of friends of mine had mothers that were great bakers. Everyone who tasted their wares told them they needed to go into business to open a bakery and they would make a million dollars from all the people who would comes from miles around. After hearing this same advise many many times they decided that it might be a good idea and went out and bought some equipment, leased some space and away they went.

Anyway for months everything went great. Many repeat customers made it look like their bussiness was a great success......Until, one day a government rep. came in their store and put a book full of regulations down on their counter and told them that if they did not include the approved list of preservatives in their products that they would shut them down. They did,(because they had to), and they lost all their customers because the taste and flavor of their baked goods was lost forever. That experience has always kept me from attempting what you just suggested..... Sorry , we old guys get set off telling old stories every once in awhile. :D

She's right Kevin....no preservatives or goverment regulations required to the cookbook! and you already have the awesome illustrations!!
Great story...I can certainly see it happening.

and how about a bigger recipe site with ALL the recipes you have tried u know like linda sue's. caz there is no such thing as too much low carb mega recipe sites and you create one of a kind unique must try recipes. thank you for all your hard work and determination to obtain the best results.:up:
