Didn't bother with the crock pot Corned beef cause I made several low carb Chicken and broccoli casseroles. One for my brother and family and two for us. G doesn't like broccoli so his is different. MEN!!!

Will cook that corned beef and cabbage for myself tomorrow but G is going to GAG He hates cabbage smell and taste.

Linda, we don't do corned beef as it's too salty for me and Chuck hate the smell and taste of cabbage too! Not sure what we'll have.

Hey, NO THYROID problems here. No high bp or high cholesterol either. Guess I'm a perfect specimen!!
Except for this food obsession!!

WHAT, pray tell, is THAT????? It looks like a MUSHROOM-KALE CASSEROLE???

I bought a second corn beef for today but it turned out that we are going to the theater tonight and thus out to dinner. So I'll probably have the very UN-Irish mixed seafood (and they make the BEST deep fried zucchini.)

So I'll do the corn beef sometime this weekend. That will be number two for us since we had our first CB&C&Bliss Potatoes last week. We both LOVE cabbage and for some reason just don't make it often enough. I'll try to build up a couple recipes for it...it's SUCH a good cruciferous vegetable.

Up very early: 5 AM because that always happens when I'm dieting. And dieting I am: [b] I got a 4 pound WHOOSH overnight[b]...from 220 to 216.
My three day caloric average has been 2079 kilo-calories per day. The WHOOSH is a nice incentive to go ONWARD AND DOWNWARD.
Last night's dinner made up for the Indian saltfest: 9 ounces of cajun catfish filet accompanied by a 175 gram LOVELY baked red potato...yep they bake nicely in the microwave I'm happy to fin (and report!)

Gee, I thought it was only CHILDREN who hated good vegetables like cabbage and broccoli...and asparagus, and cauliflower, and Brussel Sprouts. You mean there are actually ADULTS like that?

I use MY PICTURES also as my screensaver. The HUBBLE screens are for BACKGROUND, that is, what you see on your DESKTOP behind the icons before the screensaver goes on. Try one, makes for a beautiful work surface.

Noise started at 6:10 again this morning I dealt with our SECURITY staff...like talking to cement walls.

HAPPY SAINT PATTY'S DAY!!

I CAN'T STAND THE SMELL OF CABBAGE!! We have PTC tonight until 8 so we all ordered a meat and veggie tray. that sure helps get it low carb.

Got my computer up and running last night after spending mucho time with Dell support. I had downloaded a program that I had to by pass on safe mode, etc. But I'm happy not to have lost anything. Been coming in on my Dell at work but I love my laptop.

Barb you have me thinking of that upcoming 5K. I figured it to be 3.11 miles. I wonder if I could do that with some training.
What kind of time are you hoping for?
Let's see a brisk walk is 4 mph, hmmm, so maybe an easy run at 6 miles an hour and thus about 1/2 hour?????
I have Julie's bad knees and my guess is that would be about my limit, and it would have to be gentle.
I'll fiddle on the treadmill today and see what I can approximate. Treadmill is somehow less POUNDY than a pavement!

Morning,

To clarify my heritage...my head was in the sand last night! My kids are 1/4 Irish, 3/4 German. I on the other hand am 1/4 Irish, 1/8 Scotch, 1/8 French and 1/2 German. DH is all German! I just elimated the Scot/French for the kids. Not enough to worry about. Now, I think all that makes me a good ole American.

Barb, what program did you download....I don't want to make that mistake with my Dell. When do you get that thyroid checked? How much have you gained? Curious minds here!!

Anxious to see what you can do on that treadmill. 3 1/2 miles per hour is all I can do walking. They say short legs don't matter but I tend to disagree. They say we have to just move them faster and it should be easier as we have less to weight to move. Ha!! During my commercial breaks yesterday, I was jumping on the treadmill at 3 1/2 mph and let me tell you....after 2 min. my heart rate was up there. Dang it when those ball players went out fast. The pitching was too good and they weren't up to the plate long enough some innings for me to catch my breath. It turned out to be a good workout!

Shawnee, looking forward to the fudge recipe wo the coconut pease. That pic was quite a shock first thing in the morning though. I was sure someone had gotten sick!

Had a few busy days, especially yesterday was go-go-go from the time I got up. I have to find a new supplier for my lotion/shower gel as the gal I've been dealing with doesn't always keep things in stock--not a good idea when I have ORDERS TO FILL!!!

Jacki, my condolences to you and Roy on the death of his mother. Not an easy thing to go through, especially with Alzheimers, but she is at peace now.

Linda, how's the nephew doing? Is he out of the hospital yet? Silly kids will do all kinds of crazy stuff. Ants don't like mint, so if you do find where they are coming in, plant some mint around the base of the house as a deterrent.

Zip, I went Tuesday and got my license renewed, just a 15 minute proceedure THIS trip. Last Friday would have taken about 1 1/2 hours! Amazing thing is 2 licenses in a row where I DON'T look like I'm 3 sheets to the wind LOL! Where did you find the avatar? We have that pic too....

Rain has ceased; nice while it lasted.

Been completing paperwork for someone who gets anxiety attacks just lookin' at them. Finally...DONE ! Now suffering from brain drain. (doesn't take much to strain my grey cells...)

So I'll get to the Fudge recipe later on.

Hi to all and Happy St. Patty's day. I am trying to be more positive but had a crumby day yesterday. Most of the time I do well on my birthday but not yesterday. Dh was sort of grumpy for starters. We had planned on going out to eat but I called first to be sure they were serving Prime Rib and no they were not. I called several area resturants and not a one of them was serving Prime Rib. what is up with that. They just serve it on the weekends. I heated up some left over beef roast.
I am glad it is St. Patty's turn today.
Had a doctor's appointment this am and have completed my blood work and mammogram all this am. I was happy to get it done. I will have to wait for my blood results. When I gave blood they said I had a low crit so he ordered a cbc too plus my regular lipids.

Barb did you eat one special little something for your birthday. Wonder why I still think of food as a comfort or reward on days like that? I had a piece of butterscotch candy. Maybe it was that martini. Will you be practicing up for that 5 K race? My boys are running a race this weekend. They do a lot of races.

Shawnee glad you and Kaci had a nice lunch and get together.
Now I knew that was your chocolate fudge. How big is that pan. I remember my pb fudge was only the size of a sandwich which I ate ALL of. IT was good. Have not made it since. I am happy that you got some rain. You could have some of ours if you want.

Linda hope that Halo does the healing for your nephew. He will be reminded of 3 months or more of his "daring" event.

Ginny your lotion and shower gel sure seems to have taken off. You have lots of irons in your fire. Orkids, lotions etc, How about candles do you do them also. I have been using a candles burner plate that I got for a Christmas gift and I sure do like the aroma.

Zip thanks for the news on Bob's lipids. How are your liver enzyemes doing> My doc was a doll today when I told him all of the supplements I am taking to lower my cholesterol. He even wrote them down. I will be anxious to get my results and you all will hear about them.

Julie LOL on those fast innings and your workout. Good idea to keep you moving. Did they win?

I have got to get busy putting money on my DS's birthday cake. Hope I can get it decorated nicely. He is into coin collecting and I am going to put some coins on the cake. We will see.

Bin having 'puter problems. DSIL fixed it, then it went again. He took it to work to their IT dept, they fixed it, then it crashed again today as DSIL was trying to conect me to my server. They think I had a bad virus or something.

I am safe and sound, just without my lifeline!

A few days back, I fished from the freezer a 2 1/4 lb Point ...Bob laughed and said that lil thing was enough for him, what was I gonna eat? So I bought a 3 3/4 lb Flat to add in....Leftover City forever Glad it freezes well.

The Fudge pan is 6 x 9...and after I overhauled the recipe, it is much larger and doesn't bear much resemblence to the origional one. If I'm gonna drag out Ingredients and make a mess, I wanna make it worth the effort: some for now, some for the freezer.

No, not an expert on Thyroid...have done lots of research...but mostly I just "parrot" NonstickPam's good info. Like with LCing, no one thyroid "fix'' fits all.
You'd want to wear General Tso like a scarf!

Loretta, speaking of candles...LOVE 'em...but Bob is even more of a pyrophobiac than I am....so I must let them do their thing (safely) in the fireplace.

Julie, LOL on the heritage...waaay back when, mixed pedigree-mutts like us were called Heinz 57' s. I'm satisfied with being a Blend of this and that.
Bob insists he's 100% Finnish...I tell him I KNOW about a German surname on his maternal side, and also overheard the "tee-hee" gossip from his Mom and Aunt about his ancestors' flings...
We do a lot of Ethnic joking at each other's expense.

Tracing Family ancestry doesn't really prove blood Lineage; unfaithfulness and rapes are as old as Time.... We are what we are, that's good enough.

Getting on with that *^$*$&!! Fudge recipe..

*I don't like "sweet-sweet" , so taste it to see if ya want more sweeteners...Also, if ya choose to leave out the DaVinci and use all Splenda, cut the Whey back to 4 scoops, and increase the Splenda to 3/4 cups. (A scoop is about 1/3 C.)

Use as much or as little (or none) of the nuts and coconut as ya like...I use LOTS for filler....and to hide the texture of the whey.

Y'all know I don't do Carb or other Counts...its obviously fat-laden stuff, but not as carby as Store bought.

NUKER FUDGE

1/2 stick butter
6 oz. cream cheese
1/2 C. Splenda
5 scoops vanilla or choc. Whey powder
1/4 C. Cocoa
1/4 C SF Davinci (your choice flavor..Raspberry, Choc, Vanilla..whatever.)

1/2 C. each : almonds, walnuts, SF coconut ( or change amounts, leave out...)

I use a 4 Cup Pyrex measuring cup to Nuke this. Have a buttered 6 x 9 container/pan/dish (or similar size) ready to plop it in later.

Melt the cream cheese and butter in the Nuker for 1-2 minutes on High..
Stir, then Nuke another minute. WATCH for bubbling over!

Stir in Cocoa, Splenda, and Davinci...blend well.
Nuke 1 minute.
TASTE TEST NOW: need more Splenda? (Say "No" and continue... )

Stir in 5 Scoops Whey, blend (will be thick)

Stir in Nuts and coconut

Plop into buttered dish, smooth the surface

Refrigerate for an hour or so to finish firming process.

Got home from work, no puter!

DSIL just worked on it again for about 1/2hour and I am up and running again but he said there are still some problems.

I just sent a couple of emails out, but now I am blocked again! Oh well patience is a virtue! I just hope it is okay for the weekend.

Roger, it is as you said many times before this old thing keeps going back to AOL. A hard one to get rid of eh?

He said I might need to get a new puter!

At least I can still get thru to the BB!

Just get someone to REFORMAT (that's my mantra.) It will ACT like a new computer when it's reformatted and all remnants of the poisonous AOL infection will be gone (it's the only way I couuld get rid of it on my last puter.) PLEASE trust me.

My liver enzymes have all been in range since 1973 when I had Hepatitis A and they all went nuts for about 2 months. My blood was about 50% bilirubin!

Fiddling on the treadmill UNFORTUNATELY AFTER 40 minutes on the stationary bike (whew!) showed me that 4 miles per hour is the fastest I can walk and by 5 miles per hour it became a jog. Unfortunately I couldn't even go a minute at 6 mph because my entire body was whupped by the bike. (I'll try tomorrow for a warm-up before the IRON.)

Everybody think back to LONG before LC... if you had a typical 20 ounce can of crushed pineapple in natural juice (no sugar added) how much cornstarch would you add to it to make it suitable as a pie filling? How does 2 Tbsp sound? 3??? (I LOVE pineapple pie!)
I'll sweeten with Splenda, bring to boil and pour into graham cracker crust.

Oh, I got crabassy today and told Bob I didn't want to go to theater because I wasn't in the mood to SMILE through dinner with a stranger (a new friend my gregarious partner has dug up.) I think he got the point.
I am FINALLY old enough that when I don't flicking feel like doing something I WILL NOT; I had entirely enough bullschit with Motor Vehicles and Social Security this month. I am getting SO sick of living in this apartment that if I don't get out soon someone in the very near vicinityis going to regret the nuclear explosion! I blew up 2 weeks ago but that was only a several kiloton blast. Push is coming to SHOVE (and that as$hole upstairs with the 6 AM serenading isn't helping either.)

Reformat is a good idea...its the damn time consumed, to do all the Updates, software, etc. that's a pain. I've done it twice on old puter, nervewracking as hell for me.
I'd PAY to have it done.
