Recipe Snapshots
If you're like me, you have read the recipe threads and gotten excited about making the healthy, Medi-approved recipes listed. I thought it would be a good idea if we all shared photos of the recipes in a thread. I know that I love to look at photos of yummy dishes when I make them - I also love to flip through cookbooks when I'm trying to decide what recipes to make. Hopefully this thread can serve as our visual recipe list - and can show people that those of us on the Medi plan can and do eat wonderful, delicious, and HEALTHY foods!
If you take photos of a recipe that is listed in the threads, please refer people to the thread and the post number so we can easily reference that post! You can also post the recipe inside this thread if you prefer, but please give credit to the original poster AND be sure to post all recipes into the appropriate threads. Other posters have worked really hard to keep this board well organized, and we certainly want to respect that! Also, PLEASE don't comment in this thread - let's leave it for the photos. This is the very FIRST "Medi" recipe I've ever made! I was so excited about it and thrilled to see how EASY it was!
Post #18 in the Medi-Friendly Recipes – Desserts thread MEDI GUMMIES! 5 envelopes of the unflavored gelatin 1 crystal light package 1/2 cup of very cold water In 1/2 cup of very cold water, add slowy the 5 packages of unflavored gelatin, then add the crytal light OR 1 envelope of sugar free Jell-O (if you add the Jell-O, you can use 4 envelopes of unflavored gelatin, or add more water). Mix everything very well, it is going to be like a paste. Place the container in the microwave and cook in high for 1:30 minutes, or until you can see the foam raising. In a flat glass container, pour the gelatin and spread it even. Place in the frezeer for 15 minutes, transfer to the fridge for another 15 minutes. Then, take the container out of the fridge, remove the harded gelatin and cut it in cubes, stripes or whatever form you like. You can prepare different flavors and after being the first flavor in the frezeer for 15 minutes, add the second layer and return it to the freezer for another 15 minutes. You can add as many flavors as you like. Then, you will have a multicolor gummy. After you cut the gelatin, place the gummies in a air-tight container. You do not need to store them in the fridge, but be sure to store them in a cool place. It was so easy and I ended up with 12 snack sized bags full! I'm thrilled with the way they turned out and plan to experiment with different shapes and flavors next time! Jennifer, those look incredible!! I tried to make them and they had the consistency of my tires!
I wonder if I did something wrong? are yours soft like gummy bears? Mine were (as i mentioned!) super tough and didn't taste like gummy bears at all. Tell me what you did once you refrigerated them, did you take them out? I kept mine in the fridge and they weren't air-sealed, I wonder if that's why they were so .LOVING your pictures, that is inspiring me to want to try them again if you can tell me yours taste as good as they look!

Hey Danika! Mine are almost exactly like gummy bears, but I would say they are a tad bit LESS chewy (mainly because I sliced them pretty thin). Once I microwaved the paste, I poured it into the glass pan and FROZE it for 15 minutes. Then made the next batch, microwaved it and poured it right on top of the frozen layer. Then I popped it back into the freezer. Once all of my layers were finished and the last layer came out of the freezer, I put it into the fridge for 15 minutes. Then I sliced it. I've got mine inside the snack bags inside the fridge and I just grab one when I want it! According to my clinic I don't even have to count these in my daily counts! YAY!

Chicken & Veggie Stir-Fry **this made enough for 2 portions - double as needed Ingredients 1 Tyson Teriyaki Grilled Glazed Chicken Breast 1 cup of Birds Eye Frozen Stir-Fry veggies 1 Tbsp EVOO (or Pam Spray) 1 tsp of Lite Soy Sauce Asian seasoning (to taste) Prep (it's so simple) Cook the chicken breast on the grill or George Foreman Pour the Olive Oil into the wok, add the Soy Sauce - let it heat up for 1 minute Measure and pour the veggies into the wok (I removed the carrots from my portion) Add seasoning Stir-fry for 3-4 minutes until complete Add the chicken to the veggies and ENJOY! Nutritional Info per serving Calories 165 Fat 3.5g Cholesterol 30mg Sodium 615mg Carbs 7.5g Sugar 4g Fiber 1g Protein 11g I made this for dinner last night and will have portion #2 for lunch today! Also a question or two on the chicken recipe. Here is what I found on the Daily Plate for two of your key elements: Tyson Teriyaki Grilled Chicken Breast Nutrition Facts Serving Size: 1 piece (3.1 oz) Amount per Serving Calories 170 Calories from Fat 0 % Daily Value * Total Fat 7g 11% Saturated Fat 1.5g 8% Monounsaturated Fat 2g * Polyunsaturated Fat 0.5g * Cholesterol 60mg 20% Sodium 620mg 26% Total Carbohydrate 7g 2% Dietary Fiber 0g 0% Sugars 4g Protein 20g 40% Not sure if this is the frozen veg you used though: Birds Eye® Oriental Stir-Fry Frozen Vegetables:Serving Size 1 cup (106g) Per Servings Calories 50 Total Fat 0g Sat Fat 0g Cholesterol 0mg Sodium300mg Carbs9g Sugars5g Fiber 2g Protein 2g These numbers are at variance with those you posted for a serving. If you are posting a recipe for the first time please post with pictures in the appropriate recipe thread. We do not need to post it here and there. JMHO, but this should be for recipes that have been already posted, but not previously pictured. Otherwise we will have duplicate threads. |

Jo, I did include the nutritional info for the berries in my total, but here they are seperately: 1 serving = 1 cup (I used 1/2 a cup) 70 Calories 0 Fat 0 Chol. 0 Sodium 17 Carbs 4g Fiber 9g Sugar 2g Protein.
The veggies I used are the Birds Eye Sugar Snap Stir Fry. Try that on the Daily Plate and you should get the numbers I got. Also, don't forget that I had 2 servings from 1 chicken breast and 1 cup (frozen) of veggies! Susie, I see what you are saying. Consider it done!!! ![]() I omitted the crust because I've never been a crust fan, but I used the rest of Susie's recipe. DELICIOUS! I did top each with a tsp of SF Chocolate, but it's not necessary. Then I chopped up 1/4 of a strawberry to add some flavor to the top. I think next time I make it, I'll skip the chocolate and go straight for the fruit or fruit preserves. I made more recipes over the weekend and last night!
This is the Hungry Girl So Fancy Foil-wrapped Tilapia - Post #38 from the Medi-Friendly Recipes - Dinner thread! ![]() I'm not a fish person, but I tried it and it was better than I expected. This was my first time ever cooking fish, so you KNOW it had to be easy!!! My husband and son LOVED it, so it must have been good. And the Brummel & Brown spread is SO GOOD!!! Sorry for the poor photo - I had already started plating and I thought "OH NO! I need to take a photo!" so I grabbed the camera and snapped a quick photo!!! |

Last night I decided to start playing around with a way to make something with these delicious fall apples, so I made Susie's Baked Apple! OMGoshhhhhhh it was soooooo incredibly good! I honestly felt like I shouldn't eat it - it was that good!
I actually used Susie's recipe, but Jo's prep because I wanted to keep the skin on and slice it into small pieces. I also substituted 1 tsp of Splenda Brown Sugar for the Truvia and then put it on the stove in a small saucepan and let it all carmelize. It was heaven - LITERALLY! Find it in the Medi-Friendly Recipes - Desserts thread - post #10! This is on the stove: ![]() And this is how I ate it. I'm not in love with Cool Whip, so I just left it off. It really didn't need another thing! I could have lived inside this bowl, happily ever after. It's definitely a treat - not for everyday! ![]() |
