Slow Cooker?

Hey all...I'm looking for some crock pot/slow cooker recipes for the acute phase. I have found lots of recipes for the acute phase in that thread, but not necessarily crock pot ones. I'm really busy during the week and that would be really helpful! Thanks!!

I use my slow-cooker all the time....

Chicken breasts with fresh salsa (I know to salsa can be high in carbs due to the tomatoes, I just used it as a cooking liquid basically) sometimes I would throw in peppers/onions/jalape˝os in too. When I eat this I usually melt a little rf shredded cheese on the chicken too.

Chicken breasts with chicken broth and whatever veggies on hand

Chicken breasts or boneless pork chops with a jar of low-carb pasta sauce

Try a pot roast or any leaner beef roast or cut (3-4 lb.) with a cup of pepperoncini with the juice. (I usually end up using a whole jar just because there isn't that much more left.). It is super simple and delicious when it is shredded up. My family eats it on toasted rolls with provolone. I eat it as is. It is not really that spicy unless you eat the peppers along with. Personally I like the peppers.

My crock pot is getting lonely, too. I'll be subscribing to this thread for more ideas.
I like the chicken and salsa idea.

I put chicken breasts in the crockpot with some salsa or rotel. Let it cook all day, and shredd. Once shredded, add in the new Philadelphia Cooking Creme - Sante Fe flavor. I add this as a filling to tortillas and cover with some shredded cheese and bake in the oven for a few minutes for Chicken enchiladas for the family. I skip the tortillas and just eat the filling with a little cheese sprinkled on top. It is excellent and a great way to feed the entire family and modify for youself. I ran it through the recipe calculator and it is 291 calories and 7 carbs.

Oooh....lots of great ideas, thanks!!! When not adding extra liquids besides salsa/etc, how long do you cook for? I leave early and get home around 5pm so I'm usually setting it by 7am...sometimes I can set it later when my husband is home later in the mornings...
