Lets start a thread here for medi safe recipes. The recipes on this site are great but as most of you know they really don't fit with our WOE.

Fettuccine Hungry Girlfredo!

(40 Calories, 3g Fat, 242mg Sodium, 3g Carbs, 0g Fiber, <1g Sugars, 4g Protein = 1 Point!!!)
Ingredients:

1 Package Miracle Noodles
1/2 Wedge The Laughing Cow Light Cheese
1 teaspoon Fat Free Sour Cream
2 teaspoons Kraft Reduced Fat Parmesan Cheese
Salt & Pepper (if desired)

Rinse noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Add salt and pepper to taste. Enjoy. Serves 1.

Breadless Phili Cheesesteak

½ red or green bell pepper
½ cup sliced onions in rings
¼ cup sliced mushrooms
3 oz precooked lean beef, or chicken sliced in thin strips
sprinkle of Monterey Steak Seasoning
12 Kraft jalapeno slices
1 slice Veggie Slices Provalone Cheese


In a nonstick teflon pan sprayed with Pam, sautee peppers, onions and mushrooms until soft. Add thinly sliced strips of beef or chicken. Season lightly with Monterey Steak Seasoning. Once the meat is hot add jalapeno slices. Put it all on a microwaveable plate and cover with the provalone flavored veggie slices on top. Microwave on high for 30 seconds or until the cheese is melted. Enjoy!

Crustless Pepperoni Pizza


Sauce.........5 calories / 1 carb / 0 fat / 0 protein
Cheese......160 calories / 1 carb / 12 fat / 14 protein
Pepperoni...35 calories / 0 carbs / 2 fat / 9 protein

Totals........200 calories / 3.75 carbs / 26.5 fat / 20.75 protein

In a small Teflon skillet melt ½ cup mozzarella cheese until edges bottom is lightly browned (edges will be slightly brown). Spread 1 T of low sugar spaghetti sauce over the cheese. Add 9 turkey pepperoni slice over the sauce. Fold over like an omelette and serve.

You can add other veggie toppings once you are out of week 1.

Chicken and Spinach Soup

1 1/2 cup Tyson Chicken Breast, canned in water
1 tsp Mrs. Dash Lemon Pepper Seasoning
1 12 cup Fresh spinach leaves, chopped
32 oz. Swanson Less Sodium Chicken Broth

1. In a medium saucepan, mix the chicken broth, canned chicken, and lemon pepper seasoning together; bring to a boil.

2. Continue cooking for 2-3 minutes or until spinach is tender, stirring frequently.

3. Ladle one cup into four bowls. Allow to cool before serving.

Nutrition Facts - Serving Size 1 Cup
Calories - 110 Carbs - 5g
Fat - 3g Protein - 20 g

I copied the recipe verbatim, and it never actually tells you to add the spinach, but I assume you add it in step 1.

Bread and Butter Cucumbers

4 cups unpeeled cucumber
1 medium onion
1 ½ tsp salt

Cover and let stand in refrigerator for 3 hours. Drain and set aside in quart size plastic

Heat together:
Splenda or Truvia equivalent to ¾ c sugar
½ c vinegar
1 tsp celery seed
1 tsp mustard seed

While warm, pour over cucumbers and onions. Cover and refrigerate over night.

Low Carb Chili

Here are a couple of low carb Chili recipes that were posted and I copied into a word file. I believe they are from Kristy and McChestnut if my memory serves me. I made one of them and it was delicious, although I went out of ketosis. I think there was added sugar in the canned tomatoes I used. Didn't think to check the label.

Low Carb Chili with White Chicken Chili Mix

Cook up some ground turkey or chicken with some garlic, onion/scallion, peppers. Add some McCormick's white chicken chili mix and some chicken broth. (I frequently add in some diced canned tomatoes with green chiles too). You can get pretty inventive. Top if off with some LF sour cream and shredded cheese (small amt) and/or salsa.


Modified South Beach Chili

Combine...Ground Turkey...Low Sugar Tomato Sauce, Onions, Green Peppers, and chili mix. Top with 1/4c of low fat cheese. It taste yummy.

Low Carb Pudding

In blender combine fat-free/sugar-free pudding, substitute unsweetened almond breeze (original, vanilla or chocolate work) for the milk and one level teaspoon of guar gum per package of pudding and blend.

If you are making 2 packages of pudding at the same time use 1 container (32oz) of unsweetened almond breeze and 2 level teaspoons of guar gum. Let them set in fridge for at least 30 minutes to set. Make sure not to over do the guar gum. A little goes a long way.

If I can make a suggestion when making the pudding use either the unsweetened vanilla or chocolate flavor depending on the flavor pudding you are making. The unsweetened original is good but the other two are better. The unsweetened chocolate is great with any of the chocolate varieties and also the cheesecake variety. You can use either the unsweetened vanilla or unsweetened chocolate when making the banana creme flavor.

Frozen Chocolate Cheesecake Bites!

(2 Bites: 40 calories, 0g fat, 100mg sodium, 6.5g carbs, 0g fiber, 1g sugars, 2g protein = 1 Point!)

Meet our new favorite use for ice cube trays.

Ingredients:

3/4 cup Cool Whip Free
5 tbsp. fat-free cream cheese; softened
1 tbsp. SPLENDA, Granular
10 tsp. HERSHEY'S Sugar Free Syrup

Directions:

Using a fork, vigorously mix Cool Whip, cream cheese and Splenda until smooth and well blended. Evenly distribute mixture into 10 sections of an ice cube tray. Tap tray firmly on the counter a few times to get mixture to settle flat. Next, top each with a teaspoon of chocolate syrup. Tap tray again to settle. Place tray in freezer until Bites are solid -- at least 2 hours. Once frozen, Cheesecake Bites should pop out easily (if not, run the bottom of the tray under the faucet for a few seconds to loosen them). Makes 10 Bites!

Spicy Thai Chicken

Boneless Skinless Chicken Breast
Garlic Thai Chilli Paste
Sugar Free Davinci Gourmet Coconut Flavored Syrup
Walden Farms Peanut Spread (Or other medi legal peanut spread product)
College Inn Fat-Free/Low Sodium Chicken Broth

Coat skillet with butter flavored Pam and cook boneless skinless chicken breast over medium heat.

When chicken breast are thoroughly cooked remove from pan.
De-glaze pan with fat-free/low sodium chick broth.
Whisk in skillet 2 tablespoons of peanut spread, 1/2 cup davinci gourmet sugar free coconut syrup and garlic thai chilli paste to taste ( a little goes a long way very spicy).

Return chicken breast to skillet and turn a few times to coat chicken breast.

Plate chicken breast and either serve remainder of sauce over chicken or on the side. You can also use the sauce on your medi legal veggies.

Enjoy.

Chicken Piccata over Miracle Noodles

1 serving Michael Angelo's Chicken Piccata
1 pkg Miracle Noodles
Johnny's Garlic spread seasoning
1 tablespoons grated parmesian cheese

At BJ's I found in the frozen section a Chicken Piccata dish made by Michael Angelo's, which comes in 2 trays. It is a little high in fat, but you can see the garlic butter swimming in the bottom and avoid it. A 2/3 cup serving is only 5 carbs and it has wonderful artichokes, capers and tomatoes in it. I put a serving of this over the miracle noodles. It is delicious!

But here is how I prepare the noodles (which is great with or without the chicken piccata)... After soaking, draining, patting and heating the noodles in a skillet, I put them on a plate and spread them out. Then I spray them with butter spray and sprinkle with just a little bit of Johnny's Garlic spread seasoning ( 0 carbs), then top with 2 tablespoons of grated parmesian cheese. I put the chicken piccata on top of that. It tastes like something decadent that I might have ordered from an Italian restaurant.

Grilled Chicken Parmesean

Grill boneless/skinless chicken breast with some Italian seasonings/garlic while preheating oven to 350

Sautee mushrooms in Butter Spray Pam (or Olive Oil Pam) and McCormick Italian seasonings - set aside

When chicken is done, cover each with about 1/2 tbsp to 1 tbsp of sugar free spaghetti sauce, (I add 2-3 slices of turkey pepperoni for flavor), some of the sauteed mushrooms, sprinkle on some fat free mozzarella and some fat free parmesean / Season to taste with McCormick Italian Seasonings and Garlic

Bake 10-15 minutes (unitl cheese melts)

*Note - I actually slice the chicken breasts in half after cooking (making them less thick) before putting the ingredients on top. I toss back on the grill for a minute to finish off the bottom.

Grill hamburger (I use 96/4% that's 150 cal/ 4 oz) seasoned with McCormick Italian Seasoning and Garlic

Follow recipe for Grilled Chicken Parmesean above for the rest of the directions

My friend tried this and said it reminder her of a stromboli minus the crust

Grilled Chicken Ceasar in Mushrooms/ Onions

Sautee chunks of skinless chickn breast, onions & mushrooms in a covered wok (this creates a juice from the onions)

When chicken looks done, transfer everything to a frying pan in small amounts so you can fry up the ingredients (browns up the veggies and chicken)

Spray Olive Oil Pam on everything while it's cooking, season with McCormick Onion and Garlic flavors, squirt Ceasar Dressing salad spritzers onto everything a few times & stir (repeat this about 3-4 times) (the dressing gives the chicken a little bit of a tangy flavor but doesn't change the taste of mushrroms/onions)

Eggplant Parmesan

1 Large Eggplant
1 Jar Carb-Sense Vodka Pasta Sauce
2 cup fresh mushrooms sliced
crushed garlic
10-12 oz mozzarella cheese
1/3 c. parmesan cheese

Slice and peel Eggplant (1/4 \" slices)
Spray teflon pan with Pam and sauté eggplant on both sides until lightly browned. Sauté mushrooms with a little bit of crushed garlic until mushrooms are golden.


Spread thin layer of pasta sauce in bottom of 13\"x9\" baking pan and layer eggplant, mushrooms, sauce, mozzarella cheese, top last layer with parmesan then mozzarella.


Bake at 375 degrees for 30 minutes or until bubbly and cheese is melted and browning.

Great crustless spinach quiche perfect for the Acute Phase of the Medi-Weightloss Clinics® Program.

Ingredients
10 ounces of frozen chopped spinach
4 ounces of reduced fat cheddar cheese
1/2 tsp. of ground nutmeg
2 cups Egg Beaters®
1/4 cup chopped white onions
Directions
Allow the spinach to thaw and drain out the excess water.
Mix all the ingredients together in a bowl.
Use cooking spray to grease a muffin pan.
Pour the mixture in 1/2 cup portions into the muffin pan.
Bake at 350 degrees for 20 minutes.
Sprinkle with salt and pepper to taste.

Severing size 1/2 Cup
Fat 5g---Calories 110---Protein 12g---Dietary fiber-1g

I used a glass pie plate and cut into slices.
Don't try and use fresh spinach in this dish. Fresh is all I had on hand at the time and it was almost a disaster. Had to finsh off in the microwave and it just wasn't that great.

A juicy slow-cooked pork tenderloin meal perfect for the Acute Phase of the Medi-Weightloss Clinics® Program.

My friend did try this one and enjoyed it

Ingredients
2 pounds pork tenderloin
1 packet dry onion soup mix
1 cup water
3/4 cup red wine
3 Tbsp minced garlic
3 Tbsp Kikkoman® Lite Soy Sauce
1 tsp ground black pepper
Directions
Place the pork tenderloin in a crock pot and pour the contents of the soup packet on top.
Pour water, wine, and soy sauce over the top. Turn the pork to coat evenly.
Spread the garlic over the top of the pork and sprinkle with pepper.
Cover with lid and cook for 4 hours on low heat.
Serve with the cooked liquid on the side.

Egg and Canadian Bacon Casserole
2 cups Egg Beaters (yellow box, no yolk) [240 calories]
4 slices Jones Canadian Bacon [80 calories]
2 slices Sargento Reduced Fat Provolone Cheese [160 calories]
¾ teaspoon dry mustard
¼ teaspoon salt substitute
¼ teaspoon pepper
½ cup Kraft 2% Milk Sharp Cheddar shredded cheese [160 calories]

Preheat over to 350 degrees

Cut up Canadian bacon and provolone cheese into small pieces. Mix Egg Beaters, Canadian bacon, provolone cheese, dry mustard, salt substitute and pepper. Pour mixture into 9 x 9 casserole pan. Bake for 30 minutes. Sprinkle ½ of cheese on top and bake for additional 3 minutes (or until melted). Cut into 9 pieces.

**you can use any type of reduced calorie cheese or “breakfast” meat. Please keep in mind though that the calorie calculation below is based on the specific kinds I listed above. You may need to recalculate based on the calorie content in the specific ingredients you use.

Total calories: appox. 640
Servings: 9

Mushroom Caps (hollowed)

Hollow the mushroom caps and fill with cream cheese mixture (cream
cheese, 3/4 cup parmasean cheese, and 1/2 tsp.garlic salt - add more to taste)

Latte/Cafe con Leche

8 oz of Unsweetened Vanilla Almond Breeze
Splenda/Truvia to taste
Instant Decaf Coffee

Heat the Almond Breeze for a few minutes in the microwave.
Add the Splenda or Truvia and the Instant Decaf Coffee ( I double the required coffee because I like it strong like espresso)
Stir quickly, you should get a "little" froth.

I really miss my Cafe con Leche.............this is a nice substitute.
