Idea for alternative to bread crumbs...
I am craving a salmon patty for dinner. I am wondering if anyone has tried this:
Using crushed almonds (about 6-7 nuts) instead of bread crumbs. Egg beaters for the egg. Fat free miracle whip And of course the salmon Would the crushed almonds work as a substitute for the usual bread crumbs or cracker crumbs? |

Finely ground almonds or almond flour would be medi compliant. Pork rinds not so much.

Surprisingly, pork rinds are listed on the Medi Week 3 Survival Guide under the "Need a Quick Snack in a Hurry?" section - 1/2 oz of pork rinds is only 80 calories, 5 grams of fat and 0 grams of carbs.

Yep pork rinds are compliant. They're gross by themselves though. I tried. Really I did. Lol

Oh boy, I love spicy chicharrones!!! That would be awesome binding material for salmon patties!

I agree with McBoo. There are better alternatives like almond flour and if your can find it coconut flour. Almond fiour works well for many things. Coconut flour also although it is far harder to find.
I think you will find - when you weigh out 1/2 oz of the pork rinds - that there may not be enough for the purpose you want to use them for. JMHO Jo |

I second the almond flour. I use that fairly often and it works great! Hope your dinner turns out great!

When cooking with almond flour, can you pretty much substitute it for regular flour? I'll have to do some research. And what about soy flour? Good?

I used crushed almonds (14 nuts) and it was really good. I think I have a winner here folks. :)
