Pina Colada filled Almond Sandwich Cookies

Pina Colada filled Almond Sandwich Cookies (12 cookies @ 1/2 carb each)

1/2 cup shortening
1/4 cup powdered erythritol
1/4 teaspoon splenda quick pack(1/4 cup equivelent)
1 T not/Sugar(for sweetener)
1 eggs
1/2 tablespoon almond extract
3/4 cup + 1/8 cup almond flour
1/4 cup wheat protein isolate 5000
1 T not/Sugar(for flour)
1/4 teaspoon baking soda
1 teaspoon baking powder
1/8 teaspoon salt

In a large bowl with electric beaters, cream the shortening, erythritol, splenda, and not/Sugar. Beat in the egg and mix well. Add the almond extract.

In another bowl, sift together the flour, not/Sugar, baking powder, baking soda, and salt. With a wooden spoon, gradually stir the flour mixture into the shortening. Roll into a log, about 1-1/2 inch in diameter. Wrap in waxed or parchment paper and refrigerate for 4 hours. (You can use the freezer to speed up the proccess.)

Preheat the oven to 375 degrees F. Cut the dough into 1/4 inch thick slices. Place cookies on an ungreased cookie sheet. Bake for about 10 minutes, or until light golden brown.

Filling
2 T. shortening
1/2 cup powdered erythritol
2 T. polyD
2 T. not/Sugar
2/3 cup equivilent splenda (16 drops sweetzfree)
2 to 3 t. warm water
1/6 t. LorAnn pina colda flavor oil

wisk to combine
powdered erythritol, not/Sugar, and polyD
add warm water and wisk until creamy and smooth.....(no lumps)
add shortening and wisk until combined and creamy.
add sweetzfree and flavor oil then wisk 1 last time until smooth and creamy

Apply filling and assemble cookies.

I made your crackers and can't to try your other recipes. This looks great, too! Honestly, if you created a cookbook, I'd be the first to buy it! You are truly inspiring with all your recipes, tips and weight loss story.

Thanks Marla, My DW and I lived in Plum when we first got married up on the hill in one of SK Managements Townhouses but that was over 20 years ago.

Kevin, Can you tell me where you get the LorAnn oils? I did not see them on Netrition. Also there is a thread where someone asked about sugarfree cinammon chips and you told her to make them with white chocolate and cinammon oil. What kind and where do you get the white chocolate. Thanks in advance for your help. Cindy

Around Thanksgiving and Christmas our local super Walmart had a LorAnn display with tons of flavors in the baking isle. 90% of what I have I got there.

As far as the white chocolate goes, a local drugstore carries a SF Belgium chocolate bar. Unfortunately I have not got around to doing the cinnamon and butterscotch chips yet.

I soooo want to make these but have to wait till I can put in an order for the oils unless I find them locally. No luck finding them locally so far, though.

When I called LorAnn to ask about the oils they told me they are carried at Hobby Lobby and in my area at a store called Cake Craft which sells all kinds of cake and candy making products. I haven't checked either place yet but intend to. Also you had to buy 12 bars of Ross chocolate bars from Netrition and I wasn't willing to make that much of a $ investment without knowing if I like them. I guess I will just check out the local stores and see what I can find. Cindy
