MY Medi Friendly SPICY chili (no beans)
Ingredients
8 oz of cooked 93% lean ground beef (weighed after cooking) 1 can Ro Tel tomatoes original (10oz size) for less spice use regular diced tomatoes 1 can (8oz) tomato sauce 8 oz water salt and pepper to taste 1 TBL Penzeys ground cumin (or more if you want) 2 tsp Penzeys chili powder (make it as hot as you want) 1 TBL Penzeys chipotle powder (a nice smoky flavor) 1/4 C chopped onion combine all ingredients and cook over medium heat for at least 30 min Directions pre cook ground beef.....I boil mine. drain, then add everything to a medium sized pot and cook over medium heat for at least 30 minutes. Hungry Girl Reuben-esque Cabbage Wraps recipe #422
INGREDIENTS
1 Head Green Cabbage (you won't use it all) You only use 4 outer leaves 4 Slices Reduced Fat Swiss Cheese 1/4 C FF Thousand Island Dressing 1/2 C Sauerkraut DRAINED(I did not use) 8 oz Sliced Turkey Pastrami (about 24 slices) Gently remove 4 outer leaves from the head of cabbage Wash then place in microwave and cook for a minute at a time, until the leaves are soft enough to fold (DO NOT OVERCOOK) Another option is to core the whole head of cabbage, and cook the whole head in the microwave until the outer leaves soften. Dry off the Cabbage leaves if necessary. Place 1 slice of cheese in the middle of each leaf Top each piece of cheese with 1 Tablespoon of Dressing Then add 2 Tablespoons of Sauerkraut Finally add 2 ounces of Turkey Pastrami (about 6 slices) Wrap up burito style around the filling, and place seam side down, and microwave if you prefer your "Reuben" hot PER serving (1 wrap) 160 calories 6.5 G Fat 9.5 G Carbs 1.5 G Fiber 5 G Sugar 17 G Protein Last edited by Mary T8M; 08-11-2011 at 02:06 PM.. |

Turkey Rollups
I listed this under lunch recipes but what I really love is I can make them early in the day and keep them in the fridge and eat them at any time. Besides being delish they really satisfy my urge for finger food and crunchy food. The ranch dressing I used is regular ranch because I personally don't care for any of the reduced or fat free varieties that are available. The fat, calories and carbs are acceptable to me because of the very small amount used but if you want by just substitute what you use ar leave it off altogether. 4 oz. Boar's Head Ovengold low sodium turkey sliced thin but not shaved 1/4c. cabbage slaw mix 1 Tbl. Ranch dressing ( I used a generic brand) On each turkey slice sprinkle some slaw mix and dribble with the ranch dressing. The amounts vary on the # of slices (thickness) of turkey. Then cover and store in fridge. The longer it sets the better it gets in my opinion, the ranch dressing seems to blend throughout the rollup regardless of the small amount used. I make this in the morning on my house cleaning day and literally ate it until 4pm and was full. I am looking forward to experimenting with different seasoned turkey breast, (ie cajun or jerk) and I want to try it with sliced chicken, shredded lettice and a sprinkle of Parmesan cheese. Calories 266 Carbs 4 Fat 11 Protein 27
