Anyone have any good recipes that use chicken and coconut milk? Maybe a little PB2 thrown in there? I have never cooked Thai and perhaps that is what I am looking for. Any vegetable accompaniment suggestions?

I feel that today is going to be a day that I'm not going to stick to the plan to a tee. Already for lunch I had 3 Chick-Fil-a strips. I've been invited out for drinks after work and really want to go....just to get out. The plan is to have one drink made with a diet drink and one ounce of alcohol. Then maybe a salad with a small amt of dressing or plain wingettes. I'm in week 2 after restarting and didn't run across an obstacle like this before.
I hate not to go since I was invited. Any input would be appreciated!1Karen |

Medi Weight Loss - Week 1
Here are my key stats after visiting my local Medi Weight Loss Clinic on Thursday January 26th
Gender: Male Age: 37 Height: 5 ft. 11.5 inches Weight: 283.0 lbs BMI 39.5 Fat %: 40.3% Fat Mass: 114.01lb FFM: 169.01lb TBW: 123.51lb I started on Friday January 27th (Acute Phase) and was given a daily caloric intake of 700-800 calories per day. I weighed myself this morning Saturday January 28th and I was already down to 276.2 lbs. Is that healthy or okay? Just wondering if anyone else on here has had a similar Day 1 to Day 2 weight loss. Thanks. |

Green Tea
My new favorite 1 scoop Vanilla 1 low carb yogurt 8 oz water (0r could use almond milk) 2 teaspoons matcha (green tea powder) Calories 155 carbs 6 Hi City-gal, I was reading post #30 and thought it sounded awesome. I have been looking for a place to buy matcha! Does anyone know where to buy it? |

Yesterday I got hubgry and tried Fruit Punch Crystal Light in plain fat free greek yogurt. Was nice and sweet. Almost like a fruity pudding!! Try it if you have a taste for something sweet!!!

Alternate for flavored coffee creamers
Hi, I really likemy coffee with flavored cream or 1/2 & 1/2. But the carbs are so high when you do four servings. Any suggestions on something I can have in place of high carb creams??

Hi, can anyone give me a suggestion to replace lard used in making tortillas to something healthier. Not sure why they call for lard unless it gives texture or body to the tortilla. I am making my own tortillas. Thanks Bob

I have no clue. Perhaps google it! If you find something you like, let us know here!! I like white corn tortillas that I buy at the store, they are small but 2 of them are a total of 16g carb.

Hello all,
Can any of you tell me if this is a Medi compliant recipe? I'm new, and I've been trying to tweak the normal family recipes to be low carb. The sauce from this is what I'm worried about, but I've tried to change it... Fettuccine Alfredo Sauce: 1 cup of Unsweetened Original Almond Breeze 1/2 cup of Land o Lakes Fat Free Half and Half 1/2 cup of water 1 cup of freshly grated Parmesan ( brand - the Kirkland Signature wedge from Costco) 5 garlic cloves, chopped (less or more to taste) Pinch of salt Pinch of pepper Assorted herbs and spices (optional, I used granulated garlic and dehydrated onion) 1/8 teaspoon Xanthan gum (to thicken, can be omitted) 1 tablespoon butter 5 ounces fat free cream cheese (brand - Walmart) Instructions: Place milk, cream cheese, xanthan gum, and spices in a bowl and blend with an immersion blender until smooth. In a non-stick sauce pan, melt butter on med-high heat and add garlic. Let the garlic saute for about 30 seconds, you don’t want to burn it. Then add milk mixture to the pan. Stir constantly for about 3 or 4 minutes or until it just comes to a simmer. Keep stirring and let it cook for a few minutes more. It should be much thicker now. When it’s nice and thickened remove the pan from the heat. Add the cheese, stir it up and then cover immediately. Let stand for at least 10 minutes before using. It will continue to thicken upon standing. Also, if you have leftovers in the fridge, the sauce will thicken almost into a solid. Just re-heat and add a little almond milk and it will be back to normal again. From my manual calculations using my exact ingredients' nutritional labels, I found that this recipe has 115 calories per 1/3 cup serving (80 calories for the half and half, 40 for the almond breeze, 100 for the butter, 320 for the parmesan, and 150 for the cream cheese) and ~ 3.8 net carbs (10 carbs for the cream cheese, 12 for the half and half, 1 for the almond milk and none for the butter or parmesan) Would this be ohkay with shiritaki noodles, grilled chicken, and veggies, for the Acute Phase of Medi? It actually tasted good, so I'm a bit suspicious xD Thanks! Gabby |
