Just curious.........does anyone but me have trouble with the isomalt syrup re-crystallizing?

Yes. But it's not a problem (as I see it). I think I even read about it somewhere.

You just melt it in the microwave, and it re-syrup-izes and then use it.

So I just keep it in the fridge, all crystalized. NBD

Okay! Thank you both! I wasn't sure if it would still be useable.....the original recipe made WAY more than needed for one pie........

yep, exactly the situation I was in

I've found other uses for it though.. anytime you need corn syrup, I just use that mixture and it works

I only make as much syrup as I need for the pie.

I use 1 cup Isomalt and 1/3 cup DaVinci caramel and almond mixed.

I'd look up regular pumpkin pie and see at what point you could freeze that... probably once it's baked? It's a bit liquidy before.
Using the isomalt is basically just like sugar, in this recipe, so I don't see a huge difference between this and a "normal" pie.
