Oh, thanks so much, Kevin......for your explanation and pics (I had no idea what a dumpling squash even looked like)....Are they even lower in carbs than the delicata? So, primarily you use them as a mashed potato substitute? Are they sweetlike, or similar to the delicata?

For the most part all winter squash are in the the same carb range except for a few that are a bit higher. delicata and sweet dumpling are the same if I remember correctly. if you search for the winter squash thread there is alot more info there.

My grocery store has a bunch of the delicata squash right now and on sale. I bought 6 and got a small one to make these to try, actually can't wait to try it have been looking at this recipe for a while now.

Well I made them tonight and the dish looked beautiful! The taste on the other hand was just not for me. The squash was sweet and IMO doesn't belong in a savory dish. But that's just my personal taste preferences and nothing against the recipe!

I added some minced garlic, etc. and lots of salt/pepper and that helped, IMO

I have made the squash browns twice, so far. I prefer the delicata to the sweet dumpling. Don't forget a little bacon grease. Thanks, Kevin.

I second that! I made these this morning and while the kids turned up their noses I did get an "it's okay I guess" from one of them and my husband really liked them. As long as I can get a two out of four, it's something I'll make again. A new vegetable to add to our healthy lifestyle. Thanks!

I have been elected to try this recipe for our CSA, and I'm thinking of cooking half the way the recipe says, and shredding the other half. Thought that I'd first see if anyone had tried it.

I have been thinking about this quiestion wendy and since i never did try it I did thought I'd try something different for breakfast.

I had some spagetti squash left over from dinner last night so this morning i did spagetti squash browns. They were very very good.
