Kevin was sick last year - a recurrence of childhood polio. He was in the hospital for a couple months but is much better now (whew!) He was greatly missed and had a lot of people worried

maryjane, the last time i made these i used my carbalose mix but anyone of my mixes will work in place of the separate flours in this recipe. The intent of my mixes were to sub in all my recipes.

The official name for what happened to me is Chronic Respiratory Failure brought on by post polio syndrome. For now I have it under control but it will be with me the rest of my life.

My favorite comfort food, thanks Kevin!!!

Well, with a few changes (not to the dough part), I made my most favorite comfort food, cinnamon pecan rolls. My mother use to make these for me for my birthday and any time I needed them!! LOL I made these rolls just like the recipe called for the first time and while they were delish, they were too sweet for me which is really odd! So, I took 1/2 cup of brown maltitol crystals, 1/2 stick of butter and a cup of pecans and put them on the bottom of my 13X9 glass dish (melted butter, mixed in brown maltitol and pecans, spread across the bottom). I made the dough just like Kevinpa's recipe and rolled it out and just put some soft butter on the dough and sprinkled cinnamon and crytal maltitol over it, maybe 1/4 cup or so of mix. Rolled it up, cut them and put them on top of my pecan mix. Baked and vwalla!!!! They would be hard to tell from my mother's originals. I don't have a problem with maltitol but I'm sure you could sub another polyol but you do need that for the gooey top with pecans. Here's my pics. Oh, by the way, before toying with these recipe's of Kevinpa's, I've never had any luck with yeast...now, my mother is proud of me!!! 46 and just now figuring out yeast!! LOL

Great job Maryjane! I made them once with pecans also and really liked them. The great thing about these is the dough can stay the same and you can make the gooey part whatever you like the best.

Hey Kevin,
I'm dying to make these rolls, but not/sugar is no longer made, and somewhere in this thread, you mentioned that you can't substitute anything. Any ideas? I do have not/starch. Thanks, Judy

Kevin said that not/starch is fine to use as a sub.

cinnamon rolls

those look yummy. The "not sugar" has been discontinued by the manufacturer. What can be substituted?

oops

I didn't see the reply to previous posts about the "not sugar" being unavailable. I checked the Netrition site and the "not starch" is available but of course, a lot more $$. Has anyone tried the recipe using this sub?

You can use the not starch. Alos if you go to the maker of these,on line you can find the not sugar, It's just a smaller bag at a higher price. Julie

Kevin,
These are seriously good!!!! The first batch is ready for the freezer and I have a second rising right now! I sprinkled chopped pecans on this second batch before I rolled them up. Can't wait to see how these do.

Thank you!

Leigh

Ps. How did you get so smart???

I have mine rising in the oven, I hope they are good with no tang taste. I didn't make the sauce, I just used a mix of brown and other faux sweetners for the filling. A tip I found on google to bring out the cinnamon favor is to add a pinch of cloves. I didn't have cloves so I used a pinch of allspice instead.

My icing is very good so I will be using it:

4 oz. cream cheese (soft)
1 stick butter (soft)
1 tsp vanilla extract
1/2 tsp lemon extract
1/2 a splenda quik pk
1/4 cup of bulk splenda
1/3 cup of powdered E

I agree the dough was tricky to roll, but I rolled it on parchment paper and had no trouble. I used a few sprinkles of the 500 flour for dusting. I tried useing the dental floss, but this dough is sticker then normal dough so it doesn't work to well. I used a sharp knife to cut.

The dough rolled out beautiful like the real deal.

Debbie

Debbie,
I read on a post somewhere on here that if you sift the carquick and get rid of their shortening, you don't get the twang. That's what I did with mine and they did not have any off taste. This is the first time I have used Carbquik, so I don't have a basis for comparison.
