Yes! I reheat mine in toaster oven on toast setting and eat with breakfast- it's my "toast"- also have added a slice of cheese for "cheese toast".

I never realized that Latke's was just another name for potato pancakes. (I just found out this weekend there are som very different variations to potato pancakes too. The kind I grew up eatting was made very similar to this - with potatos of course.)[/COLOR]

My understanding is a latke is any variation of a savory vegetable based pancake. Whatever you choose as the glue to hold them together is pretty much up to the individual. As I was growing up we had zucchini fritters(what my mother called them) with flour and parmesan like the recipe for zucchini corn cakes I bumped at the same time as I did this one. Bottom line is there is no wrong way to make a latke unless you leave out the veggies....

Delicata Latke's

I made up this batter last night and let it chill overnight so it would be ready for breakfast. These really remind me of the taste of potato pancakes.



Delicata Latke's:

1/2 small Delicata squash (finely shredded 140 g. approx. 2 cups)
2 whole green onions(thinly sliced)
2 large eggs
1 cup fresh finely grated parmesan cheese
1 T. LC Mayo, rounded
1/4 cup LC cake and cookie flour mix
salt and pepper to taste

Mix all ingredients and salt and pepper to taste.
Pan fry in a buttered non stick skillet on medium heat till both side of a 3 inch Latke is golden brown.

Makes approx 12 - 3 inch Latkes.
