Piknik I like to work on my tiny little farm too. Way too hot now here in the south.

Yesterday was leftovers of gr beef, egg & cheese pizza from Friday nite & salad. Also sauteed and eggplant that was the main course.

Good morning everyone.

Yesterday was leftover veggies of spinach frittata (mostly spinach actually), cauliflower, eggplant & squash. Then the good stuff, Cajun shrimp from Dana Carpender's book.

I must be extra vigilant today, I weigh a lb more than yesterday.

Dinner was mahi mahi w/ cauliflower, roasted squash & peas. I went to the farmers market & picked up locally grown lettuce, tomatoes & cucumbers. Made a good sald, but the cukes were bitter. Ate them anyway.

Leftovers yesterday.

Dinner was spinach frittata, roasted squash, peas & pearl onions (1 lb of this goes a long way on lc diet lol), broccoli & 1 link polska kilbasa.

My diet is very heavy in dairy so for one of my 1pm snack I have subsituted 2 T peanut butter & 1/2 oz bark w/ seltzer for Greek yogurt. No difference on the scale. Lower in carbs but higher in calories. We will see how it works in about a week.

Yesterday's dinner was Linda Sue's Broccoli Alfredo. It was pretty good, Mom complained about it, she likes Mexican style fr beef better. I had her put American cheese on top, it was OK for her that way. Also cooked bagged slaw for braised cabbage & roasted eggplant & squash.

Hi Em, We had a repeat of Sunday's dinner last evening. Mom had to have 3 slices of cheese on her gr beef. The recipe is actually very good w/o the addition, it has hwc & cream cheese.

I bought 7 bags of cole slaw on sale last week, I have use them up this week. Plan on cold cabbage soup & some of Linda Sue's gr beef recipes which use an entire bag of slaw. How is that for thrifty?

Good morning. Well Linda Sue's Broccoli Alfredo stretched into 3 days for us, we had a repeat of yesterday for dinner.

I've changed to the following & strangely enough I am still weighing 108 every day, not fluctuating upwards like I was.
S: yogurt
S: chia w/ almond milk, fruit in season
B: 1 slice sprouted wheat, 2 slices flax bread, banana peppers, 1/2 oz cheese, almond milk
S: 1T peanut butter, 1/2-3/4 oz bark
Dinner as usual
S: yogurt or wine

In other words I replaced protein source at breakfast w/ a carb source. BTW I get of very early therefore the snacks in the am .

I didnt think we had enough turkey roll for a repeat dinner for3, so I rolled up some microwaved cheese slices & stuffed them w/ cabbage & some turkey cold cuts. Very good that way. Also had tomatoes from the garden, more cold cabbage soup, braised cabbage & broccoli.

So far the addition of 1 slice of sprouted wheat bread at breakfast is going well. No gain but no loss either. Less bloating w/ this addition.
