Hello-
Hope everybody had a great week. I had a few rough spots...being stuck inside during the snowstorm Wednesday (with my 5 yr old and 3 yr old sons) was kind of tough. My appointment at the Staten Island center was cancelled, so I will have gone almost two weeks without being there. I think I eat out of habit more than hunger. Something I have to work on. I love reading all your posts. Seeing everyone's success and the helpful tips is amazingly helpful...so thanks! I came upon this website and didn't know if it's one that you all know about. There are some very good recipes using Miracle Noodles. I'm on my way to the Asian Market nearby to buy a pack to try. Have a great weekend! Robyn MiracleNoodle.com • View forum - Recipes |

Thanks for the advice about getting booster shots...my clinic is about 50 minutes away and they don't give free boosters. I think next month I will have to plan ahead and get the shot before.

Frozen Chocolate Cheesecake Bites
I made the frozen chocolate cheesecake bites last night and they were wonderful! I made them in a tray of 14 versus 10 as the recipe states and had 3 of them. They tasted a lot like cheesecake to me. I think they could be dangerous making them for one as I wanted more after I had my 3. Fortunately I had my family (4 of us) to help me get rid of them.
For dinner I made a skewer of filet mignon, red peppers, mushrooms and onions seasoned with worshester sauce and steak seasoning and cooked it on the grill. It was delicious. I had some of the noodles on the side. Tonight I am having mahi mahi marinated in a cilantro, lime and jalapeno vinegrette, which I will cook on the grill. I'm also going to grill some vegetables on the side mediteranian style. I can hardly wait. I think the secret to this plan is being adventurous with recipes and lots of variety. I don't feel like I am missing out a bit. Bon Apetite everyone! Susie |

Thanks for the inspiration and the great recipes, Susie!
I was wondering how the cheesecake was as I am making it this weekend too. I am also making AnneMe's chicken with the garlic, ginger and soy. I already have it marinating. This board is like going to a great restaurant as we can go through the posts and decide what we are having for dinner! Thanks everyone and hope all have a great weekend with few carbs and good protein! Susan |

cheesecake bites
Mine are in the freezer right now!
We are going to Nashville next weekend and have plans to eat at PF Changs - oh my!!! I just looked through all their dishes and saw some shocking numbers - no wonder we all have a weight problem. There are some dishes that have 1600 calories and some had over 150 grams of carbs. This should be illegal! No wonder that I am so thirsty the next day after eating there - my liver and kidneys are in shock. I think the Tuna and spinach will be our best bet. Thought those great lettuce wraps would be safe, but they are out of sight as well. Forget about them!!! Susan |

Kudos to you for checkig their menu first, before you got there and tried to decide on the fly. That is the right thing to do. Now I know when I go there to be very careful. Thanks for the heads up. Susie |

The fish was great, but the vegetables on the grill were even better. I cut up onions, red peppers, mushrooms and asparagus and coated them well with fat free Italian dressing. I cooked them in a wok specifically designed for the bbq (purchased this week at BJ's) and kept tossing them as the flames cooked them (about 10 mins). When I finished cooking them I lightly salted and peppered them. It was my husbands favorite part of the meal, he had 2 helpings. He has lost 7.5 pounds since I started the program just because of my change in cooking. It is amazing how good healthy food can taste, especially when you stop adding all the extra flavors, which cover up the natural flavors.

Superbowl
Tomorrow I am hosting a small superbowl party. I hope you are rooting for the Cardinals.
Low carb, low fat chicken salad made with fat free mayo, onions, celery, sugar free relish, hoagie spread. I will serve it with crousants for those not watching their diets and lettuce leaves for the rest of us. Shrimp Cocktail: shrimp with locarb cocktail sauce - mix 1carb ketchup with horseradish. Ham Asparagus Wraps: Take ham slices and run a sliver of fat free cream cheese or light swiss laughing cow cheese along the height of the ham slice. Then place 1 raw asparagus spear and roll up. These are really tasty. Buffalo Tenders Pan sautee (with Pam or olive oil) and cut into bite size pieces chicken tenderloins. Then coat liberly with Frank's wing sauce. Serve with celery strips and low fat blue cheese dressing. My friends will bring other treats, but I will be sure there is something I can eat. For dessert there will be some frozen chocolate cheesecake bites. Please let me know what your plans are for superbowl. It is great to get ideas. Very little I do is original...it is mostly borrowed from others. Happy Superbowl, Susie |

My cheesecake bites are in the freezer right now, too! I figured since I wasn't going to eat any full bites tomorrow that I could "like the spoon"....I have a feeling these are going to be tasty!!
