What are you eating?

I would like to start a menu of what we are eating each day. I think we can help each of us by seeing our routine and inspire those who have reached the end of eating eggs and meat. Here I go:

Breakfast: 2 eggs w/ wedge of laughing cow

Lunch: Crockpot Chicken Breast w/ Chili Paste

Snack: Mozz Stick

Dinner: Turkey Burger w/ small salad and vinegar dressing

Snack: sf Jello or Broth

I hope we can all do this to get a snapshot of our day!

Thanks
Cathy

So I'm new this morning to the site but not to low carb but I've been stuck. I don't eat enough so I figured I'd write it down

1/2 cup low carb milk
8 almonds
a little added water

Sunday

It's Sunday!

B: Canadian bacon fried egg
L: hamburger grilled
D: crock pot turkey meatballs in LC BBQ sauce
S: Jello SF/ Mozz Stick

Lots of Water

I always make a big breakfast for my family. I was able to make pancakes, cinnamon rolls and hash browns. I really found it tricky but, after 2 bites of Canadian bacon I pushed on. I made the breakfast and all were satisfied...

Here's my average day:

B: a MWL shake (just found that Stop & Shop shakes have 2 carbs, so I'm trying it next)
Snack: 1 hard boiled egg or LF cheese stick
L: Grilled or baked salmon
D: Grilled or baked fish, green salad w/ a little Ranch dressing

Drinking lots of water, 1 coffee with H&H in the morning, and Powerade Zero

I ran out of SF Jello, but I just got some more. Yay! Who knew I'd grow to look forward to it?!

My usual favorites are:
B: 3 egg whites/2 slices thin turkey bacon

L: lettuce wraps. I vary between "cheeseburger"(super lean 96%ground beef), ground turkey with taco seasoning, and the original recipe listed on the medi site with the ginger-but I use ground turkey in place of whatever they used.

Snack: either a string cheese or cocoa roasted almonds.

D: my new favorite is a recipe of chicken coated in a mixture of good seasons salad dressing mix and grated parmesean cheese. Baked.

Ooh...one more favorite lettuce wrap: shredded chicken with 2 tbs fresh tomato salsa (no corn or beans!) and 1/4 avocado. Mmm.

lesliedabbs !

A fellow beef eater !
I've gone to one of our local BarBQ places and bought only brisket to have for dinner. A pound is good for 4 dinners or 3 if I'm hungry for a beef snack, too.

Many times I have thought about going to Los Cucos and getting a pound of their beef fajita meat......Oh my, that for Brkfst with some cheese melted on top.....Heaven

Sometimes I get one of those whole roasted chickens at HEB.
I like the lemon pepper one....That's good for several meals, too.

My typical day:

B : 2 eggs scrambled with some cheese melted on top, or 2 eggs over easy (I detest using egg whites). Sometimes I add a few strips of real bacon and save them for last.

L : Usually a cheese stick and one of Medi's protein drinks.

D : One of the meats I mentioned at the top, or shrimp, or a hamburger pattie with cheese melted...ocassionally broiled sausage. My veggie that I did really well with the first time around was fresh brussels sprouts. They stink up the kitchen but I like them and they're nutrient rich.

I avoid aspartame so I can't use the sugar free jello.....ALL the brands use aspartame !....Just p*sses me off......
Sometimes I'll eat strawberries with Truvia sprinkled on them.

I used to drink these before I dropped aspartame years ago.
Weigh out 8 oz. of Frozen strawberries and put them in a blender with a can -of diet 7Up or diet Sprite. You can add a little vanilla and almond extract and a spoonful of nonfat dry milk.
This makes a Huge sort of strawberry Icee drink !

I need to find a lemon/lime soda sweetened with splenda cause I Miss those !
