D - Almond-crusted sole microwaved, miracle noodles (250 cal)
After gym treat (too much) - Charlene's protein pudding 90 cal
1 oopsie - 20 cal, 1 coconut flour micro-muffin (20 cal)
Coca roasted almonds (1 pack - 100)

730 cal (too much, wanted to stay at 500, could not stop)

Calories OUT:
30 min eliptical, 30 min bike, high intensity - around 550 cal

Hi Irina - YUM those sound good! Could you share how you make almond meal pancakes and coconut flour micro-muffins? Since I'm trying to stay away from "white" simple carbs per studying diabetes/insulin resistance, it would be wonderful to have something that has protein instead (and my allergist wanted me to try to stay away from whey/milk protein as it can thicken sinus secretions). THANK YOU! I look forward to hearing about those recipes, just whenever you have the time

Also, don't be down on yourself for 730 cal in when you had 550 cal out! You need some more in just so your body doesn't go into starvation mode and not let you lose, right? Though you're at goal, you still want to be giving your muscles and body what it needs to work for you.

S - 2 cups of apple cider herb tea (no calories), added 1 pkg Sun Crystals each (stevia/sugar mix) for 5 calories per cup

Exercise - none

10-23-10 Woke this AM 2 lbs lighter just from drinking SO much water and cutting crbs down to less than 40 yesterday.

Almond meal pancake:

Mr. Breakfast's Low-Carb Pancakes (Almond Flour)

(2 servings) Printable Version


1/2 cup almond flour
1 packet sugar substitute
2 eggs -- beaten ( I use 1/2 cup egg beaters instead)
1/3 cup seltzer water
1 Tablespoon heavy cream (I use unsweeted Vanilla Almond Breeze)
1/4 teaspoon salt
dash of cinnamon
Simply combine all ingredients and cook on a hot, lightly greased griddle or skillet. Serve with sugar free syrups, or cool a bit and use as "bread" with low-carb spreads. (If using with non-sweet toppings, leave out sweetener and cinnamon.)

Coconut-flour micro-muffins (actually my own creation) -


These delicious little muffins are made in mini-muffin cups.
Ingredients

¼ cup sifted TIANA coconut flour
3 tablespoons FF Promise butter spread
3 eggs
1 tablespoon Walden farms pancake syrup
¼ teaspoon salt
¼ teaspoon vanilla
¼ teaspoon baking powder
Method

Blend together butter spread, eggs, syrup, salt and vanilla. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Pour batter into greased muffin cups. Bake at 205 Degree C (400F) for 15 minutes. You can serve topped with fresh strawberries and whipped cream. Makes 12 or more muffins.

Thanks so much, sounds delish! So, do you mainly count them as protein because of the eggs? Or do you know the statistics on these? Yum!

I calculated the nutritional info for 1 mini-muffin

Calories 20

Fat 1.5 g
Protein 2 g
Total Carbs 1.5
Net carbs 0.4
Sodium 186

So I count them as protein calories

i have been on a mini vacation for my anniversay the past four days and managed to do well every day except today. we got back into town and my son was at preschool, so my husband and i have time to ourselves locally. we went bowling in the late morning for two hours...fine. we decided on a sushi place for lunch and i was ok with that because i felt like i should splurge a little on my anniversary vacation. i had a bowl of miso soup.....fine....some edamame....fine....cucumber salad.....also fine......four pieces of vegetable tempura....not so fine but not terrible. felt puffy from the grease and sodium but whatever, it was my splurge. well, i felt like it would be a terrific idea to buy a halloween cookie making kit to make with my son tonight. it WAS a terrific idea. he loved it and had lots of fun. i, however, ate two cookies and LOTS AND LOTS of dough. So much that i felt ill. i don't know what got into me. what's worse is that i made myself so sick that i couldn't work out for fear of vomiting. ugh.

S - planned to have 2 containers SF jello, I've had in refrig for 3 wks....errhh...NOT diet after all, but ate them anyway. Then had to go to store to get a few things, at M&M pretzels just to try them (don't care for them so much), so then ate about 1/4 box of triscuits/garlic flavored -- WHY?? I wasn't really hungry....I think I was anxious about something.

Then the munchiness hit and I had some carrots. Then a few Pringles. Then a handful of Fishies. Then some sunflower seeds. Then an apple and some (a lot) of peanut butter. Then I don't even remember. I went to bed.

It's 3:00 a.m. and I'm up for my usual hour or so in the middle of the nite and just want to knock myself in the head. My next appointment is Wednesday. I know my weight will be up, but at least I can talk to them about it.

30 minute run/walk on the treadmill.

I have to post for the accountability. I may even start posting by meal!

L - turky mini pepperonis and cheese, salad, strawberries, jello, hebrew national hot dog. (I hate it when it takes up two lines to tell you what all I ate)

Calorie total is about 500. I'm going to go DO SOMETHING productive while my tummy settles, then I'm either taking the dog on a run or getting on the bike. I'll post more later!

L - 2 chicken legs
D - 1 1/2 chicken sausages, 1/2 c sauerkraut
S - 2 oz jalopeno cheese

Total calories in about 660 plus whatever it is for the walnuts (didn't look up yet); carbs without walnuts was 39. Didn't get all my water in today. Will catch up with that tomorrow, exercise too.

haha, well, if you're refering to the clothing size of it, it's a medium. I have a feeling that's not what you meant though. it's called "dirty cop" so the actual size of it is small....to me anyway. It covers everything but won't look so hot if i eat too much today or tomorrow morning.

Exercise - bicycled 2 1/4 miles on "hilly" terrain, in the wind -- my quads are feeling it!

D - had only chicken breast and wing, no cheese
S - did not have carbmaster's yogurt; instead I roasted 1/2 c slivered almonds on aluminum foil in oven; had sprayed them with fake butter spray and topped with sprinkles of cinnamon and Splenda - nice Fall treat without the extra sugar calories

10-30-10 Since 143 weigh-in 10-28 I'm down almost 4 lbs, today scales show 139.2
B - Pure Protein Peanut Butter bar
L - chicken sausage w/ sauerkraut, diet Sprite

10-31-10 This am 137.8 lbs on scales, Woot!
B - greek yogurt, fresh pineapple, 1/4 banana
L - Taco Bell beef tacquito w/guacamole, soft taco supreme
S - 8 small pcs sugarfree (Malitol) Truffles
D - 2 chicken thighs, pepperjack and cheddar cheese
S - SF jello, celery, 1 tsp peanut butter, craisins, 2 Tootsie rolls

Oh no! It's after 9pm and no more kids at the door. Gonna put the rest of the candy in a bag in DH's car now so he can take it to work!

b-the usual greek yogurt with fiber one yogurt mixed in, almonds
s-pistachios, 1/2 banana, gel snack
l-tofurky with mustard, a little cottage cheese, 1/2 apple
s-pb
d-grilled cheese sandwich, so good...made with light flatout wrap, fat free cheddar and ff mozz and a little tomato and pan "fried" with ff spray butter
exercise- i've been slacking due to hectic schedule, 30 minutes worth of "floor exercises" on lunch break at work. thank goodness for exercise tvs online videos! I'll be back on my "real" exercise tonight!
