I stay away from soy since it's a phytoestrogen. It's in everything, so it's difficult.
In the past, I liked to eat it in stir frys or miso soup. Just cut it up (the firmer stuff) and add to the recipe. I also used the soy taco meat for taco type dishes and it wasn't terrible.
