A Foggy Sunday in a Jersey Town
Dense fog, drizzle and near 50...sounds like a day for Jack the Ripper....WOOOOO!
Anyhoo, no luck with PhotoIsland showing my pie.....GREAT luck eating it though. I am going to root around and see if I can find some free web space of my own...maybe Yahoo. PhotoIsland is just tooooo popular for my liking. I'll give the "link to auction" one more shot at dawn tomorrow. OK Loretta, I'm on the same wavelength...of course the yoghurt or kefir cheese would be a fine substitute for the condensed milk...probably even a BETTER thickener without all that sugar. Shawnee, I'm going to search my dollar shops for the key lime juice...I've seen it once or twice when I was abhorring carbs (ins't that always the way it is)....the fancy shops want mucho dinero for the stuff. I'm glad nobody got flooded. We are expecting snow 5 of the next 7 days so I guess there's more of this frellin' winter to slough through! The PHOTOSHOP SUITE installation later today....<choke, wheez> It's a BIG, complicated MOTHER of a program! I've been putting it off, but this week sounds ideal for a useful "putter." I'll join the CRAZY EIGHTS later- I'd better get to ShopRite afore the fog turns to a downpour (famous last words?)

Hi Y'all
.....same fog and drizzle here, ZIP..but colder at 40*. NO Sneaux in the forcast tho. Loretta, my neighbors have Daffys blooming! I have too much shade, too many trees..so mine will be blooming later. Just have a few mini-daffs in bloom now. I had Key Lime Pie for Brekkie. (late night experimenting...) My way to beat the Sweetened Condensed Cream was to use canned Coconut Milk. (sorry, ZIP...didn't have Hickory Nuts...LOL)I may try some tweaking later, but was pleased with this: KEY LIME PIE Bake @ 375* approx 30 min. CRUST (Don’t bake it , just pour the Filling into it) 2 TBLS butter, nuked in glass pie plate a few seconds ½ C Ground Almonds ½ C Ground Pecans ½ C unsweetened Coconut flakes Mix the almond, pecans, and coconut into the butter, flatten with fingers into a crust. FILLING 8 oz. Softened Cream Cheese ¼ C DiabetaSweet ¼ C SF Davinci Vanilla syrup ½ C Key West Lime Juice Dash Salt One- 13.5 oz Can Coconut Milk ( approx. 15 Carbs in the whole can) 2 TBLS Oat flour or WW flour for thickening…afraid Xanthan won’t make it “set” 5 Egg Yolks With mixer, cream together Cream Cheese and DiabetaSweet. Add in Coconut milk, Davinci, Juice and Salt, mixing til smooth. Add in flour a little at a time, till well incorporated..Add in Yolks, one at a time. Pour Filling into Crust (Any leftover Filling, [about a cup], can be baked in a Ramekin for about 10-15min.) Bake about 35 min. @ 375* Cool, refridgerate overnight to get a good “set“. Good Morning Zip and all the "Crazy Eights" that follow!
Yikes, Fog in NJ! We had a dumping of white stuff last night, DH has been out with the sneauxblower this morning. The City sneaux plow passed and gave us a 4' wall, so lots of neighbours out doing the same. Looks extremely pretty though, the large pine boughs are heavy with the fresh fall, fences and posts are capped with several inches of the stuff neatly piled high; a veritable winter wonderland! Last night the yard was brightly lit with the moonlight reflected by the fresh blanket everywhere. The temp is not too bad. We are supposed to get more tonight. Sure had to dig a pathway for Oliver this morning. He uses the pathway and then dives into the deep snow and loses himself, then realizes and comes running back in. Cabin Fever setting in, been doing more chores. Sorting is a killer for me. Did another drawer, yesterday, had several piles of papers and "useful things" in so many categories. Anyhoo, found lots of mislaid important stuff, so more filing and categorizing to do today. Yep, gave up with the online airfare booking. It seems too complicated for this ole broad. I finally found the right dates, times, prices, then they are not available. Maybe, when they get it perfected. I will revisit. I am getting more 'puter literate in the meantime too. DD just called, she did her eliptical thing for an hour and will soon be going for her 6K daily run. Yikes, I have vacuumed my upstairs, dusted and changed our bed, this morning. I guess that does'nt cut it eh? Shawnee: Okay, Who is Jack Lalaine? I am certainly getting an education on this BB. What with Mrs. Clever and stuff from Loretta. Ginny: Glad to hear you enjoyed your downtime.....5 hours of solitary.....how wonderful! What is the project, the newly purchased lumber for? New stalls????LOL! ![]() Jack LaLaine was one of the first Fitness Gurus in the Sixties with a daytime tv exercise show. I found him motivational..he did odd things, like hold a 5 lb. slab of really fat raw meat against his thigh, to demonstrate what blubber looked like...LOL. In his half-hour show, he did exercises to cover all body parts, and it sure got me back into shape quickly after the birth of my daughter. I did his exercises right up to my son's birth, and was wearing a bikini six weeks after...so they did work. Too bad I didn't stay with it! LOL When you see us mentioning Susie Homemaker or doing Susie work, this is in reference to the Sixties again. A major toy manufacturer made small replicas of kitchen appliances ..think Easy-Bake Oven...for our little girls to practice becoming future Mrs. Cleavers...LOL Now I MUST get some SUSIE stuff done, and get away from this puter! Shawnee that Key Lime Pie sounds very good with all of those higher fat items, 5 egg yolks, 8 oz cream cheese. I can imagine how tasty it was. I had my Yeast Muffins with my breakfast this am. Very good but I would like to add the taste of rye. I will check on tweaking with that. I have checked my wm for Diabeta Sweet but no luck. They did not have it at the health food store either. I have been reading about the stevia liquid that low carb man makes. Have you tried that? 50 degrees is nice Zip. Hope you find some bargains at your Shop Rite. I did not see too many bargains in today's sale papers. I could not get Photo island to work right for me the other day when I went to change my muffin pic after I got it smaller. Lots of red x showing up. Linda hope you enjoy going out for dinner to day with mom and the Birthday Party for your 6 yr old grand b, they sure grow up in a hurry. Is Gerard still under that car? Hope you take a day off from painting. How about the outside does that need paint too? We could use some new stuff on our outside. Dh won't let me touch his paneling with paint. I have tried using bright pictures on the walls to help brighten it up. That is ok with him. Susan you have a ton of snow there. Don't you have any good books to read instead of coming up with new projects for Mrs. Cleaver. Jack Lalaine is now an aging Mr. Fitness, body builder. He is still in great shape too, not sure how old he is now, probably 70s or early 80s. Just keep it moving will help a lot.Way to go Ginny on the 5 hours of solitary time. I am sure you enjoyed that. My Dh is way out of routine lately. He used to sleep until 11 or 12 Am, which was my solitary time for exercise, walking etc. Now he is up early, before me 5 or 6 am and going to bed earlier than me. I hope this is temporary. I liked my alone time. Hi to you Tink if you get a chance to lurk or check in. Hi to our fav lurker. Be safe and warm and enjoy this Sunday with contentment.

Shawnee that pie sounds WONDERFUL....but OY the calories...must be 2500 for the works...mine was only about 1500...LOL- positively dietetic in comparison...but seriously the cream cheese coconut milk sounds like a good combo. Been trapped in the house. We got dressed to go out and by the time we rode the elevator down it was POURING. Oh well, nothing really needed today. Loretta..BUMMER bout the DiabetaSweet! Keep lookin'..No, I haven't tried Stevia..I think our GNC carries several brands...it seems to come in different strenghts, and takes some experimenting to get to "know" its sweetness. Might be a good idea to follow LCMan's lead..he sure does a lot of experimenting, with good results....(and my poor DH can't even boil water...*sigh*..well, at least he never met a power tool he didn't like..LOL)

Finally getting here, whew!! It's nasty out side today. High winds and the temps dropped like a rock early this afternoon from the mid 40's to the teens.... Ol man winter sure played a nasty trick on us.
Zip, Wow your pie looks wonderful and bet it tasted great. It looks like my grandmother's lemon pie. Boy that's one I really miss. It's nice that photo island decided to co operate. I have some pictures stored on yahoo but on occasion when I post them, all I get is the dreaded red X. Sorry you didn't get to ShopRite but with the rain and fog it's best to stay snug and dry at home. Shawnee, you did it again. What a great sounding recipe. Is the lime juice low carb? I may look for that tomorrow if the roads are ok. Coconut milk is such a versatile product. Do you use the thick oriental product? Oh look at the beautiful faces on Shiena and Max. I could just hug them. My gosh, 19 yrs. old? That's one healthy pup.Sheesh, your mini dafs are in bloom and we can't even see the ground yet. <sob> Ginny, glad you had those wonderful 5 hrs of solitude to do as you please. It's nice isn't it? Hope you enjoyed the gh today.. I made a stop at the craft shop to get some more silk flowers. Got some beautiful apple blossems and pu$$y willows. They look nice on the dining table and give the house a spring look. Susan, sorry you got more sneaux, damn! I hear ya on those 4' walls of the crap in the driveway after the plows go by. I must admit that it is beautiful with the moon shining on it, but enough already. Lordy, you are really getting into some early spring cleaning. Good for you. I need to start sorting papers and get rid of lots of junk. Loretta, I found Diabeta Sweet in the pharmacy section near the diabetic supplies not in the food section. Did you check there? Alone time is important. Perhaps you can enjoy the late night hrs and turn into a night owl like Shawnee and I. The outside of the house is cedar siding and has a coat of solid stain on it. That should do it for a few more years. With any luck, I'll be dead before it needs doing again.LOL I'm through painting for several weeks. I need a break. We don't have woodwork around the windows or doors ( contemporary thingy) so I do want to paint the 6" deep window wells white to blend with the vertical blinds and add some contrast. Pam, I know you are working this weekend and hope you get a chance to check in. Run into any drunks lately? ![]() Shelly, are you back yet?? We want to hear all about your trip to NC. Hi favorite lurker.. What's up? I invited a gal who used to post on the Golden to join us since she has been maintaining for 4 years, but she may be burnt out on low carb stuff. She was an assistant manager on another lc bb and finally had it with all the fall off, cheating and such. Poor gal. I hope she will check in though. She is such fun. Grandbrat's party was nice and I got to see all 5 of them with their little friends play soccer. They were pretty good. Dinner with mom was nice too. Lots of ham, chicken, fish and vegetables. Then we did a bit of retail therapy.. Off to let gerard get on here, but I'll be back later. |

Shawnee, the pups are adorable, and 19 is sure a long life--only a furbaby that is well loved will live that long! Lazy day here today. Did some downloading (music) and just played on the 'puter today. DH cleaned the barn, finished some trimwork in the hallway and hung the doors under the steps to conceal the storage area and vacuum. I think I got the better of that deal! Susan, sorry to hear about all that sneaux! Ick yuck--we had about 1 1/2 inches here this morning but it's all gone now. Pam, did you survive the nuts at work? Hope you stayed away from flying objects! Linda, glad you're gonna take it easier, girl you were making ME tired! Loretta, doesn't look like it will be as cold as they predicted earlier. You may even have a day or two of sunny weather to get your walk in, reckon? Well, y'all, I'm gonna go lurk for a while...

When I visited our BB earlier, it took me so long type the post, that two of you snook in before I could respond to you, sorry I missed ya guys! Wow, Zip: Yummy pie! 'nuf said tummy rumble. Thank YOU for that Exercise site, it sure did educate me. I will re-visit as I bookmarked it for further reading. Mouth watering for those juices. I guess this is in keeping with our "training to be fit for our old age?" I like the idea of chair exercises! A few of us are "sneuxed in" today. Linda, no spring cleaning yet, just keeping busy to keep the cabin fever away. The sorting is mentally taxing, so I do some physical mindless jobs inbetween for a rest. Loretta: Yep, got lots of books to read, not been in the mood recently. I have been trying to read a book about staying in the Moment called the "Power of Now", not an easy read. Have to keep stopping to let the thoughts settle in. I guess I need something lighter to read. I do have stacks here. Shawnee: Love the pic of the PUPs, dont you just love their innocent playfulness! Pam where are you today? Shelley hope you got back safely from you visit. Ginny you did a flying visit today. Hope you are not working. Work day for me tomorrow if I can get through the sneaux! |

ZIP's Pie looks so good..wouldn't y'all just like to take a Swan Dive right into the middle of the whole fluffy one?? Got in a little R. Therapy with DGB this afternoon, chases away the Winter blues. She tried the Key Lime pie, said all the right flavors came thru...LOL..she just got back from FL.,...ironic, huh? Montana, the Lime juice count is like the Splenda count...ZERO on the containers...LOL..but Fitday says around 15 ECC per cup of Lime Juice...so the half-cup is 7-8 carbs. Would love to see that Mud Pie color ![]() later all, sleep well. ShawneeEDITED:.. ...GAWD...I LIED about the carb count in the can of coconut milk, (A Taste of THAI brand)..I gotta wear my glasses!..its 3 Carbs for 1/3 cup, and there's 13.5 ounces in a can...so...that's about 15 carbs instead of the NINE I posted.
