How are the pancakes? I'm STARTING to miss them for some reason, and haven't found a LC recipe yet that actually tastes like pancakes! Have you ever made pancakes using DIET 7-UP in place of other fluid in the recipe? I've made "regular" pancakes with 7-UP for almost 40 years.....makes them very light, with a VERY SLIGHT 7-UP flavor. My Father In Law was convinced that this was the only way he could eat pancakes, and that made any other way he'd "get sick"!! |

Yup you can use any recipe, or even a mix, just replace all the liquid with whatever soda you want. When the kids were little we made them with RootBeer, Strawberry, or Grape Soda. I think I've even seen them with seltzer. I've also used the flavored fizzy waters from Walmart

Oh YES, I've used DIET for years since my kids got older and no longer wanted "pink or purple pancakes". I think I said Diet 7-Up in the first post, but forgot to say diet in the last one. The flavored waters are flavors like "peach Melba" or "Fuji Apple pear" or "key lime". They are carbonated, but have no calories, caffeine, or sodium, so they're more like a diet soda than plain water.

I use eggbeater eggwhites, I pick them up at BJ's in a 4pack. I just put them in a bowl and shred up a veggie slice of cheese and microwave for 2 mins and they come out puffy w/ the melted veggie cheese 60 cals for eggwhites and 40cals for the cheese. I found egg whites boring until I found out about the veggie cheese in the fruit and veggie section in the market. You could also try some salsa in the eggwhites for falvor, it too is good and helps the eggwhites. Hope this helps. It is hard to find a good breakfast. If anyone else has other ideas for breakfast that would be great. What is your favorite one Deb? Cathy |

Hi Cathy and Mary,
Thanks! Typically I have a Krogers carbmasters yogurt (60 calories, 1.5 g fat, 4 g carb, 8 g protein), OR 1/2 cup low fat cottage cheese (90 calories, 2.5 g fat, 4 g carb, 14 g protein), OR an Ostrim (beef and ostrich snack--I get these at a health food store, a little pricey but very good) (80 calories, 1.5 g fat, 2 g carb, 14 g protein), OR a scoop of Jay Robb (whey) protein powder with diet Dr Pepper (thanks Mary!) I know that egg whites may have less carbs that what I've described above, but I just don't like 'em that much, I think its the puffy/chewy texture! I can eat regular eggs....but not every day. I'll try what you mentioned! Mary, I'm curious about the one minute muffin made into pancakes....did I miss that recipe? Debbie 7/6/11 B - carbmasters yogurt S - MWL PB protein bar L - 1 cup watermelon and 1 low-fat string cheese S - EAS carb control shake D - 97% FF hamburger made into pasta-free lasagna. Instead I sliced up zucchini and added spinach, Italian diced tomatoes, Ragu 3 cheese sauce, parmesan and cheddar cheese Exercise: bicycled 2 miles; went up and down stadium steps 10 times; one hour of swimming (mainly kicking in various swim styles) while holding onto styrofoam board against water resistance; hula hooped for 10 mins; arm exercises for 5 to 10 minutes. 7/7/11 B - carbmasters yogurt L - 97% FF Hebrew beef hot dogs, 2 Tbsp saurkraut, decaf chai tea S - 1 light string cheese, EAS shake D - 3 oz chicken mixed with a little onion and curry sauce, 1/4 sunflower seeds Exercise: none today because seem to be starting with a sinus infection (ugh!)

Deb and Cathy.....Good Morning!
Deb, I posted the recipe for the OMM on the July thread asking for someone (anyone) going to their clinic to print it out (with the nutritional info) and ask IF it is OK on Acute Medi.....I'm SURE it's fine for Maintenance. I have made adjustments to make it Medi friendly. My only thought is that someone in Acute MIGHT want to have the OMM instead of nuts that day! I have to say that the OMM is VERY filling, so Bill and I have split what would be 1 muffin, and have been satisfied with it along with a protein. For the pancakes the only addition was the diet soda (I used diet 7-UP TYPE soda......store brand) to thin it to the consistency I like for pancakes. one recipe made 4 pancakes about 4 inches across (I'm guessing here). Someone on the LCF Main board suggests using different shaped and sized containers to "nuke" the OMM in to get the size/shape you need to make "bread" shapes......there are LOTS of variations (pumpkin, chocolate, savory, with Almond flour , etc) of the recipe there or you can just do a goole search, and they pop up. Even the Spark People website has it (as well as the one with my changes to make it Medi friendly) Last night I made the OMM again. Only this time I didn't add the cinnamon, and only put about 1/2 packet of Splenda. When it was done (I made it in a larger glass measuring cup so it was bigger around, and not as thick) then I sliced it in half (horizontally) to make 2 round pieces of "bread". I toasted them and made a GREAT turkey sandwich Deb, Have you tried mixing the egg whites with the regular eggbeaters? I've done that some. More often I was mixing the eggwhites, with 1 real egg, then we would split the "omlet" if I added meat, but sometimes I'd just eat it by myself (Bill isn't an egg fan) I agree with Cathy about putting salsa on it. I make salsa, pico de gallo, and Bill makes a killer salsa verde with tomatillos so we always have a choice! Cathy I finally tried the PB2 in the Greek yogurt, and it's GREAT! I saw you had added chocolate to it too, so yesterday I added PB2, and SF choc. syrup, and liquid Splenda.......OMG I LOVE it! NOW I'll have to look for the Veggie Cheese. We don't have an Krogers here either.....I've heard so many good things about their yogurt, I sure wish we could get it too! Last edited by Mary T8M; 07-08-2011 at 07:04 AM.. |

Cathy and Mary - Thanks for all the info! Cathy, the carbmasters yogurt is a store brand (Kroger) and I'm so thankful for it. Perhaps you can google Kroger and find locations, I don't know. The store is known by different names in different states. Here in KS it's Dillons, my sister works at Kroger in Arkansas, and I think there are at least 8 other names. I wonder if you can order it online from the warehouse? In the winter I like to have the vanilla carbmasters with LOTS of cinnamon. Right now I like the tropical fruit flavor, the cherry flavor, the raspberry flavor, and the strawberry with banana flavor. My MWL dr is the one that told me about them to begin with.
Congratulations Mary on jogging for 25 minutes!! I'm so proud of your progress!! I jogged this AM for the first time in a long time. I had to jog about a minute then walk for 15 to 30 seconds for the 2 1/4 miles, outdoors. BTW, since you are in FL have you been watching the trial? I'm so disappointed in the outcome. I'm glad the OK woman is introducing the idea of a new law! |
