Stuffed Meat Loaf Roll
I made this version an old BC classic for dinner tonight.
Stuffed Meat Loaf Roll (4 generous servings @ 4 carbs each) 1 lb ground beef 1 egg 1 slice lc bread(crumbled into soft bread crumbs) 2 T. lc catsup 2 T. calorie countdown milk 1/4 t salt 1/4 cup grated parmesan cheese 8 black olives (chopped) 1 small stalk celery (chopped) 1 green onion (chopped) 6 slices cooked bacon (chopped) 1 t. salt 1/2 package (5 ounces) frozen veggies 1/4 cup shredded chedder cheese 4 slices american cheese Rinse frozen veggies under cold water and set aside to drain. ![]() Mix first 10 ingredients in a large bowl until they are well incorporated. ![]() On a piece of aluminum foil, pat the ground beef mixture into a 10 x 12 rectangle. ![]() Arrange the veggie on the rectangle within 1/2 inch of the edge. ![]() Sprinkle on the chedder cheese and bacon. ![]() Roll up the rectangle carefully using the foil to lift. ![]() Press edges and ends to seal the roll. Place on a rack in a shallow roasting pan. ![]() Cook uncovered in a 350 degree oven for 50 to 60 minutes. For the last minute, place overlapping cheese slices on top of roll and return to oven until melted..(about 1 min) ![]() ![]() ![]() |

Kevin, this reminded me of one I made awhile back. Here is my version (this one has breadcrumbs in the list of ingredients). You can either omit them or substitute something else for them. Please excuse the high carb sides on the plate because when I made this I was not following LC at the time:
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Linny's Notes: This turned out pretty good. I used deli ham and an Italian cheese blend. I also used tomato sauce mixed with water in place of the tomato juice and used the rest of the can to top the meat roll with. Sicilian Meat Roll 2 slightly beaten eggs 3/4 cup soft breadcrumbs 1/2 cup tomato juice (or 1/4 c. tomato sauce and 1/4 c. water mixed) 2 tablespoons snipped fresh parsley 1/2 teaspoon dried oregano, crushed 1/4 teaspoon salt 1/4 teaspoon pepper 1 garlic clove, minced 2 lbs lean ground beef 6 thin slices fully cooked deli ham or prosciutto 1 3/4 cups shredded mozzarella cheese Preheat oven to 350 degrees. In a large bowl combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, and garlic. Stir in ground beef, mixing well. On foil, pat meat mixture into a 12x10 inch rectangle. Arrange ham slices on top of meat, leaving a 3/4 inch border around all edges. Sprinkle 1 1/2 cups cheese over ham. Starting from a short end, carefully roll up meat, using foil to lift and guide; seal edges and ends. Place roll, seam side down, in a 13x9x2 pan sprayed with Pam. Bake for 1 hour and 15 minutes or until it reaches 170 degrees and juices run clear. (Center of meat roll will be pink because of the ham.) Sprinkle remaining cheese over top of roll; return to oven for 5 minutes or until cheese melts. Let stand 10-15 minutes before slicing. About 8 servings Source: Better Homes and Gardens ![]() |

Kevin..I am going to make this in a couple of weeks...thanks!! I am going to use the Frozen Broccoli and Cauliflower in it to make it instead of the mixed Vegetables to make it even more LC...

Wow Kevin, we loved this so much I made it 2 times this week! I have never used black olives in anything and I was hesitant. But DH said lets just try it. I am glad we did. I didn't use the LC bread cause we don't have any. The second time I made it I left out the milk. It is a delicate thing, it cracked open a couple of times so I squished it back together and put it in the oven. It came out fantastic. Thank you for another winner.
