that would work well with spaghetti squash?

Kevin: I have a great pasta salad recipe that incorporates broccolli, cauliflower,
carrots (if you want), with a sweet/sour dressing..Do you want this? I'm thinking what type of salad dressing would "go" with spaghetti squash?

Sure Carolyn, I'm looking for something to tweak with stuff I have in my panty and fridge. If I don't use this squash I think it will go bad and I just made spaghetti the other day so I thought a mock pasta salad would be nice.

Here are 2 good pasta recipes using the same dressing.

Pasta N Pepperoni

Pasta (spaghetti squash)(this recipe called for 8 ounces of pasta)
1 medium onion diced
1 chopped cucumber
1/2 cup of black olives, sliced
4 ounces of pepperoni
1 green pepper, chopped
6 ounces of pimento, if you wish

Dressing:
1 cup oil
1 cup vinegar
1 Tbs. garlic powder
1 cup sugar (Splenda)
4 Tb. onion flakes
4 tsp. dry mustard

Gosh: This looks like lots of dressing, Kevin..I would cut it back..

Or: Using the same salad dressing:

Pasta/spaghetti squash
bite size pieces of broccoli and cauliflower
radishes, sliced
green onion or red onion, chopped
black olives, sliced
green pepper, chopped

Pour salad dressing over, refrigerate and enjoy!!

Edited to say: I think this dressing would work well with spaghetti squash..It is very good..Of course you can tweak away on anything..and let us know if there is a winner.

Thanks Carolyn,
I made a small batch of the sweet and sour dressing and put it on the spaghetti squash and tasted it and although the dressing is very good I think it would be much better on Dreamsfield so I will be making this next week when I have all the ingredients.

After looking at salad recipe all morning I made one up from the things I had on hand.

I'll let you know how I like yours next week......thanks again.

If I would have had black olives, that is the only thing that seems to be missing that I would add next time I make this.

Spaghetti Squash Mock Pasta Salad

1 spaghetti squash, about 1 1/2 lbs.
2 stalks of celery, chopped
6 green onions, chopped
3 small zucchini, chopped
1/2 tsp. basil leaves, crushed
1/2 tsp. oregano leaves, crushed
1 tsp. minced garlic
1/4 tsp. each of marjoram, thyme, and Salad Supreme
2 tbsp. EVOO
5 to 6 med. roma tomatoes, seeds and pulp removed then chopped
1/2 c. grated Parmesan cheese
1/2 c. shredded Parmesan cheese
1/4 c. shredded chedder cheese
1/2 c. bacon chopped

Cook bacon until it starts to crisp and remove from pan and save bacon grease.
Cook squash per your normal method(I cut in half and steam mine).
Remove seeds and fibrous strings.
Remove spaghetti-like squash strands with two forks and drain any excess water and set aside to cool.
Sauté veggies(except tomatoes) and herbs in bacon grease and EVOO until they are the desired tenderness and set aside.
In a large mixing bowl combine spaghetti squash, veggie sauté, tomatoes, cheese, and bacon.
Salt and pepper to taste.
Cover and chill in fridge until ready to serve.

Kevin: This is my kind of salad..I'm sure it would be good as a Pasta Primavera, too..right out of the skillet.

Yes, that sweet and sour dressing is really for more bland pasta, I think OR
a raw veggie salad without the pasta at all..

kevin, i add artichoke hearts, from the can, cherry peppers, soy beans and wishbone robusto italian dressing. i throw in extra pepper, garlic and some salt. it's delish! i also add chunks of cheddar and fontinella cheese. ok, now i want some!

Dang Bella I wish I had thought of artichoke hearts earlier. I wasn't feeling real well today so I wasn't planning to go to the store but my compulsion to get things right got the better of me and before dinner I ran out and bought some black olives.....lol and to think I walked right past the artichoke hearts too.

Oh well! everybody loved the salad as it was.

Ah! :) (mushroom lovers here, all of us!)

One of my favorite pasta salad dressings is a sesame one -it would probably go well with your recipe:)

1T each: soy sauce, vinegar, water
1/2tsp toasted sesame oil
2T olive oil
1pk splenda
salt and pepper to taste (I usually just add it to the salad)

Blend well then toss in toasted sesame seeds into the salad:)

My favorite pasta salad, which might be good with spaghetti sqash is as follows:

1 jar sun dried tomatoes in olive oil
diced red onions to taste
1/2 cup shredded parmesan cheese
1/4 cup olive oil
1 can olives cut in half

This is such a tasty recipe. I'm going to try it with spaghetti squash today.

Sue: Yummm..now, you chop up the sundried tomatoes, right? And, you use black olives, right? It sounds yummy..I think I might try it with sliced zucchini or spiralled zucchini and the ingredients you mentioned there. You could marinate it all day..Yummy..

Carolyn~yes, the sun dried tomatoes are sliced. I made it yesterday and it has been marinating. Can't wait to have some today. Zucchini would be a good addition.
